CONTINENTAL ROLLS
These multipurpose rolls are great as part of a continental breakfast, for making ciabatta sandwiches or panini, along with soup or salad for lunch, and they are a fabulous roll to pass at dinner. This one covers all your bases. Bon appetit!
Yield makes 8 3 1/2-inch rolls

Steps:
- Combine the warm water, agave nectar, and yeast in the bowl of a stand mixer fitted with the paddle attachment (not bread hook). Use a wooden spoon or whisk to mix well. Make sure the yeast is completely dissolved.
- Whisk together the flour mix, xanthan gum, and salt. Add to the yeast mixture in two batches and beat on medium speed, scraping down the sides of the bowl as necessary, until the dough is combined, about 1 minute.
- Dust a baking sheet liberally with cornmeal.
- Use a rubber spatula to turn out the dough onto a well-floured board. Sprinkle the top of the dough with flour mix, pat into a disk, and cut in half. Roll the dough into two 12-inch logs. Cut one log into 4 pieces. Shape into 3 by 3-inch rectangles. Place on the baking sheet. Repeat with the other log. Spray the tops of the rolls with baking spray. Cover the rolls with a clean dish towel or tea towel. Place a pan of very hot water in the bottom of the oven. Put the baking sheet with the rolls in the oven, with the oven turned off. Let rise for 1 hour. In the last 20 minutes of the rise, remove the rolls from the oven, replace the pan of hot water with new hot water (this will create steam, which gives you that coveted crunchy crust), and preheat the oven to 375°F. Let the rolls continue to rise on the counter while the oven is heating. Brush the tops of the rolls gently with cold water. Bake for 15 minutes, remove from the oven, brush the rolls again with cold water, return to the oven, and bake for about 20 minutes longer, or until the rolls are lightly golden on top. Transfer the rolls to a cooling rack and let cool slightly. Serve warm. To reheat, place in a 350°F oven for about 15 minutes, directly on the rack.
- Instead of using baking spray, you can also melt 2 tablespoons of vegetable shortening and brush the rolls with it using a pastry brush.
BAKED HAM AND CHEESE PARTY SANDWICHES

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- In a bowl, mix together butter, Dijon mustard, Worcestershire sauce, poppy seeds, and dried onion. Separate the tops from bottoms of the rolls, and place the bottom pieces into the prepared baking dish. Layer about half the ham onto the rolls. Arrange the Swiss cheese over the ham, and top with remaining ham slices in a layer. Place the tops of the rolls onto the sandwiches. Pour the mustard mixture evenly over the rolls.
- Bake in the preheated oven until the rolls are lightly browned and the cheese has melted, about 20 minutes. Slice into individual rolls through the ham and cheese layers to serve.

- Preheat the oven to 325 degrees.
- Using a food processor, in separate batches chop the onion, ham and cheese.
- In a medium-size bowl combine the butter, poppy seeds, Worcestershire and mustard and add the onion, ham and cheese.
- Split the pans of rolls in half horizontally, leaving the sheet of bottom halves in the pan. Spread each bottom with 1/3 of the ham and cheese mixture.
- Top with the sheets of top halves and cut into individual servings by following the outline of the rolls. The rolls can be frozen at this time.
- At serving time, cover the foil pans with aluminum foil and heat through, 25 to 30 minutes (less if not frozen).

I LOVE these. I make them and can't stop eating them. Even like to eat them cold out of the fridge. I don't like making them much , they are a tad time consuming! But Mmm!! Prep time includes the dough rising and rolling out and filling to the best of my ability. And the amount you get ... who knows!!! It depends on if you make them small or larger.

- Mix margarine, sugar and salt in large bowl.
- Add egg and mix.
- Dissolve yeast in warm water.
- Add milk.
- Mix well.
- Add flour and yeast mixture to bowl, and mix well.
- Knead until smooth.
- Place in greased bowl, cover and let rise until double.
- After dough has risen, punch down.
- Roll out small amounts of dough, creating little circles.

- Preheat oven to 375°F.
- Unroll dough into 4 long rectangles.
- Firmly press diagonal perforations to seal.
- Place ham slices on the rectangles.
- Spread on the mustard, sprinkle with cheese.
- Starting at the shortest side, roll up each rectangle, press and seal.
- Coat with sesame seeds.
