For dough
1 1/2 cups all-purpose flour
1 tablespoon sugar
1 teaspoon unsweetened cocoa powder
1/2 teaspoon ground cinnamon
2 tablespoons chilled unsalted butter, cut into cubes
8 tablespoons limoncillo or other lemon or orange liqueur
For filling
1 pound (2 cups) fresh sheep's- or cow's-milk ricotta, drained 1 hour in cheesecloth-lined sieve
3/4 cup superfine sugar
1/3 cup miniature chocolate chips
4 tablespoons candied orange peel, chopped, or finely grated zest of 2 oranges
1 teaspoon vanilla extract
To fry and serve
About 8 cups vegetable oil
1 egg white, lightly beaten
Confectioners' sugar for dusting (optional)
Special Equipment
deep-fat thermometer, 4-inch diameter round cookie cutter, 6 (roughly 5 5/8-by-5/8-inch) metal cannoli tubes

Steps:

  • Make dough
  • In medium bowl, whisk together flour, sugar, cocoa, and cinnamon. Using fingertips or pastry blender, blend in butter just until mixture resembles coarse meal. (Alternatively, pulse in food processor.) Drizzle limoncillo over mixture and gently stir with fork until incorporated.
  • Turn out dough onto sheet of plastic wrap. (Dough will still look somewhat dry and crumbly.) Gather together into ball, wrap in plastic, and refrigerate 45 minutes to 1 hour.
  • Make filling
  • In medium mixing bowl, stir together ricotta, sugar, chocolate chips, orange peel, and vanilla. Spoon mixture into pastry bag fitted with 1/2-inch round tip and refrigerate until ready to use. (Filling can be made up to 1 day ahead and refrigerated, covered.)
  • Form, fry, and fill shells
  • Cut dough into 4 even pieces. On lightly floured surface, roll out 1 piece to 1/8-inch thick. Using floured cookie cutter, cut out 2 to 3 rounds from dough. Transfer rounds to baking sheet and keep covered with plastic wrap. Roll out remaining dough and cut rounds in same manner, then gather scraps, roll out, and cut again.
  • Fill heavy 4-quart pot with oil to depth of 3 inches. Heat over moderate heat until thermometer registers 375°F.
  • Meanwhile, brush bottom edge of 1 dough round with egg white. Wrap dough around 1 cannoli tube with egg white-brushed end overlapping other end and gently press edges together to seal. Make 5 more shells in same manner. (Keep remaining rounds covered with plastic.)
  • Working in 2 batches, fry formed shells in hot oil until deep golden brown, about 1 minute. Transfer to paper towel-lined plate to drain and cool 5 minutes. Stand tubes upright and tap gently against countertop to loosen shells. Twist molds to remove shells.
  • Wrap remaining dough around tubes and fry in same manner. (Shells may be made 1 day ahead and stored at room temperature, unfilled and uncovered.)
  • When ready to serve, pipe filling into 1 end of cannoli shell, filling shell halfway, then pipe into other end. Repeat to fill remaining shells. Dust with confectioner's sugar and serve immediately.

ORANGE-RICOTTA FILLING:
4 cups whole-milk ricotta cheese (2 pounds)
1/4 cup confectioners' sugar
3 tablespoons orange-flavored liqueur, such as Grand Marnier
grated zest of 1 orange
CANNOLI DOUGH:
2 cups all-purpose flour
1 1/2 tablespoons granulated sugar
1/ teaspoon ground cinnamon
1/8 teaspoon salt
1/4 cup chilled vegetable shortening, plus more for deep-frying
1/3 cup sweet marsala or water
2 tablespoons red wine vinegar
1 large egg
1 large egg white, beaten until foamy, for sealing dough
2 ounces high-quality bitter sweet baking chocolate
confectioners' sugar for dusting

Steps:

