MAPLE-BACON CHOCOLATE CHIP COOKIES
This recipe was born out of a challenge to include bacon in a cookie batter. While that has been done before, the inclusion of chocolate chips and maple together in a whipped batter make this a sweet-yet-savory chewy cookie treat!

- Preheat an oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper. Whisk together the flour, baking powder, baking soda, and salt; set aside.
- Beat together the butter, brown sugar, and white sugar with an electric mixer until smooth. Add one egg; beat until blended into the butter mixture. Add the remaining egg, vanilla extract, and maple extract; beat until well blended and slightly fluffy. Stir in the flour mixture a little at a time, mixing just until combined. Stir in the bacon and chocolate chips. Scoop by rounded tablespoonfuls onto prepared cookie sheets.
- Bake in the preheated oven until edges turn golden brown, 10 to 12 minutes. Remove from the oven, and cool on a wire rack.

- Make the candied bacon: Heat up your favorite makin bacon pan to a medium high -- basically, just make the bacon the way you normally would except after placing in the pan sprinkle with sugar, after you flip the bacon sprinkle again. If the grease in the pan gets TOO syrupy just lower the heat a little and let the bacon cook slow and sweet -- If you usually place done bacon on a paper towel like i do FORGET IT! It gets to be too sticky to be of any use. I just place on a plate right next to the stove. Try not to eat too much of the bacon when your done because you don't want to skimp with the cookies.
- Make the cookies: Combine flour, baking soda and salt in a small bowl. beat butter, both sugars, vanilla, almond extract and maple flavor in a large bowl. add eggs, one at a time, beating well. gradually beat in flour mixture. Mix in morsels and bacon pieces. I find the dough to be too soft so I leave mine to firm up in the fridge for 30 minutes or so.
- Spoon dough (about a Tbsp per cookie) onto an ungreased baking sheet and bake at 375°F for 9-11 minutes -- ENJOY!

- 1. make the candied bacon: preheat the oven to 350°F lay bacon on a parchment covered baking sheet so they are not overlapping. sprinkle about 2 tsp brown sugar evenly on each strip of bacon. bake for 12 minutes, remove from oven, flip bacon and drag it through the syrupy liquid that's collected on the baking sheet. put the bacon back in the oven for another 12-15 minutes, until it is fully cooked and very dark (mahogany). remove the strips from the sheet and cool on a wire rack. after they have cooked, chop them or quickly food process into tiny pieces.
- 2. make the cookies: combine flour, baking soda and salt in a small bowl. beat butter, both sugars and vanilla in a large bowl. add eggs, one at a time, beating well. gradually beat in flour mixture. stir in chocolate morsels and bacon pieces.
- 3. spoon dough (about a Tbsp per cookie) onto an ungreased baking sheet and bake at 375 F for 9-11 minutes. i tend to go a little under 9 minutes so they come out just underdone. remove to cooling racks or eat immediately with a tall glass of cold milk.

- Preheat an oven to 350 degrees F (175 degrees C).
- Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. Crumble.
- Beat the sugar, butter, eggs, and vanilla extract with an electric mixer in a large bowl until fluffy and smooth. Stir in flour, cocoa powder, baking soda, and salt. Mix in the chocolate chips and bacon. Drop cookies by rounded spoonfuls onto ungreased cookie sheets.
- Bake for 10 to 12 minutes in the preheated oven. Let stand 5 minutes before transferring to wire racks to cool completely.
