BACON SPINACH CHICKEN: A FAST AND SATISFYING CHICKEN DINNER RECIPE
Bacon spinach chicken is the fast, easy, and deeply satisfying dinner recipe you need to add to your weeknight rotation. Made with lean chicken breasts, soft cream cheese, healthy spinach smoky bacon, and melty mozzarella, you can't go wrong with this flavor-packed stuffed chicken recipe.

Steps:
- Preheat the oven to 400°F. Line a large baking sheet with parchment paper or aluminum foil.
- Place the chicken on a cutting board and slice slits on one side of each chicken breast. Be sure not to cut all the way through the chicken, as you don't want the filling to fall out. Sprinkle each chicken breast with salt and pepper on all sides and transfer to the prepared baking sheet.
- In a mixing bowl, combine the cream cheese, drained spinach, sundried tomatoes, and mozzarella. Season with salt, pepper, and red pepper flakes. Fill every other slit in the chicken breasts with the cream cheese mixture. Fill the remaining slits with a slice of bacon.
- Sprinkle the parmesan cheese on top of each chicken breast.
- Bake until the chicken is cooked through, cheese is melted and bacon is crispy, about 35 minutes.
CHEESY GRILLED SPINACH-STUFFED CHICKEN BREASTS WITH CANADIAN BACON & WALNUTS

Steps:
- Trim chicken breasts of any fat. Pound to 1/2" - 3/4" thick, or simply slice open through thickest part, butterflying.
- Top each with 2 slices Canadian bacon.
- In medium bowl, stir together filling ingredients well. Top each with filling.
- Press closed, and tie with cooking string, wrapping around simply, for ease of removing later.
- Heat one side of grill to medium-high heat. Oil grates on cool side, and place filled breasts, filling side-up, onto grill. Close lid and grill until done, about 30-35 minutes.
- Remove string. Top each with thick slices of fresh mozzarella, close lid and melt cheese, about 5 minutes.
- Remove to an oven-safe baking dish, and place into a low oven to keep warm while preparing any side dishes.
- Serve topped with the 1/2 cup reserved sauce (warmed), a garden-fresh tossed salad, and angel hair pasta with sauce. (*Also goes nicely with a wild rice pilaf.)
- *Garnish with fresh basil if desired.
BAKED EGGS WITH CANADIAN BACON, SPINACH, AND AGED CHEDDAR
Steps:
- Heat oven to 350 degrees F and arrange rack in middle. Butter 4 (6-ounce) ramekins and set aside.
- Melt 1 tablespoon butter in a large frying pan over medium heat. When it foams, add onion, season well with salt and freshly ground black pepper, and cook until softened, about 1 minute. Add spinach and cook until spinach is well wilted, about 2 minutes.
- Place ham on bottom of ramekins and top with spinach. Crack eggs into ramekins, place 1 tablespoon cream over each egg, and divide half of cheese evenly among ramekins.
- Put ramekins on a baking sheet and bake, rotating pan halfway through baking, until whites are just set but yolks are still runny, about 15 to 18 minutes.
- Meanwhile, spread remaining 2 tablespoons butter on 4 slices sourdough bread. Top with grated cheese and toast until golden brown. Serve eggs with toast.
EGGS BENEDICT WITH CANADIAN BACON AND SPINACH