  • 1. TO MAKE THE FILLING: Rub the ricotta through a coarse-meshed sieve into a medium bowl. Stir in the confectioners' sugar, liqueur, and orange zest. Cover and refrigerate until ready to use. 2. TO MAKE THE DOUGH: In a food processor, pulse the flour, sugar, cinnamon, and salt to mix. Add the 1/4 cup shortening and pulse until the mixture resembles coarse meal with a few pea-sized bits. In a glass measuring cup, mix the Marsala, vinegar, and egg. With the machine running, add the liquid through the feed tube and process until a ball forms on top of the blade. Process for 20 seconds to knead the dough. To make the dough by hand, stir the flour, sugar, cinnamon, and salt together in a large bowl. Add the shortening and cut it in with a pastry blender or 2 knives until the mixture resembles coarse crumbs. Stir in the wine mixture to form a soft dough. Transfer to a lightly floured work surface and knead just until the dough is smooth and supple, about 5 minutes. Wrap the ball of dough with plastic wrap. Let stand at room temperature for 30 minutes. 3. Place a large wire cake rack over a jelly roll pan. In a deep Dutch oven, melt vegetable shortening over high heat to a depth of 2 to 3 inches and heat it to 365°F. 4. Working with one half of the dough at a time, roll it out on a lightly floured surface until Y16 inch thick. Using a saucer as a guide, cut out rounds that are slightly less wide than the length of the cannoli tubes (for example, just less than 4 inches wide for 4-inch-long tubes). Wrap a pastry round around each tube, overlapping the ends and securing the round closed with a dab of egg white. Do not get any egg white on the tube, or it will glue the pastry to the tube. 5. Deep-fry 2 tubes (it is hard to keep track of more than 2 at a time) until golden brown, about 1 minute. Using kitchen tongs, carefully transfer the tubes to the wire rack to drain. Let cool for about 2 minutes and, holding the tube with the kitchen tongs (the tube will be hot), slide the cannoli shell from the tube. Let the tubes cool (no need to wash them) while frying the other 2 tubes. Continue forming and frying the cannoli shells until all the dough is used. Let the fried shells cool completely. Do not reroll any scraps. If you wish, cut them into cookie-sized portions, deep-fry until golden, dust with confectioners' sugar, and serve as cookies. 6. To keep the cannoli shells from softening, fill them no more than 1 hour before serving. Put the filling in a pastry bag fitted with a No.5 plain tip (a 1/2-inch-wide opening). Pipe the filling into the pastry shells, filling first one side of the shell, and then the other. To garnish, grate chocolate over the exposed filling and sift confectioners' sugar over the cannoli.

This recipe was given to me by my friend's Italian grandmother about 35 years ago in Tannersville, NY. I have been making them exactly like this ever since and everyone who loves canoli loves these! My friend, Sal, made me some mini forms by going to Home Depot and buying an aluminum pipe and cutting it to around 5 inches each. Optional additions to filling are 1/2 cup chopped candied fruit found in baking aisle (such as citron and candied cherries and orange peel).

1 3/4 cups flour
1/2 teaspoon salt
2 tablespoons sugar
1 egg
2 teaspoons butter, cold cut up
1/4 cup dry sauterne (or white wine)
2 lbs ricotta cheese
1/2 cup confectioners' sugar
4 teaspoons vanilla
1/4 cup mini chocolate chip
1/4 cup pistachio nut

Steps:

  • FILLING:.
  • Drain ricotta overnite by placing a paper towel in a strainer over a bowl and put ricotta in paper towel. Cover with another paper towel and leave in frig,.
  • removing as much water as possible.
  • Add confectioners sugar and vanilla and mix well.
  • Variation is to use 1 1/2 cups ricotta and folding in 1 1/2 cups of homemade whipped cream.
  • Add candied fruit (if desired) and mini chips.
  • After filling cooled shells, sprinkle with chopped pistachios and sprinkle with confectioners sugar.
  • SHELLS:.
  • Crack egg in a cup, saving a bit of white to seal shell.
  • Make a well in flour and place egg and butter. Mix together with pastry cutter adding wine 1 tbl. at a time until dough forms.
  • Make a ball, cover and let sit 15 minutes.
  • Roll out 1/16" thick and cut into 3 inch circles for minis with a cookie cutter or glass.
  • Wrap around form and seal with egg white mixed with a little water. Flare ends slightly.
  • Heat oil to 350 degrees and fry 2 or 3 at a time until lightly browned.
  • Remove with tongs and drain on paper towel. Allow to cool a bit before removing form. I hold with tongs gently, and tap against the counter gently to loosen shell.
  • Shells can be made ahead and kept for several weeks in tightly closed containers with paper towels in between.

When in a hurry I buy my cannoli shells from an Italian Deli. I drain my ricotta in a strainer covered with cheese cloth so the filling holds up longer. Very tasty and you can add more chocolate chips or less depending on your preference.

1 teaspoon white sugar
1 teaspoon salt
1 ½ teaspoons ground cinnamon

1 egg white
¾ cup red wine
1 ½ quarts oil for deep frying
1 ½ pounds ricotta cheese
½ cup sifted confectioners' sugar
2 teaspoons vanilla extract
¾ cup miniature semisweet chocolate chips
3 tablespoons chopped candied orange peel

Steps:

  • In a medium bowl, stir together the flour, sugar, salt, cinnamon and nutmeg. Blend in the shortening and egg white. Add the red wine one tablespoon at a time until the mixture forms a ball. Knead the dough enough to bring it together. Cover and let rest for half an hour.
  • Heat oil in deep-fryer to 375 degrees F (190 degrees C). Divide dough into 2 parts. On a lightly floured surface, roll the dough out to 1/8 inch thickness. Cut into 4 inch long ovals. Place a cannoli tube onto the oval lengthwise and roll up with edges overlapping; seal with a dab of egg white.
  • Fry cannoli shells 2 or 3 at a time in the hot oil. When golden brown, remove from the oil to drain on paper towels. Remove tubes.
  • To make the filling: In a medium bowl, mix together the ricotta cheese and confectioners' sugar. Fold in the vanilla, chocolate chips and candied orange peel. Chill for at least half an hour before filling shells. Drain off any excess liquid. Fill cooled shells and smooth off the filling at the edges. Keep refrigerated until serving.
