EGGPLANT CAPONATA (SICILIAN VERSION)
Delicious relish or appetizer that can be served hot or cold! Serve with toasted crusty bread.

Steps:
- Toss eggplant with salt and place in a colander set over a bowl. Let sit, about 30 minutes. Rinse and pat dry.
- Heat 2 tablespoons olive oil in a large skillet over medium heat. Add celery; cook, stirring often, until softened, about 4 minutes. Add onion and garlic; cook and stir until onion is soft and lightly golden, about 5 minutes. Transfer mixture to a bowl using a slotted spoon.
- Heat remaining 2 tablespoons olive oil in the skillet. Add eggplant and cook, stirring constantly, until lightly browned, 5 to 7 minutes. Stir in celery mixture, tomatoes, olives, capers, tomato paste, and oregano. Bring to a boil; reduce heat to low and simmer uncovered until caponata is thickened, about 15 minutes.
- Season caponata with vinegar, sugar, salt, and black pepper. Transfer to a serving bowl and garnish with parsley.

- 1. 2 T olive oil (for frying only) 2 cloves... garlic, crushed or minced (I used 4 cloves) 1 large eggplant, sliced, pared, and cut in small cubes (about 3 cups) 1/2 cup chopped green pepper 1/2 cup chopped onion 1/4 cup finely chopped parsley 1 tablespoon sugar 1/2 teaspoon crushed oregano 1/4 teaspoon crushed basil 1 teaspoon Kosher salt Few grains black pepper 1 cup canned tomato paste 1/4 cup water 1 cup red wine vinegar (5% acidity) (white vinegar can be substituted) 1 can (4 ounces) mushroom stems and pieces (optional) How to make Eggplant Appetizer-Relish (Caponata) Heat the oil and garlic in a large, heavy skillet. Add the eggplant, green pepper, onion, and parsley; toss to mix. Cover tightly and cook over low heat about 10 minutes. Meanwhile, blend sugar, oregano, basil, salt, and pepper. Add tomato paste, water, and vinegar; mix well. Add to mixture in skillet and stir in remaining ingredients. Cover and cook gently until eggplant is tender. The eggplant will definitely loose its firmness due to stirring, but that's ok. Ladle into jars, remove air bubbles and fill to 1/2 headspace. Wipe rims, add hot lids and rings. Process in water bath 15 minutes for half-pint jars and 20 minutes for pint jars. Makes 5 cups
GVETCH - AN EGGPLANT RECIPE
Steps:
- Sautee chopped onion and garlic in about one tablespoon of oil until the onions are opaque.
- Add peppers and saute with about five minutes.
- Put in the eggplant, carrots and squash and saute until soft.
- Now add the tomatoes. You can used canned, if you'd like. I usually make this in the summer when tomatoes are abundant so I use fresh Romas, or a similar variety.
- Cook together until everything is very soft and you're able to mash the eggplant with a potato masher. You want any large pieces mashed down to smaller bits. It should look very relish-y. If you want it smooth, use an immersion blender.
- Add spices and let it simmer for five more minutes. Taste and adjust spices, as needed. Remember, though, that spices in canned items get a stronger flavor over time. So, don't go crazy.
- Ladle into clean, hot jars, leave head space of 1", and process quarts for 40 minutes in a pressure canner, adjusting for your altitude. If you use pint jars, you may reduce the time to 30 minutes.

- Heat 5 Tbs olive oil in stockpot.
- Add eggplant that has been cut into 1" cubes.
- Stir fry 10-12 minutes until golden and touched with brown.
- Add remaining oil, onions, garlic, and celery and stir fry 10 minutes longer until golden.
- Mix in all remaining ingredients, cover, reduce heat to moderately low and simmer 1 hour, stirring about every 10 minutes.
- Uncover and cook until very thick, about the consistency of chutney.
- Prepare 3 pint sized jars.
- Ladle caponata into jars leaving 1 inch headspace.
- Wipe rims with a damp cloth.
- Seal with lids.
- Pressure cooker can pints at 10 pounds pressure for 30 minutes.

- Salt & Rinse Eggplant: Line a jellyroll pan with paper towels. Spread out eggplant cubes and sprinkle with 2 tablespoons salt. Cover with paper towels. Pace another baking tray on top and add a weight, such as heavy skillet. Let that all stand for 1/2 hour to an hour. (you can cut up the other veggies while you wait) Rinse the eggplant in a mesh colander. Line the same jellyroll pan with more paper towels. Transfer the rinsed eggplant to the tray and pat it dry with another layer of paper towels.
- Saute the Eggplant: Heat 1/4 cup oil in a large skillet (cast iron is best) over medium heat until hot but not smoking. Add half the eggplant in a single layer. Leave it undisturbed for two minutes so it browns a bit. Continue to cook, stirring often, for another 5 minutes, until eggplant is brown in spots and starting to soften. Transfer to a paper-towel-lined mesh colander. Add another 1/4 cup olive oil to the skillet and repeat with the rest of the eggplant.
- Add another 1/4 cup olive oil to the skillet. Add the onions, garlic and celery. Cook, stirring occasionally, for 5 minutes, until the onions are softened. Add the bell peppers and cook for 5 minutes, stirring occasionally, until the peppers are softened. Add the tomato paste, olives, raisins capers, and 3 tablespoons water. Cook, stirring frequently, for 8 minutes. Add the eggplant to the skillet. Whisk the sugar and vinegar together in a small bowl and pour into the skillet. Lower the heat to medium-low and simmer the mixture for 15 minutes, stirring occasionally. Season with salt, to taste. Serve warm or at room temperature. Caponata will keep for a week covered in the fridge and is best served at room temp after a day of letting the flavors meld.

- First, slice the eggplant into 1-inch thick rounds. Then, if you have an apple slicer (which if you're a mom, you sooo should if you don't yet), just slap that baby over the eggplant rounds and make little triangleish "cubes" and one circle. Yeah, they aren't perfect little cubes, but they are about the right size. And hey, it's rustic.
