These are easy to make for camping, my husband loves them! We prepare them at home and then leave them in the cooler until we are ready to cook. You can use any combination of meat and vegetables that you like. Do not try to use less olive oil or foil or your dinner will burn. Be careful when opening foil as steam will have formed inside and can burn you.

Ingredients

1 pound skinless, boneless chicken breast meat - cubed
2 onions, diced
1 (8 ounce) package sliced fresh mushrooms
1 yellow bell pepper, seeded and sliced into strips
1 red bell pepper, seeded and sliced into strips
4 cloves garlic, sliced
4 small potatoes, cubed
¼ cup olive oil
1 lemon, juiced

Steps:

In a large bowl, or a large zip-top bag, combine the chicken, onion, mushrooms, yellow pepper, red pepper, garlic, and potatoes. Pour in the olive oil and lemon juice, then mix well.
Evenly divide the mixture between 4 large sheets of aluminum foil. Top each with another sheet of foil, and roll up the edges tightly. Wrap each packet again, securely in another sheet of foil to double wrap.
Cook in the hot coals of a campfire until the chicken is opaque and the potatoes are tender, around 40 minutes.

Ingredients

1 package (20 ounces) refrigerated red potato wedges
4 hot dogs
1 small onion, cut into wedges
1/4 cup shredded cheddar cheese
1/2 cup barbecue sauce

Steps:

Divide potato wedges among four pieces of heavy-duty foil (about 18 in. square). Top each with a hot dog, onion wedges and cheese. Drizzle with barbecue sauce. Fold foil around mixture, sealing tightly., Grill, covered, over medium heat 10-15 minutes or until heated through. Open foil carefully to allow steam to escape.

I came up with this recipe on a camping trip in New Hampshire's White Mountains. Potatoes, onions, and bacon are roasted in foil over an open flame. Normally I'd use olive oil, but we were in the mountains and the only source of fat/oil we had was the bacon. Turned out to be a hit and we've been making these ever since.

aluminum foil
6 slices bacon, divided
8 small red potatoes, or more to taste, halved
1 red onion, quartered and slightly broken apart
1 teaspoon red pepper flakes
1 teaspoon chili powder
coarse salt and freshly ground black pepper to taste

Steps:

Build a campfire and allow the fire to burn until hot.
Cross two 1 1/2-foot long pieces of aluminum foil so the centers are overlapping. Place 3 strips of bacon in the center of the foil.
Combine potatoes, onion, red pepper flakes, and chili powder in a bowl. Season generously with salt and pepper. Place potato mixture on top of the bacon slices and top with the remaining bacon slices.
Fold the opposite ends of the foil inward to create a packet, making sure that all open spaces are sealed.
Throw the packet directly on the campfire. Cook, turning as needed so the contents do not burn, until potatoes are tender and edges of the foil blacken, 45 to 60 minutes. Open packet very carefully.
