Steps:

  • Preheat oven to 425 degrees.
  • Mix cauliflower florets, avocado oil, and seasoning in a large ziploc bag.
  • Shake until it's evenly coated.
  • Spread on one layer in a glass baking dish, and bake for 20 minutes.
  • Stir, and put back in the oven another 10-20 minutes until it's browned.

2 tablespoons olive oil (more if necessary)
3 tablespoons Cajun seasoning (see below, or more to taste)
1 tablespoon paprika
2 tablespoons smoked paprika
2 tablespoons garlic powder
2 tablespoons salt or to taste
1 tablespoon cayenne pepper
1 tablespoon onion powder
1 tablespoon dried oregano
1 tablespoon dried thyme
1 tablespoon fresh ground black pepper
1 cup mayonnaise (or vegan mayo)
2 tablespoons Creole mustard or spicy
1 small dill pickle (diced (or use relish))
1 tablespoon lemon juice
1 tablespoon Cajun seasoning
1 tablespoon prepared horseradish
1 clove garlic crushed (or garlic powder to taste)
1 teaspoon Worcestershire sauce ((vegan option if necessary))
1 teaspoon hot sauce such as Tabasco or Frank's

Steps:

  • Preheat oven to 400ºF. Line a baking sheet with baking paper.
  • Cut the cauliflower in half lengthwise.
  • Toss cauliflower, olive oil, and Cajun seasoning in a bowl until fully coated.
  • Tip onto the prepared baking sheet and roast for 20 minutes.
  • Stir cauliflower and place back in the oven for another 5 to 10 minutes until tender and crispy around the edges.
  • Serve hot with remoulade sauce.
  • Mix together in a bowl and store in an airtight container.
  • Combine all ingredients in a bowl and let sit so flavours meld.

3/4 cup panko bread crumbs
3/4 cup Fiber One cereal
1/2 cup grated Parmesan cheese
1 teaspoon Creole seasoning, such as Tony Chachere's
1/2 head cauliflower, cut into bite-size florets
2 eggs

Steps:

  • Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper or nonstick foil. In a food processor, pulse half the panko, cereal and Parmesan until the mixture is finely ground. Pour into a medium bowl. Mix in remaining panko and the Creole seasoning. Whisk eggs in a small bowl. Dip cauliflower pieces into egg and then roll in panko mixture. Place on prepared baking sheet. Bake for 25 to 30 minutes, until golden brown and crunchy. If desired, serve with catsup, ranch dressing, remoulade or another favorite sauce.

1-2 tsp avocado oil (omit if oil-free)
1 TBS smoked paprika
1 tsp dried thyme
1 tsp oregano
1/4 tsp cayenne
1/4 tsp garlic powder
Himalayan sea salt, to taste
fresh chopped parsley
almond milk or coconut yogurt

Steps:

  • Preheat oven to 400°F and line a baking sheet with parchment paper.
  • Add all spice mixture to a small bowl or jar and mix to combine. Set aside.
  • Wash and dry the cauliflower and break/chop into bite-sized florets.
  • Add the cauliflower to a large mixing bowl and drizzle with optional avocado oil. Toss to coat, then sprinkle spit mixture evenly over cauliflower to coat. Toss well to combine so that the cauliflower turns a bright orange. Some clumps of seasoning are OK.
  • Shake cauliflower bites onto a cookie sheet, place in preheated oven, and bake for 15-20 minutes, until golden brown on the edges. You want the cauliflower to be fork tender but still have some bite to it.
  • Serve Cajun Cauliflower Poppers hot with fresh minced parsley. Dip in your favorite almond milk or coconut milk yogurt.

3 tbsp olive oil
3 tbsp chipotle paste
1 tsp garlic granules
700g cauliflower florets, plus any small, tender leaves
150g soured cream
1½ tsp Tajín, or a mix of ½ tsp salt, ½ tsp mild chilli powder and the zest of ½ lime

Steps:

  • Heat the oven to 220C/fan 200C/gas 7. Pour the olive oil, 2 tbsp of the chipotle paste and the garlic granules into a large mixing bowl. Season with salt and mix well. Add the cauliflower florets and toss together. Tip into a roasting dish with any leaves and mix well. Roast for 35-40 minutes or until charred and smoky.
  • Mix together the remaining chipotle paste and soured cream in a serving bowl.
  • To serve, tip the cauliflower florets onto a serving plate and drizzle over the remaining oil. Scatter over the Tajín and serve with the chipotle soured cream for dunking.