- Foolproof Hollandaise:
- To make the Herb-Roasted Potatoes: Remove them from the oven and cover to keep warm. Turn the oven heat up to broil. Put the English muffin halves on a baking sheet and brown on both sides under the broiler. Remove to a plate. Reduce the oven heat to 200 degrees F and put the English muffins in the oven to keep warm.
- Heat 2 to 3 inches salted water to a simmer in a wide saucepan or deep skillet for the eggs; turn off the heat and cover to keep warm.
- Meanwhile, make the hollandaise. Combine the egg yolks, lemon juice, water, salt and cayenne in a blender and blend until light and fluffy, about 1 minute. Then, with the blender going, drizzle in the melted butter in a thin stream. Taste for salt and lemon juice. To keep the sauce warm, put the whole blender jar in a bowl of warm water; set aside while you finish the dish.
- When the potatoes are out of the oven, heat a 2-count of olive oil a large skillet over medium-high heat. Add half of the bacon slices and brown on both sides. Transfer to a plate lined with paper towels. Brown the remaining 4 slices and put the on the plate. Put the bacon in the oven to keep warm.
- Put the skillet back over medium heat. Add a 2-count of olive oil. Add the onion and cook until softened, 3 to 5 minutes. Add the spinach and give it all a stir; cook until warmed through, 3 to 4 minutes. Stir in the cream and simmer to reduce. Season with salt and pepper.
- Return the water to a bare simmer. Add the vinegar and swirl a couple of times with a kitchen spoon. Then, first cracking each egg into a cup, gently drop 4 eggs into the simmering water and cook until just set, 3 to 5 minutes.
- Meanwhile, get yourself 4 serving plates and put 2 muffin halves on each plate. Put a piece of bacon on each half and top with a spoonful of spinach. Remove the poached eggs with a slotted spoon and place on top of the spinach. Do the same with the remaining 4 eggs. Spoon the warm hollandaise sauce over and garnish with a parsley sprig. Serve with the Herb-Roasted Potatoes.
- Preheat the oven to 375 degrees F. Toss together the potatoes, oil, and thyme, and sprinkle with salt. Dump the potatoes out on a baking sheet and roast until tender and crisp on the edges, 30 to 40 minutes.

Been wanting to start making my own and saving it here for safe keeping. I haven't tried this yet. Update: I have made this now after reading Wing Man's review. I have made it several times over the last year or so and it is great. I just never updated.

Steps:
- Bring all ingredients except loin to a boil for 10 minutes.
- Trim fat from loin.
- Cool the brine to 38 degrees F and strain if desired.
- Add loin and put a plate on top to keep submerged.
- Cover,Put in fridge and let sit 7 days turning once at 4 days.
- Remove and rinse in cold water. Soak for 45 minutes in cool water.
- Get smoker to 225 Degrees F. Use a good hardwood of choice.
- For breakfast bacon cook to 145 degrees F.
- For finished bacon cook to 155-160 degrees F.
- Cut to desired thickness. 1/4" for me.
- Keeps in fridge same as commercial bacon.
- Keeps in freezer longer if left unsliced.

I needed a new chicken recipe and it had to only use healthy ingredients. My dad had a heart attack and he is only allowed Asiago cheese and canadian bacon as substitutes for their counter fattening parts.

- Preheat oven to 350 degrees, line bottom of a glass pan with olive oil and set aside at least 10 15 toothpicks near your workstation.
- Mix seasoning ingredients in a shallow pan, with enough room to lay one chicken breast down in it.
- Add as much as you want of each seasoning per your taste, I used a couple of shakes for each ingredient and a little extra of the cheeses.
- Mix all stuffing ingredients together in a bowl.
- Lay one chicken breast in the shallow seasoning dish to coat the outside, and then in the center of the chicken breast add a line of the stuffing mixture.
- Roll and seal by sticking a toothpick on the top of each end to close.
- Once all the chicken breasts are stuffed and in the glass dish, you will have left over stuffing, place the leftover stuffing on top of each chicken breast on the lip of the seal.
- Bake in oven for 30 minutes, check to see if done, depending on oven you may need another 15 minute.

- Cook the spinach on a medium heat in a splash of oil for 3-5 minutes until it is slightly wilted.
- Stir in the ricotta and cook for a further 30-60 seconds. Allow to cool.
- Cut slits into the chicken breasts about 1cm (½ inch) apart but don't cut all the way through - about 75% of the way down is what you should aim for.
- Stuff all of the spinach and ricotta mixture into the slits.
- Season the chicken with salt and pepper.
- Grate the cheddar and sprinkle it generously on top.
- Shake the ground paprika over the chicken to add some colour and flavour.
- Bake in the centre of a pre-heated oven for 20-25 minutes 400°F (200°C) until the cheese has melted and the juices are clear.
