1 (18.25 ounce) package spice cake mix
2 eggs, beaten
½ cup vegetable oil
1 cup raisins
1 ½ cups chopped walnuts

Steps:

Preheat oven to 350 degrees F (175 degrees C).
Beat cake mix, eggs, and oil together in a bowl to form a thick batter. Fold raisins and walnuts into the batter; drop by large spoonfuls onto a baking sheet.
Bake in preheated oven until no longer moist on the tops, 9 to 12 minutes.

Ingredients

1 package spice cake mix (regular size)
1/2 teaspoon ground ginger
1/4 teaspoon baking soda
1/4 cup water
1/4 cup molasses
6 teaspoons vanilla extract

Steps:

In a large bowl, combine the cake mix, ginger and baking soda. Stir in water, molasses and vanilla and mix well. Roll into 10 balls. , Place 3 in. apart on greased baking sheets. Flatten slightly with a glass coated with cooking spray. , Bake at 375° for 13-15 minutes or until surface cracks and cookies are firm. Remove to wire racks to cool.

1 box Betty Crocker™ Super Moist™ spice cake mix
1/2 cup vegetable oil
2 eggs
1 cup chopped apple
1/3 cup Betty Crocker™ Rich & Creamy cream cheese frosting

Steps:

Heat oven to 350°F. In medium bowl, stir together cake mix, oil and eggs until combined and dough forms. Stir in chopped apple.
Onto ungreased cookie sheets, drop dough by tablespoonfuls about 2 inches apart.
Bake 8 to 10 minutes or until set. Remove cookies from cookie sheets to cooling racks. Cool completely, about 15 minutes.
In small microwavable bowl, microwave frosting on High 10 seconds. Drizzle melted frosting over cooled cookies.

In a hurry? Cake mix and canned pumpkin - that's it! Amazingly simple and they taste wonderful -honestly they're great! Moist and chewy inside, slightly crispy outside. There are other cake mix cookie recipes on Zarr and they're all very good, but this one is my family's favorite. Beginner and experienced chefs can all appreciate the ease of this recipe, plus they sell quickly at bake sales, and children love them.

1 (18 1/4 ounce) box spice cake mix
1 (15 ounce) can solid-pack pumpkin (the small can)
1 cup chopped pecans (optional) or 1/2 cup raisins (optional)
1 cup cream cheese frosting (optional)

Steps:

Preheat oven to 350°F.
Spray cookie sheets lightly with vegetable spray (Pam).
In a large bowl, mix together the cake mix and pumpkin with a fork or mixer until well blended; stir in nuts or raisins, if desired.
Drop by large rounded spoonfuls onto the cookie sheet; they don't flatten out much so however you place them on the sheet is pretty much how they'll look after baking.
Bake for 8 to 15 minutes, depending on the size of your cookies.
Allow cookies to cool on baking sheet for up to 5 minutes before removing to a wire rack to cool completely.
Frost, if desired.
How many cookies you get depends on how large you make them of course - just increase your baking time if making larger cookies (it's truly difficult to burn these, but they will get crispier & less moist); Mine, made with a medium size cookie scoop, take 13-15 minutes to bake and yield about 3 dozen.

Combine the cake mix, oil and eggs in a large bowl. Stir together until combined. Add in any additional mix in's if desired. If you have the time, refrigerate the dough for 15-20 minutes (it will make it a little easier to work with, since it is sticky).
Using a medium scoop or spoon, scoop the dough onto the prepared baking mat. Roll the dough balls in cinnamon sugar.
Bake for 9-11 minutes, or until the cookies are set. You don’t want them to brown. Allow to cool on the pan for a couple minutes and then transfer to a cooling rack.
