A cajun spiced chicken wrap with veggies and cheese.

6 whole grain sandwich wraps
6 slices Provolone cheese
1 pound chicken breast, (cooked and chopped)
3 Roma tomatoes, (sliced)
6 Romaine lettuce leaves, (torn)
Ranch dressing
Cajun seasoning

Steps:

  • In a small bowl, add ranch dressing, about 1 cup for six wraps, or to taste. Add cajun seasoning, stirring thoroughly and tasting, adding more to taste as necessary. I like to add a lot, enough to turn the ranch orange, but do a little at a time to make sure it suits your taste.
  • Lay out one wrap. Tear a piece of cheese in half and lay both halves in a line down the center of the wrap. Top the cheese with a handful of chicken, a few slices of tomato, and some lettuce. Drizzle the cajun ranch sauce over all.
  • Fold in the sides of the wrap, then roll it up tightly from the bottom like a burrito. Hold the wrap firmly, seam side down, and slice in half on a diagonal with a serrated knife. Serve with fresh fruit and vegetables, or chips and a pickle.

2 tablespoons olive oil
1 lb boneless skinless chicken breasts (roughly 2 large; sliced into 1/2 inch pieces; see note 1)
3 tablespoons cajun seasoning ( note 2)
2 bell peppers (sliced into strips)
1 red onion (sliced into strips)
2 cups cherry tomatoes (quartered)
4 large tortillas (to serve)

Steps:

  • Cook Chicken - Heat olive oil in a medium non-stick pan over medium heat. Add the chicken, and sprinkle with 1 ½ tablespoons of cajun seasoning. Cook, stirring frequently, for 5-7 minutes, until cooked through.
  • Sautée Veggies - Remove the chicken from the pan and place in a clean bowl. Add the bell pepper and onion to the pan, sprinkling with another 1 ½ tablespoons of cajun seasoning. Cook for 5 or so minutes, until slightly softened.Add the tomatoes to the pan, cook for 1 minute until soft. Add back the chicken, toss everything up, then remove from the heat.
  • Portion - (For meal prep only)- Divide between four 2-cup capacity storage containers.
  • Serve - When you are ready to serve, spoon heated filling into wraps or tortillas and enjoy!

4 medium tortillas, flour, fat-free
1 tablespoon all-purpose flour
1/2 small onion, red, thinly sliced
1 teaspoon paprika
2 cup mixed baby greens
3 1/2 tablespoons Cajun seasoning, divided
8 medium basil, leaves
1 1/2 teaspoons fresh lemon juice
4 teaspoons fat-free mayonnaise
1 small tomato, cut into strips
Salt and pepper to taste

Steps:

  • Mix the 3 tablespoons of Cajun seasoning, paprika and flour. Season chicken with salt and pepper and coat with seasoning mixture. Spray a large, nonstick skillet with cooking spray. Over medium-high heat, add chicken to pan and sauté until cooked through (approximately about 1 to 2 minutes per side). Remove chicken from heat and set aside. In a separate bowl, mix mayonnaise, lemon juice and 1/2 teaspoon Cajun seasoning for the dressing. On each tortilla, spread 1 teaspoon dressing, add greens, onion slices, two basil leaves and some slices of tomatoes. Top with chicken pieces and wrap. Enjoy!

Steps:

  • Combine 3 tablespoons seasoning mix, flour, and paprika. Season chicken with salt and pepper and dredge in seasoning mixture.

½ lb. boneless skinless chicken breast ((about 1 medium breast))
2 tsp. cajun seasoning
½ medium red onion ((sliced))
½ medium red bell pepper ((sliced))
2 slices tomato ((chopped - approx. a ½ cup))
¼ cup thinly sliced lettuce
2 standard whole grain tortillas

Steps:

  • Slice the onion and red bell pepper.
  • Slice the chicken breast. (It's partially cooked in this photo, but you should use a raw breast)
  • Slice the lettuce and chop the tomatoes.
  • In a skillet, cook the peppers, onions, and chicken in oil in a large skillet. Season with salt and cajun spices as you cook.
  • Lay out a tortilla.
  • Layer the lettuce, tomatoes, and the chicken mixture from the pay over the tortilla.
  • Roll up the wrap.
  • Slice in half.
  • Serve.

nonstick cooking spray
½ cup panko bread crumbs
¼ cup plain bread crumbs
2 tablespoons Cajun seasoning
¼ teaspoon ground black pepper
2 large eggs
1 ½ pounds chicken breast tenderloins
¼ cup all-purpose flour

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray an 8x11-inch baking pan with cooking spray.
  • Mix panko and plain bread crumbs together in a shallow bowl. Add Creole seasoning and pepper; mix thoroughly. Beat eggs in another bowl.
  • Cover tenderloins in flour, then dip in egg mixture, following with a heavy coating of bread crumb mixture. Place the breaded chicken pieces in the greased pan.
  • Bake in the preheated oven until golden and no longer pink in the centers, about 20 minutes, turning chicken pieces halfway through. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

WW counter figures 5 points, but by using smaller "Mission" 6 1/2" carb blance tortillas I think it's closer to 4 points, you could also sub fat free mayo, skip the evo and sub cooking spray.
