THE BEST EVER CANDIED YAMS
Made completely from scratch, these are the BEST candied yams to serve at any holiday dinner! Sweet, tender yams with a simple syrup sauce topped with marshmallows. Sweet and savory!

Steps:
- Place the peeled and cut yams into a large pot, and cover the yams with water.
- Place the pot on the stove top, turn the heat to high, and let the yams boil for about 5 minutes. Then drain the yams, and set the to the side.
- In a separate pot, add in 1 stick of butter, and begin to melt it over medium high heat. Once the butter is melted, reduce the heat to low, and add in the granulated sugar, and the brown sugar. Stir, and cook for 1 minute, then turn the heat off.
- Sprinkle in the ground cinnamon, ground nutmeg, and ground ginger. Stir, and add in the vanilla extract.
- Place the yams into a butter bake dish, and pour the candied mixture all over the yams.
- Fold in the ingredients. Make sure the yams are well coated with the candied mixture!
- Place the yams in the oven, Uncovered, on 375 F for 20 minutes.
- Remove the yams from the oven, and add the marshmallows on top.
- Place the yams back into the oven for 5-7 minutes
- REMEMBER THE MARSHMALLOWS ARE OPTIONAL!
- SERVE!!!!

- Cut the sweet potatoes crosswise into 1-inch-thick rounds. Halve or quarter any extra-large pieces so that they are all similar in size.
- Melt the butter in a large Dutch oven over medium heat. Combine the brown sugar, granulated sugar, pumpkin pie spice and salt in a small bowl. Add the sugar mixture to the Dutch oven and whisk until it forms a paste. Add the potatoes and stir well, spooning the sugar mixture over the potatoes to coat evenly.
- Cover and cook the potatoes, stirring occasionally and gently to avoid breaking them up, until they are just tender when pierced with the tip of a knife and the sauce resembles a thin syrup, 25 to 30 minutes.
- Meanwhile, preheat the oven to 350 degrees F. Spread the pecans on a baking sheet and toast until dark brown with a light scent of roasted nuts, about 8 minutes. Season the pecans with some salt while warm, let them cool completely and coarsely chop.
- Transfer the potatoes with their sauce to a large serving platter and sprinkle the pecans over the top.

- Stir salt into 2 quarts cold water in a large pot. Transfer sweet potato pieces to pot and place over high heat; bring to a simmer. Reduce heat to medium-low and simmer until potatoes are not quite tender but still cooked, 5 to 7 minutes. Use the tip of a knife to test for doneness. Drain.
- Place brown sugar, butter, lemon juice, maple syrup, ginger, cinnamon, cayenne, and pinch of salt in a skillet. Place over medium-high heat, stirring until glaze ingredients melt and start bubbling. Continue cooking, stirring occasionally, until mixture begins to thicken up, 4 to 6 minutes.

- 1. Peel the yams and cut into 3/4 inch slices.
- 2. Place the yams in an 8 quart stock pot. Cover with brown sugar, sugar, and butter.
- 3. Cook over low to medium-low heat until the yams are fork-tender (about 20 to 25 minutes, do not overcook). Water is not needed ~ the yams cook in the sugar and butter without water, as the yams themselves give off their own juices. Do not add the sweetened condensed milk yet.
- 4. Once the yams are fork-tender, use a masher or hand mixer to blend all that sugary, juicy goodness with the yams. No need to remove any of the liquid, it will all blend perfectly.
- 5. Mix in, to taste, a couple of tablespoons of sweetened condensed milk. This will give your yam mixture an ooey, gooey texture.
- 6. You may also add cinnamon and/or nutmeg to taste.
- 7. Spoon into a casserole dish.
- 8. Cover lightly with marshmallows.
- 9. Bake uncovered at 350 F for about 25-30 minutes or until the marshmallows are a light golden brown.
- 10. NOTES: If you double this recipe, use a really big pot, otherwise, cook time is longer. To make this ahead of time, place the covered casserole in the fridge without the marshmallows. Once you're ready to bake, first place in the microwave on low or defrost just to take the chill off and then add the marshmallows. Then pop it in the oven at 350 F to cook.
GREAT-GRANDMA'S CANDIED YAMS
This is my great-grandma's candied yams recipe. I started making them a few years ago, now everyone asks for them every year. The secret I think is in the orange juice and slow cooking.

- Bring a large pot of water to a boil over high heat. Add yams and boil for 10 minutes. Drain and rinse twice with cold water. Soak in cold water for 15 minutes.
- While yams are soaking, preheat the oven to 275 degrees F (135 degrees C).
- Mix white sugar, brown sugar, cinnamon, and nutmeg together in a small bowl.
- Peel and cut yams into chunks and place in a large baking dish. Dot with butter and sprinkle with sugar mixture so all yams are coated. Carefully pour enough orange juice into the bottom of baking dish to measure 1/2 inch.

- Prep the yams. Arrange a rack in the middle of the oven and heat the oven to 350ºF. Peel and cut 3 large yams into 1-inch pieces.
