- Cook fish according to package directions. Meanwhile, in a small bowl, combine the coleslaw mix, pepper, mayonnaise, lemon juice, sugar and 1-1/2 teaspoons Cajun seasoning., Slice fillets. Spoon coleslaw mixture onto pita breads, top with fish. Sprinkle with remaining Cajun seasoning. Serve with lemon wedges if desired.

- Stir lime juice, olive oil, cilantro, jalapeno, chile powder, cumin, salt, and pepper together in a large bowl or resealable zip-top bag. Add halibut and marinate for 20 to 25 minutes. Do not over-marinate, as lime juice will start to 'cook' the fish.
- Preheat an outdoor grill for medium heat and lightly oil the grate. Drain marinade; grill fillets for 5 minutes. Turn and cook until fish flakes easily with a fork, about 2 minutes more.
- Warm tortillas on the grill or stove. Divide halibut among tortillas and top with cabbage, salsa, pepper Jack cheese, and avocado.

CAJUN-CATFISH TACOS

- Preheat an outdoor grill for medium-high heat.
- Toss the cabbage with 1/4 teaspoon salt in a medium bowl and set aside.
- Stir the yogurt, lime zest, lime juice and cayenne pepper together in a small bowl and refrigerate until ready to use.
- Brush the fillets all over with oil and season generously with salt and pepper and then with the spice rub. Lay the fish on the grill and cook, undisturbed, until you see distinct grill marks and can lift the fish without it sticking, 5 to 6 minutes. Test it by gently lifting a corner?if it sticks, cook it a bit longer. Turn the fish over and cook until firm to the touch, about 5 minutes more.
- Microwave or steam tortillas until warm, or grill until slightly charred but still pliable. Fill each tortilla with 1/2 a fish filet, a sprig of cilantro and some cabbage. Drizzle with the yogurt sauce and hot sauce if using. Serve with lime wedges.

- In a 13x9-in. baking dish, whisk the first 5 ingredients. Add fillets; turn to coat. Refrigerate, covered, 30 minutes., Drain fish and discard marinade. On an oiled grill rack, grill mahi mahi, covered, over medium-high heat (or broil 4 in. from heat) until it flakes easily with a fork, 4-5 minutes per side. Remove fish. Place tortillas on grill rack; heat 30-45 seconds. Keep warm., To assemble, divide fish among the tortillas; layer with red cabbage, cilantro and, if desired, salsa verde. Squeeze a little lime juice and hot pepper sauce over fish mixture; fold sides of tortilla over mixture. Serve with lime wedges and additional pepper sauce.

- Preheat the oven to 400 degrees F (200 degrees C). Grease or line a rimmed baking sheet with foil.
- Rinse tilapia and pat dry. Rub all sides with Cajun seasoning. Place on the prepared baking sheet.

FAMILY-MEAL FISH TACOS
This is a fast, satisfying fish dinner with Cajun flavors. Chad Shaner cooked it for staff meals when he was a line cook at Union Square Cafe in Manhattan. It was, he said shyly when The Times talked to him in 2013, one of the restaurant staff's favorites. "Everyone loves taco day," he said. The recipe is not particularly Mexican. Shaner hails from Smyrna, Del., and served in the Navy before he went to cooking school. He makes a forceful kind of American food that borrows its flavors from wherever they are strongest. His fish tacos, he said, are something he cooked up one night with his brother, Andy, a bartender. "We were looking for intense flavor," he said of the Cajun-style rub they used on the fish.

- Preheat oven to 350. Combine the chile powder, garlic powder, paprika, cumin and red-pepper flakes in a shallow dish. Season the fish fillets aggressively with salt and pepper, then press them into the spice mixture, turning to coat. Set aside.
- Combine the sour cream and the chipotles in a small bowl, and stir to combine. Set aside.
- Cook the tortillas until they are toasted in a large skillet set over high heat, approximately 30 seconds or so per side, then stack them on a large sheet of aluminum foil. Wrap the foil around the tortillas, and place the package into the oven to heat.
- Turn the heat under the pan down to medium-high, and add a tablespoon of the oil and then the scallions. Cook these, tossing occasionally, until they are about to char, then remove and set aside.
- Add the remaining oil to the pan and heat it until it begins to shimmer. Add the fish and cook until well browned and crisp, approximately 4 minutes per side. Remove from pan and slice into strips or simply break into pieces.
- Serve the fish with warm tortillas, garnished with the scallions, radishes, cheese and chipotle sour cream, and lime wedges on the side.
