CANDIED JALAPENOS

Candied Jalapenos image

Candied Jalapenos are the perfect combination of sweet and spicy!

Provided by The Chunky Chef

Categories     Condiment

Time 45m

Number Of Ingredients 6

1 1/2 lbs fresh jalapenos ((about 30 peppers))
1 cup apple cider vinegar
3 cups granulated sugar
1 tsp garlic powder
1/4 tsp ground turmeric
1/4 tsp celery seed

Steps:

  • Remove and discard stems from peppers, then slice into 1/4" slices. Set pepper slices aside.
  • To a large pot, add cider vinegar, white sugar, garlic powder, turmeric, and celery seed and bring to a boil. Reduce heat to about MED LOW and simmer for 5 minutes.
  • Raise the heat to about MED HIGH to bring mixture back to a boil. Once boiling, add the pepper slices. Allow to return to a boil, then reduce the heat again (to about MED LOW) and simmer for 4 minutes.
  • Transfer the peppers using a slotted spoon to clean glass canning jars, filling jars to within 1/4 inch of the upper rim of the jar.
  • Only the syrup should remain in the pot at this point. Increase the heat to bring to a full rolling boil. Boil like that for approximately 6 minutes.
  • Ladle the syrup into the jars with the jalapeno slices. If you notice any air pockets, take a clean spoon and insert it into the jar to get rid of the trapped air. Fill jars to within 1/4-1/2" from the upper rim of the jar.
  • Wipe the rims of the jars with a damp paper towel, then screw on canning jar lids. Label if desired and refrigerate for at least 1-2 weeks (3-4 weeks for optimal flavor). Candied jalapenos are good for up to 3 months if kept properly refrigerated.

CANDIED JALAPENO OR COWBOY CANDY

Candied Jalapeno or Cowboy Candy image

This recipe keeps the jalapenos in better looking slices in the jar. Recipe courtesy of http://www.foodiewithfamily.com/2010/05/23/candied-jalapenos/

Time 1h5m

Yield 9 Half Pints

Number Of Ingredients 7

3 lbs jalapenos, fresh and firm
2 cups cider vinegar
6 cups granulated sugar
1/2 teaspoon turmeric
1/2 teaspoon celery seed
3 teaspoons granulated garlic
1 teaspoon ground cayenne pepper

Steps:

  • Wearing gloves, remove the stems from all of the jalapeno peppers. The easiest way to do this is to slice a small disc off of the stem-end along with the stem. Discard the stems.
  • Slice the peppers into uniform 1/8-1/4 inch rounds. Set aside.
  • In a large pot, bring cider vinegar, white sugar, turmeric, celery seed, granulated garlic and cayenne pepper to a boil. Reduce heat and simmer for 5 minutes.
  • Add the pepper slices and simmer for exactly 4 minutes.
  • Use a slotted spoon to transfer the peppers, loading into clean, sterile canning jars to within 1/4 inch of the upper rim of the jar.
  • Turn heat up under the pot with the syrup and bring to a full rolling boil. Boil hard for 6 minutes.
  • Use a ladle to pour the boiling syrup into the jars over the jalapeno slices. Insert a cooking chopstick to the bottom of the jar two or three times to release any trapped pockets of air. Adjust the level of the syrup if necessary. Wipe the rims of the jars with a clean, damp paper towel and fix on new, two-piece lids to finger-tip tightness.
  • *If you have leftover syrup, and it is likely that you will, you may can it in half-pint or pint jars, too. It's wonderful brushed on meat on the grill or added to potato salad or, or, or... In short, don't toss it out!
  • Place jars in a canner, cover with water by 2-inches. Bring the water to a full rolling boil. When it reaches a full rolling boil, set the timer for 10 minutes for half-pints or 15 minutes for pints.
  • When timer goes off, use canning tongs to transfer the jars to a cooling rack. Leave them to cool, undisturbed, for 24 hours. When fully cooled, wipe them with a clean, damp washcloth then label.
  • Allow to mellow for at least two weeks, but preferably a month before eating. Or don't.

