Homemade Bottled Mexican Hot Sauce image

Create your own signature Mexican-style hot sauce with just a few ingredients and then sprinkle it on all of your favorite dishes.

Number Of Ingredients 7

1 tablespoon vegetable oil
10 fresh green or red jalapeño peppers (about 2 cups slices)
2 cloves of fresh garlic (finely chopped)
1/4 cup diced onion
1/2 teaspoon salt
1 cup water
1/2 cup white vinegar

Steps:

  • Gather the ingredients.
  • Heat vegetable oil over medium heat in a nonstick saucepan . Add sliced jalapeños, garlic, and onion; sauté, stirring frequently, for 5 to 10 minutes, until the onion is transparent, but not yet turning brown.
  • Add the water. When mixture comes to a boil, turn temperature down a bit and put the lid on the pan. Boil gently for about 15 minutes.
  • Remove the pan from heat, take the lid off, and allow everything to sit until cooled to room temperature.
  • Place the cooled jalapeño mixture in a blender and add the salt. Blend at medium speed for 1 minute. While the blender is still working, slowly pour in the vinegar.
  • Strain your hot sauce, then use a funnel to pour the sauce into a sterilized bottle with a tight lid. Refrigerate.

This a quick and easy hot sauce my dad makes with canned tomatoes, jalapeno peppers, and spices. My mom had to go behind him to write down what he was tossing in. Charring the jalapeno peppers (optional) gives it that smokiness, and the jalapeno pepper seeds need to be in the hot sauce (picante) for the heat.

1 (28 ounce) can whole tomatoes in juice
1 slice white onion
1 teaspoon minced garlic

  • Remove the stems from the jalapeno peppers, and the seeds from one jalapeno. Place both jalapeno peppers, tomatoes with liquid, onion, garlic, cumin, oregano, and salt in a blender; pulse to desired consistency. Serve

2 (16 ounce) cans tomatoes
2 tablespoons oil
1 cup onion, finely chopped
1 small jalapeno pepper, minced
2 garlic cloves, minced
2 tablespoons red wine
1 teaspoon dried oregano
1 teaspoon dried ancho chile powder
1/2 teaspoon cumin
1/2 teaspoon dried basil

Steps:

  • Drain the tomatoes, and reserve the juice.
  • Chop the tomatoes, and set aside.
  • In a medium saucepan, heat the oil over medium heat.
  • Add the onion, jalapeno and garilc.
  • Cook until onion is translucent, but not browned, about 5 minutes.
  • Add the tomatoes and their juices, and all remaining ingedients, and simmer uncovered, stirring occasionally for 20 - 30 minutes, or until the sauce thickens sllightly.
  • Using a food processor or hand blender, puree the sauce.

This is my version of my favorite taco wagon's 'earthy' hot sauce of which I can never get enough. It is a little time consuming, but well worth it. I put it on everything from eggs to tacos, quesadillas, and salads. You can use any combination of chiles (cascabel, chipotle, Californian, New Mexican). For a hotter sauce, you can use all hot New Mexico chiles or add a few dried arbol chiles. For a tangier sauce, add the juice of 1 lime.

1 dried guajillo chile
1 dried chile negro (pasilla) pepper
2 dried New Mexico chile pods
1 ½ cups warm water
2 cloves garlic, pressed
1 teaspoon ground cumin
1 teaspoon salt
1 teaspoon packed brown sugar
1 teaspoon white vinegar

Steps:

  • Remove stems and seeds from the guajillo chile, pasilla chile, and the New Mexico chile pods.
  • Heat a cast-iron skillet over medium heat. Toast the chile pods in the skillet until lightly brown, about 2 to 3 minutes. Transfer the chile pods to a small bowl and pour the warm water over them. Allow chiles to soak about 40 minutes.
  • Remove the guajillo and New Mexico chiles from the water. Use a spoon to scrape the pulp from the skin. Discard the skin. Place the pulp of the guajillo chile and the New Mexico chiles in a food processor with the pasilla chile and the water in which the peppers soaked. Puree in the food processor until all ingredients are combined. Add the garlic, cumin, salt, brown sugar, salt, and vinegar. Puree the mixture until smooth.

3 cups water
3 tablespoons vinegar
3 tablespoons finely minced canned jalapenos, sliced
1 tablespoon chili powder
1 tablespoon dried onion flakes
2 teaspoons salt (or salt substitute)
2 teaspoons cornstarch
1 teaspoon cayenne pepper
1 teaspoon sugar
1/4 teaspoon onion powder
1 dash garlic powder

Steps:

  • Combine the tomato paste with the water in a medium saucepan and whisk until smooth.
  • Add the remaining ingredients and stir until combined.
  • Heat mixture over medium high heat until it begins to boil.
  • Continue to cook for about 3 minutes, stirring often.
  • Remove from heat.
  • When sauce is cool enough to taste, try a sample and call your local Fire Department if necessary.
  • If it's not hot enough for you, add some jalapenos and/or cayenne pepper and/or ground red pepper.
  • When sauce has cooled sufficiently poured it into a sealed container and refrigerate.
