EASY CAJUN SALMON
Cajun salmon is a quick and easy dinner recipe that is bursting with flavor. Cajun seasoned salmon is quickly seared until blacked, then a little cream (or dairy-free cashew cream) is added to the pan to make a creamy cajun sauce. It's delicious!

- Mix the seasoning ingredients together in a small bowl. Reserve about ½ tablespoon of the seasoning then sprinkle the remaining evenly over the top of the salmon.
- Heat the oil in a large nonstick pan over medium-high heat. Add the salmon to the pan, top side facing down. Cook for 5 minutes, or until the side of the salmon that is facing the pan is well-browned (blackened). Flip the salmon over and continue to cook for another 3-4 minutes, or until the salmon is fully cooked. It should reach an internal temperature of 140 degrees Fahrenheit. Remove the salmon from the pan.
- Add the cream and the reserved ½ tablespoon of cajun seasoning to the pan. Simmer for about 1 minute, or until the cream reduces slightly. Serve the salmon with the cajun cream sauce poured over the top and a little minced parsley for color.

EASY CREAMY CAJUN SALMON
Cajun salmon cooked in creamy garlic herb sauce is the most delicious 15 minute, one pan dinner recipe. Weeknight dinner, sorted!

Steps:
- Pat the salmon fillets dry with paper towel. Drizzle over the olive oil then season generously with Cajun seasoning, salt and pepper.
- Heat a large frying pan over medium high heat.
- Add the salmon, skin-side down, and cook for 2-3 minutes until the skin is crisp.
- Flip over and cook for another 2-3 minutes on the other side. Remove from the pan and set aside while you make the sauce.
- In the same pan you cooked the salmon, melt the butter then add the garlic and herbs.
- Sauté for a few minutes until fragrant then pour in the cream and lemon juice.
- Allow to simmer for a few minutes then season with salt and pepper.
- Add the salmon back to the sauce and allow to simmer for another 2 minutes. Serve immediately.

CAJUN SALMON
A simple and different way to do salmon. Try serving with roasted onions and peppers.

- Pre-heat the oven to 200c, pop the sweet potatoes into the oven and bake for 45 minutes.
- Sprinkle the salmon fillets with the cajun seasoning then bake in the oven for 15-20 minutes depending on their size.
- Zest the lemon, then juice one half and chop the corriander. Mix all three ingredients into the soured cream. Season with salt and pepper.
- When the pototoes are cooked, remove them from the oven, split their skins and turn the flesh out into a bowl. Mash and then stir a few spoons of the cream mixture through and season. Place a few spoons of the potato in the middle of the plate and lay the salmon on top. Spoon the soured cream mixture over the top.

- For the cream sauce:.
- Sauté minced garlic with butter until garlic is light brown.
- Add heavy cream, basil, lemon juice, grated cheese blend, & white pepper.
- Bring to a boil on medium high heat, stirring often.
- Place on low heat after boiling & salt to taste.
- For the Cajun Salmon:.
- Preheat oven to 375°F.
- Lightly coat salmon with Cajun spice.
- **REMEMBER, the amount of spice will determine the degree of spice & heat. So cook salmon at 375°F for 8-15 minutes depending on desired doneness.
- For the presentation:.
- Toss cooked pasta with the cream sauce.
- Portion 8 ounces of pasta per serving.
- Place the cooked salmon filets atop the portions.
- Garnish with parsley & shredded parmesan cheese.
- A slice of garlic toast & a lemon wedge will further complement this dish.

- Preheat your skillet over medium to medium-high heat. When fully heated, add 1 tbsp of high smoke point oil (canola, avocado, peanut oil, ghee etc) and heat the oil for 30 seconds or until shimmering.
- Dry the salmon fillets completely. Moisture is the enemy to crispy skin if cooking skin-on. Pat dry with paper towels regardless of cooking skin on or off. Season the skin with salt and pepper. Season the flesh as you desire.
- Using fish spatula or another flexible spatula, press the fish in the pan, skin side down for 30-40 seconds. Much like when searing a steak, do not be tempted to flip the salmon prior to it being cooked enough. The drier that skin is going into the pan, the crispier the skin will be. Fish skin shrinks when it cooks so adding pressure will keep it flat and covering the flesh.
- When skin is crisped and easily releases from the pan, flip the salmon over and cook an additional minute.
