Candied Jalapenos are the perfect combination of sweet and spicy!

Number Of Ingredients 6

1 1/2 lbs fresh jalapenos ((about 30 peppers))
1 cup apple cider vinegar
3 cups granulated sugar
1 tsp garlic powder
1/4 tsp ground turmeric
1/4 tsp celery seed

Steps:

  • Remove and discard stems from peppers, then slice into 1/4" slices. Set pepper slices aside.
  • To a large pot, add cider vinegar, white sugar, garlic powder, turmeric, and celery seed and bring to a boil. Reduce heat to about MED LOW and simmer for 5 minutes.
  • Raise the heat to about MED HIGH to bring mixture back to a boil. Once boiling, add the pepper slices. Allow to return to a boil, then reduce the heat again (to about MED LOW) and simmer for 4 minutes.
  • Transfer the peppers using a slotted spoon to clean glass canning jars, filling jars to within 1/4 inch of the upper rim of the jar.
  • Only the syrup should remain in the pot at this point. Increase the heat to bring to a full rolling boil. Boil like that for approximately 6 minutes.
  • Ladle the syrup into the jars with the jalapeno slices. If you notice any air pockets, take a clean spoon and insert it into the jar to get rid of the trapped air. Fill jars to within 1/4-1/2" from the upper rim of the jar.
  • Wipe the rims of the jars with a damp paper towel, then screw on canning jar lids. Label if desired and refrigerate for at least 1-2 weeks (3-4 weeks for optimal flavor). Candied jalapenos are good for up to 3 months if kept properly refrigerated.

1 pound jalapeno peppers (about 16), cut into 1/4-inch slices
1-1/2 cups thinly sliced garlic cloves (about 4 bulbs)
3-1/2 cups sugar
1-1/4 cups red wine vinegar
3/4 teaspoon salt
3/4 teaspoon mustard seed
3/4 teaspoon celery seed
1/2 teaspoon ground turmeric
1 cayenne pepper, minced, optional

Steps:

  • Pack jalapenos and garlic into three hot 1-pint jars to within 1/2 in. of the top. In a large saucepan, bring sugar, vinegar, seasonings and, if desired, cayenne pepper to a boil. Reduce heat; simmer, uncovered, 5 minutes., Carefully ladle hot liquid over pepper mixture, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 15 minutes. Remove jars and cool.

Fell in love with this appetizer at a friends birthday party. Make sure you buy the candied jalapeno slices in a jar. I put a brand example in the recipe that is the best match.

1 (8 ounce) package cream cheese, softened
6 -8 flour tortillas, at room temperature
1/4 cup sliced jalapeno (candied in a jar, Texas Pepper Works brand)
1/3 cup green onion, chopped

Steps:

  • When chopping the green onions, do not use the white part, as it will overpower the entire recipe.
  • Mix all ingredients except the tortillas in a medium bowl with a hand mixer until well blended.
  • Add some candied jalapeno juice from the jar they came in to help make a creamier consistency. It makes mixing easier.
  • Spread about 3 to 4 tablespoons of mixture onto a tortilla and roll tightly.
  • Cut off ends of tortillas, discard.
  • Slice tortilla rollup into 1/2 inch slices.
  • Repeat until all tortillas are used.
  • Serve immediately or refrigerate until you are ready to serve.

3 lbs jalapenos, fresh and firm
2 cups cider vinegar
6 cups granulated sugar
1/2 teaspoon turmeric
1/2 teaspoon celery seed
3 teaspoons granulated garlic
1 teaspoon ground cayenne pepper

Steps:

  • Wearing gloves, remove the stems from all of the jalapeno peppers. The easiest way to do this is to slice a small disc off of the stem-end along with the stem. Discard the stems.
  • Slice the peppers into uniform 1/8-1/4 inch rounds. Set aside.
  • In a large pot, bring cider vinegar, white sugar, turmeric, celery seed, granulated garlic and cayenne pepper to a boil. Reduce heat and simmer for 5 minutes.
  • Add the pepper slices and simmer for exactly 4 minutes.
  • Use a slotted spoon to transfer the peppers, loading into clean, sterile canning jars to within 1/4 inch of the upper rim of the jar.
  • Turn heat up under the pot with the syrup and bring to a full rolling boil. Boil hard for 6 minutes.
  • Use a ladle to pour the boiling syrup into the jars over the jalapeno slices. Insert a cooking chopstick to the bottom of the jar two or three times to release any trapped pockets of air. Adjust the level of the syrup if necessary. Wipe the rims of the jars with a clean, damp paper towel and fix on new, two-piece lids to finger-tip tightness.
  • *If you have leftover syrup, and it is likely that you will, you may can it in half-pint or pint jars, too. It's wonderful brushed on meat on the grill or added to potato salad or, or, or... In short, don't toss it out!
  • Place jars in a canner, cover with water by 2-inches. Bring the water to a full rolling boil. When it reaches a full rolling boil, set the timer for 10 minutes for half-pints or 15 minutes for pints.
  • When timer goes off, use canning tongs to transfer the jars to a cooling rack. Leave them to cool, undisturbed, for 24 hours. When fully cooled, wipe them with a clean, damp washcloth then label.
  • Allow to mellow for at least two weeks, but preferably a month before eating. Or don't.

JALAPENO CREAM CHEESE ROLLUPS



Jalapeno Cream Cheese Rollups image

Spicy jalapeno and veggie rollups. These have a kick and are quite addicting. The ranch dressing gives them a nice base and the jalapenos some kick. The carrot some crunch and the olives some saltiness. These are pretty simple to make once you get the rolling technique down.

3 (8 ounce) packages cream cheese
1 (12 ounce) jar pickled jalapeno peppers
1 (8 ounce) can black olives
1 cup baby carrots
2 (1 ounce) packages hidden valley ranch dressing mix
12 burrito-size flour tortillas

Steps:

  • The cream cheese should be softened. If it is not put it in a microwaveable bowl and microwave for 1 minute. Stir after a minute and microwave for 30 seconds more.
  • Add the ranch dressing mix and stir.
  • Drain the olives and jalapenos.
  • Chop the carrots, jalapeno and olives using a food processor or knife until they are finely diced.
  • Add to the cream cheese mixture and mix thoroughly.
  • Trim the rounded edges off the tortillas making them square.
  • Lay some plastic wrap on the counter and place the tortilla on it.
  • Spread the cream cheese mixture on the tortilla to an even thickness. It should be about 1/8 of an inch or so. Roll the tortilla up and wrap it in the plastic wrap.
  • Gently squeeze the tortilla to even out the distribution of the cream cheese.
  • Continue until all the mixture is used.
  • Put the rolled up tortillas in the refrigerator for a couple of hours.
  • When ready to serve remove the plastic and slice the rollups into 1/2 inch rolls. Serve with Salsa.
