2 medium tomatoes, seeded and chopped
3/4 cup chopped sweet onion
1/4 cup minced fresh cilantro
1 jalapeno pepper, seeded and chopped
1 tablespoon olive oil
1 teaspoon ground coriander
3/4 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon minced garlic
Tortilla chips

Steps:

  • In a large bowl, combine the first 10 ingredients. Cover and refrigerate until serving. Serve with tortilla chips.

½ teaspoon white sugar
½ teaspoon salt

Steps:

  • Combine pineapple, red onion, bell pepper, jalapeno pepper, cilantro, lime juice, garlic, sugar, and salt. Stir to combine. Cover with plastic wrap and refrigerate for 1 hour so flavors can meld.

This mild, but flavorful salsa was a big hit at a recent catered event in Hooper Bay Alaska where it was served along side pineapple marinated BBQ halibut. The following week I served the same salsa with a grilled teriyaki salmon and had the same rave reviews.

2 cups canned pineapple, minced and drained reserve liquid
1 cup fresh cilantro, rough chopped
1 medium yellow onion, diced
2 anaheim chilies, roasted, stemmed, seeded, and diced
1/2 cup sun-dried tomato (julienned )
1 tablespoon garlic (minced)
1/4 cup reserved pineapple juice
1/2 teaspoon salt

Steps:

  • Combine all ingredients.
  • Chill before serving or for best results refrigerate overnight.