Recipe For Candied Jalapenos (aka Cowboy Candy) image

This is a must try recipe for Candied Jalapenos (aka Cowboy Candy)! They are sweet and spicy! It is a canning recipe with a fridge option.

Provided by Reuse Grow Enjoy

Categories     Canning

Time 40m

Number Of Ingredients 7

1 Tsp Celery Seed
4 lbs Fresh Jalapeños (washed and stem removed)
5 Cups Sugar
2 1/2 Cups Apple Cider Vinegar
1/2 Tsp Turmeric
1/2 Tsp Mustard Seed
1/8 Tsp Cayenne Pepper (optional)

Steps:

  • Rinse jalapenos well then slice them into about 1/8-1/4 inch slices. Place in a bowl and set aside.
  • In a medium saucepan combine vinegar, sugar, celery seed, cayenne pepper, mustard seed, and turmeric. Bring this mixture to a full rolling boil. Then immediately reduce the heat and allow it to simmer for 6 to 7 minutes. Be sure to stir it frequently.
  • Now add the sliced jalapenos to the saucepan. Turn the heat back to high and bring it to a rolling boil. Now reduce the heat to low/medium again and allow it to simmer for about another 6 to 7 minutes.
  • While that is simmering, put your pint canning jars and lids in the water bath canner. This is to sterilize them. After a minute or two, remove the jars and lids and place on a dish towel. You always want to be sure to work with sterile canning jars.
  • Now use a large slotted spoon to transfer the jalapenos to the canning jars. Be sure to make them as equal as you can. While regular jars will work, wide mouth jars make it easier to pack the jars.
  • After you remove the peppers from the pot, turn the heat back to high to thicken the brine into a syrup. This should take about 5 minutes.
  • Now distribute the hot brine syrup between the jars. You want to make sure to cover the peppers completely but allow 1/2 inch headspace.
  • After you have the jars full, remove any air bubbles, wipe rims with a damp paper towel or cloth. Then place lids on and then rings. You want the rings to be finger tight. Place jars in a hot water bath or large pot of boiling water and can for 12 minutes. You want to make sure you have enough water in your canner. The water should cover the jars by about two inches.
  • After 12 minutes, remove the jars carefully and allow them to cool on a towel for about 8 to 12 hours.
  • After cool check out seals and if everything is sealed (that is when the top center can't be pushed in) you can store in a cool place for up to one year.

  • Prepare canning jars and water bath canner, according to USDA canning guidelines. Very basically, you will need to sterilize jars and flat lids, place rack in canner, and bring the water in the canner to a simmer.
  • Thinly slice the jalapeño peppers. You "might" want to wear gloves for this part, but if you don't, be sure to wash hands thoroughly after slicing, and do not rub your eyes... just sayin'.
  • In a large pan, bring the apple cider vinegar, sugar, mustard seed, garlic powder, turmeric, celery seed, and cayenne pepper to a boil, on medium heat. Once the mixture begins boiling, turn the heat down to low, and simmer the syrup for 5 minutes. Add all of the sliced jalapeños into the syrup, and stir to combine. Continue to cook the cowboy candy on low heat for 5 more minutes.
  • Divide the cowboy candy into the hot, sterilized canning jars. To do this, add the jalapeños first, then add any remaining liquid from the pan. Fill the jars, being sure to leave 1/4" headspace on each jar. Insert a plastic utensil a couple of times into each jar, to remove any air bubbles. Wipe rims clean, then add the prepared flat lid and screwband. Tighten screwband to fingertip tightness. Place jars onto rack in canner and make sure there is enough simmering water to cover the top of each jar by 1-2 inches. Process jars for 15 minutes, after the water comes to a gentle boil. Once you have finished processing the jars, carefully remove each jar from the boiling water using canning tongs. Place hot jars onto a dish towel (placing them directly on counter could crack jars due to temperature variances). Let jars cool for at least 8 hours before disturbing them. Wipe jars clean, label, and test the seal to make sure the jars have sealed correctly, and then store in pantry. Enjoy!
