CHEESE SAVOURY (SANDWICH FILLING)



Cheese Savoury (Sandwich Filling) image

A North Eastern classic sandwich filling from England and one that was made famous by Gregg's the Bakers of Gosforth in Newcastle-upon-Tyne. Traditionally used to fill "stotty cake" sandwiches, this is a fabulous vegetarian spread for the school or office lunch box.

Number Of Ingredients 5

250g grated extra mature or vintage Cheddar cheese
1 large carrot, peeled and grated
1 large red onion, peeled and grated
salad cream
salt and pepper to taste

Steps:

  • Mix the grated cheese, carrot and onion in a bowl and then add salad cream spoon by spoon, until a spreadable and creamy consistency has been achieved.
  • Adjust seasoning with salt and pepper and leave for at least 4 hours in the fridge before using. Keeps for up to 4 to 5 days in a covered container in the fridge.
  • Makes 8 rounds of sandwiches or 8 bread rolls.

If your worried about calories, beware! But if you are driven by taste, this is the best broccoli and cheese that will ever cross your lips. I promise! It is originally a Medieval recipe and has been redacted to suit modern taste!

1/4 cup butter
1/4 cup cream cheese
1/4 lb brie cheese
2 tablespoons whole milk
1/4 teaspoon white pepper
1 head broccoli, precooked, cut up and placed in baking dish

Steps:

  • In double boiler melt butter over medium heat.
  • Cut up cubes of cream cheese and melt into the butter.
  • Add white pepper and milk and stir until all of the cream cheese mixture is melted.
  • Add cubes of the Brie cheese and melt together with the butter cream cheese mixture, making sure to not scald the cheese.
  • When all of the cheese is completely melted, pour over your precooked broccoli and place into a preheated 400 degree oven to lightly brown the tops of the cheese. Serve hot and bubbly !

ROASTED CABBAGE WITH PARMESAN, WALNUTS AND ANCHOVIES



Roasted Cabbage With Parmesan, Walnuts and Anchovies image

Roasting cabbage wedges at high heat makes them crisp at the edges and tender in the middle. Here, the lacy crevices between the leaves are stuffed with a piquant mix of anchovies, walnuts and Parmesan, giving the sections crunch and a deep savory flavor. Serve them as a light, meatless main course, paired with noodles, rice or crusty bread, or as a hearty side dish to roast chicken or fish.

Number Of Ingredients 10

1 medium head green cabbage (about 2 1/2 pounds)
1/2 cup extra-virgin olive oil, plus more as needed
Salt, as needed
3/4 cup finely grated Parmesan, plus more for serving
6 anchovy fillets, minced
2 fat garlic cloves, finely grated, passed through a garlic press or minced
1 teaspoon fresh thyme leaves
1/2 teaspoon freshly ground black pepper, plus more as needed
2/3 cup chopped walnuts or other nuts, such as almonds or hazelnuts
1/2 cup chopped fresh dill or cilantro

Steps:

  • Heat oven to 450 degrees. Cut the cabbage in quarters lengthwise through the core, then cut out the cores and stem. Slice the quarters lengthwise into 1 1/2-inch-thick wedges.
  • Place wedges on a rimmed sheet pan, flat sides down. It's OK if the pan seems a bit crowded; the wedges will shrink as they roast, but try not to overlap them if possible. Lightly drizzle them with oil and season with salt.
  • In a small bowl, combine Parmesan, anchovies, garlic, thyme and black pepper. Stir in 1/2 cup oil to make a loose paste. Massage paste into each cabbage wedge, stuffing the mixture in between the leaves.
  • Lightly drizzle cabbage with a little more oil. Roast until cabbage is lightly browned in spots, 25 to 30 minutes.
  • Remove pan from oven and sprinkle walnuts all over the top of the cabbage. Roast for another 5 minutes or so, until cabbage is tender and caramelized and the walnuts are golden and toasted.
  • Sprinkle cabbage with dill and more Parmesan and black pepper, if you'd like. Serve immediately.

1/4 cup butter, softened
1/2 teaspoon dried parsley flakes
1/2 teaspoon dried oregano
1/4 teaspoon garlic powder
8 ounces sliced Colby cheese
8 slices white bread

Steps:

  • In a small bowl, combine the butter, parsley, oregano and garlic powder. Cover and refrigerate 2 tablespoons for Herbed Chicken Stir-Fry (recipe also in Recipe Finder) or save for another use. Place cheese on four slices of bread; top with remaining bread. Spread outside of each sandwich with remaining butter mixture., In a skillet over medium heat, toast sandwiches for 4-5 minutes on each side or until bread is lightly browned and cheese is melted.