  • Drizzle any remaining batter on the cauliflower. Spray oil.
  • Bake at pre-heated 425 degrees F / 220ºc for 25 minutes or until a toothpick goes through the cauliflower easily. Serve warm with dip.
  • Blend everything except celery seeds. Taste and adjust salt and flavor. Add celery seeds and blend for a few seconds. Chill and serve.

Steps:

  • Add the olive oil to a large skillet over medium-high heat.
  • Place the shrimp in the skillet and season with 1 teaspoon of the Cajun seasoning.
  • Cook the shrimp until opaque, about 3-4 minutes, then remove to a plate.
  • Add the chicken, sausage, and 1 teaspoon of the Cajun seasoning to the same skillet.

1 teaspoon sriracha sauce
2 cups baby lettuce, (optional)
1/4 cup crumbled blue cheese, (optional)

Steps:

  • Preheat oven to 450 degrees.
  • Cut cauliflower into large florets. Place in a large bowl and toss with olive oil, salt, and pepper.
  • Spread cauliflower on a baking sheet in a single layer. (Use two pans if one is too crowded.)
  • Roast cauliflower for 10 minutes. Flip, then bake for an additional 5 to 10 minutes, or until browned on bottom.
  • While cauliflower is roasting, melt butter in a small saucepan over medium heat.
  • Add garlic to butter and cook until fragrant, about 30 seconds to 1 minute.
  • Stir hot sauce and sriracha into butter and mix well. Bring to a boil, then remove from heat. Set aside.

4 garlic cloves, minced
1/2 cup veggie stock
1 Tbsp hot sauce
2-3 Tbsps cajun seasoning, homemade or store-bought ((See Notes))
1 tsp freshly-squeezed lemon juice
2 lbs. Colossal shrimp
1-2 Tbsps cajun seasoning, homemade or store-bought ((See Notes))
1 Tbsp dried parsley
2 cups kale, de-stemmed + chopped
2 Tbsps unsalted butter, for cooking
2 cups cherry tomatoes, whole or halved
1 Tbsp Extra virgin olive oil, for drizzle

Steps:

  • Once you've broken cauliflower head into florets and rinsed and patted them dry, add florets to a food processor. Pulse a few times until cauliflower is broken down/minced into a "rice-like" consistency. Set aside.
  • In a medium 10-inch skillet over medium-high heat, add 2 Tbsps of butter until melted. Add in the minced garlic to sauté frequently about 1-2 minutes until fragrant. Next, add in the shrimp (seasoned w/ cajun seasoning + parsley) and cook on both sides (about 3-4 minutes), until pink and cook through. Remove shrimp from the skillet unto a plate and set aside.
  • Preheat your oven to 400 degrees Fahrenheit.
  • In the same skillet (with juices from shrimp + all), add riced cauliflower and mix everything together. Next, add seasonings, lemon juice, and hot sauce and stir again. Cook for 2-3 minutes until cauliflower rice has fully soaked in everything is becomes tender. Add in the kale, tomatoes, and shrimp ensuring that they are spread out evenly.

Cajun Cauliflower Bites, an quick and easy appetizer as well as a side dish without the extra calories, which makes it an awesome choice for Diabetics.

Number Of Ingredients 10

1 whole cauliflower (bite size florets)
1 tsp oregano
⅛ tsp or slightly more cayenne pepper, or to taste (otherwise red chili powder)
2 tsp paprika (chili powder without the heat, only color)
1 tsp dried basil leaves ( omit this if you have parsley n thyme)
1 tsp dried parsley (didn't use it)
1 tsp thyme (didn't use it)
¾ tbsp olive oil
¾ tsp garlic powder
½ tsp sea salt (otherwise regular salt)

Steps:

  • Cut the cauliflower florets into bite size. Wash them thoroughly and set aside to drain the excess water.
  • In the mean while, mixed all the spice rub ingredients except the oil in a small bowl.
  • In a mixing bowl, put the olive oil and toss the cauliflower in it. Now sprinkle the spice rub all over the florets and mix using your hands and make sure they are coated well.
  • Heat the oven at 425F. Cover the baking tray with parchment paper. Place the florets on the tray and bake it for 15 minutes. Turn once and bake for another 5-7 minutes.
  • Serve hot as an appetizer with your choice of dipping sauce, I served it with ranch or as a side dish.
