1 1/2 pounds ground beef
1 cup diced peeled sweet potato
1/2 cup chopped onion
1/2 cup chopped red bell pepper
1 teaspoon curry powder
2 tablespoons all-purpose flour
2 cups water or ready-to-serve beef broth
1 can (15 1/2 ounces) black-eyed peas, rinsed, drained
1 can (13 1/2 ounces) light unsweetened coconut milk
2 cups packed fresh baby spinach leaves
3 tablespoons freshly chopped thyme leaves
Salt and freshly ground black pepper

Steps:

  • Brown ground beef in large nonstick skillet over medium heat for 8 to 10 minutes or until beef is not pink, breaking up into 3/4-inch crumbles. Pour off drippings. Add sweet potato, onion, bell pepper and curry powder. Cook 4 to 5 minutes or until onion and peppers are crisp-tender, stirring occasionally. Stir in flour; cook and stir 1 minute.
  • Stir in water, black-eyed peas and coconut milk; bring to a boil. Reduce heat, cover and simmer for 5 to 8 minutes or until sweet potato is tender. Stir in spinach and thyme. Cook 1 minute or until spinach wilts. Season with salt and black pepper, to taste.

1 tablespoon olive oil
1 onion, finely chopped
2 garlic cloves, minced
1 small red bell pepper, finely chopped
2 fresh jalapeno peppers, minced
2 tablespoons molasses
1/4 cup dark rum
1 teaspoon grated lime zest
1 small tomatoes, seeded and diced
1 tablespoon Angostura bitters
1/2 teaspoon salt
1 lb ground turkey
1/2 lb bulk hot pork sausage
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/2 teaspoon ground cloves
3/4 teaspoon curry powder
1 tablespoon freshly squeezed lime juice
6 seeded sandwich buns, split

Steps:

  • Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.
  • To make the sauce: heat the olive oil in a saucepan on the grill.
  • Add in the onion, garlic, bell pepper, and jalapeno peppers; stir/saute 5 minutes or until softened.
  • Add in the molasses, rum, and lime zest; cook, stirring, about 5 minutes or until the liquid is nearly all cooked away.
  • Stir in the tomato, bitters, and salt; move the saucepan to the edge of the grill rack to keep warm.
  • To make the patties: combine the turkey, sausage, salt, pepper, cloves, curry powder, and lime juice in a large bowl.
  • Handling the meat as little as possible to avoid compacting it, mix well.
  • Divide the mixture into 6 equal portions; form the portions into patties to fit the rolls.
  • When the grill is ready, brush the grill rack with vegetable oil.
  • Place the patties on the rack; cover and cook, turning once, just until the juices run clear when the patties are pierced in the center (about 4 minutes on each side).
  • During the last few minutes of cooking, place the rolls, cut side down on the outer edges of the rack to toast lightly.
  • To assemble: on each bottom roll, place a patty and top with an equal portion of the sauce; add the roll tops and serve.

3/4 cup chicken broth
2 tablespoons brown sugar
2 1/2 tablespoons ketchup
2 tablespoons lime juice (Fresh or Store Bought)
2 tablespoons dark rum
1 teaspoon ground ginger
1/4 teaspoon allspice (Can Substitute Ground Cloves)
1/4 teaspoon thyme
1/4 teaspoon cayenne pepper
1/2 teaspoon garlic (Can vary to taste -- Fresh or Store Bought in Jar)
1 1/2 lbs beef tenderloin

Steps:

  • COMBINE all ingedients (Except Beef) in bowl and WHISK until well blended.
  • In Zip Lock Bag, Place BEEF and above combined ingredients and marinade AT LEAST 30 minutes in the refrigerator; Can be overnight.
  • Remove steaks from marinate and reserve marinade; Cook to desired doneness however you wish to do; BROIL, BBQ Plate etc, basting them frequently with marinate; Approximately 5-8 minutes each side.

1/4 cup mayonnaise
1 green onion, thinly sliced
1-1/2 teaspoons Creole mustard
1/2 teaspoon minced garlic
1/2 teaspoon grated lime zest
1/2 teaspoon lime juice
1/4 teaspoon pepper
1/8 teaspoon salt
Dash hot pepper sauce
Dash Worcestershire sauce
BURGERS:
1/4 cup each finely chopped onion, celery and carrot
2 tablespoons minced fresh parsley
1 tablespoon butter
1 tablespoon Cajun seasoning
1/4 teaspoon salt
1/4 teaspoon hot pepper sauce
1 pound lean ground beef (90% lean)
4 onion rolls, split

Steps:

  • In a small bowl, combine the first 10 ingredients until blended; chill until serving. , In a large skillet, saute the onion, celery, carrot and parsley in butter for 6-8 minutes or until tender; cool slightly. , In a large bowl, combine the vegetable mixture, Cajun seasoning, salt and pepper sauce. Crumble beef over mixture and mix well. Shape into four patties. , Grill burgers, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 160° and juices run clear. Grill rolls, cut side down, over medium heat for 30-60 seconds or until toasted. Serve burgers on rolls with sauce.
