I found this recipe while browsing thru a cookbook last night. I have had this before and it was really good.

1 1/2 lbs ground beef
2 eggs
1/4 cup ketchup
3/4 cup herb stuffing mix
1/2 ounce ranch dressing mix, mix for dips
1 (6 ounce) package fried onions

Steps:

  • In a large bowl mix ground beef, eggs, herb stuffing mix, ranch seasoning and fried onions.
  • Shape into loaf shape and place into a 9 x 5 inch pan.
  • Cover loosely with foil.
  • Bake at 350°F for 50 - 60 minutes or until meat is thoroughly cooked. If desired, brush with ketchup for the last 10 minutes of cooking, uncovered.

¼ cup ketchup
¾ cup herb-seasoned dry bread stuffing mix
½ (1 ounce) package dry Ranch-style dressing mix
1 (6 ounce) can French-fried onions

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine meat, eggs, ketchup, stuffing mix, ranch dressing mix and fried onions.
  • Shape into loaf and fit into 9 x 5 inch loaf pan.
  • Bake, covered loosely with foil, at 350 degrees F (175 degrees C) for 50 to 60 minutes, or until meat is thoroughly cooked.

1 tablespoon minced garlic
1/3 cup minced roasted red bell peppers
1 large egg
1/2 cup ketchup
2 tablespoons Worcestershire sauce
2 teaspoons brown sugar
1 tablespoon dry parsley flakes
1 tablespoon dry basil
1 teaspoon dry oregano
1 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
2 pounds lean, grass fed ground beef
1/3 cup Panko bread crumbs

Steps:

  • 1. Preheat oven to 325°. Lightly coat a loaf pan with canola oil spray. 2. In a large saucepan, heat olive oil over medium heat and sauté onion and garlic until onions are translucent. Allow to cool. 3. Combine all ingredients, including sautéed onion and garlic, in a large bowl and mix well. Add meat mixture to loaf pan and smooth the top. 4. Bake for 50 minutes or until beef is cooked through and reached and internal temperature of 165°. Cool slightly, and slice into 8 equal portions.

¾ cup diced red onion
½ cup diced green bell pepper
½ cup diced celery
2 eggs
¼ cup soy sauce
⅓ cup ketchup
2 tablespoons dried basil

2 teaspoons garlic powder
2 teaspoons ground black pepper
1 cup quick cooking oats, or as needed
¼ cup brown sugar
¼ cup ketchup
3 tablespoons brown mustard
½ teaspoon liquid mesquite smoke flavoring
½ teaspoon ground black pepper
½ teaspoon paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 9x13 inch baking pan with aluminum foil.
  • In a large bowl, mix the beef, onion, green bell pepper, celery, eggs, soy sauce, and ketchup. Season with basil, parsley, oregano, garlic powder, and 2 teaspoons pepper. Mix in 1/2 cup oats. Gradually mix in remaining oats 1/4 cup at a time until the beef mixture is firm but not stiff. Transfer to the prepared baking pan, and form into a loaf shape.
  • In a small bowl, mix the brown sugar, ketchup, brown mustard, mesquite smoke flavoring, 1/2 teaspoon pepper, and paprika. Drizzle evenly over the meat loaf.
  • Bake meat loaf 1 hour in the preheated oven, or to a minimum temperature of 160 degrees F (72 degrees F).

Easy and tasty served either hot or cold, wonderful sliced cold for a picnic or sandwiches. We have enjoyed this basic meatloaf for many years.Try a change, instead of the usual topping, try your favourite salsa brushed on top, a nice Chipotle medium or hot salsa is wonderful on it.

1/2 cup onion, finely chopped
1 cup bread or 1 cup cracker crumb
2 eggs
7 1/2 ounces beef broth
1 teaspoon salt
1 teaspoon parsley
1 teaspoon sage
1 teaspoon thyme
1/4 teaspoon pepper
3 tablespoons brown sugar
4 tablespoons ketchup
1 teaspoon dry mustard

Steps:

  • Mix all the meat loaf ingredients together.
  • Pack into a 5 x 9 loaf pan.
  • Bake at 325f degrees for 1 1/4 hours.
  • Remove from oven, turn out of pan and place on an ovenproof serving dish.
  • Topping: Mix the topping ingredients.
  • Brush over the meat loaf and return to the oven for 30 minutes or longer.
  • Note: The finished meat loaf can be frozen or the meat loaf ingredients can be split into 2 smaller loaf pans, cooked, topped, cooled and frozen.
  • Defrost and reheat or use sliced cold.
  • ALTERNATE TOPPING.
  • 4 tablespoons chilli sauce.
  • 3 tablespoons splenda.
  • 4 tablespoons spreadable soft cream cheese - light.
  • 1 tablespoon hot horseradish.
  • 1 teaspoon dry mustard.
  • Combine all and brush on top of meatloaf instead of above topping.

MEATLOAF WITH A RANCH TWIST

I wanted a different twist to my meatloaf, so I added a package of dry Hidden Valley Ranch Dressing Mix. Instead of using ketchup for the sauce, I use V8 to add a different taste. Use the spicy if you want more of a kick to your sauce. My kids went back for seconds when normally I have to beg them to just eat meatloaf.

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Combine the vegetable juice, brown sugar, and Worcestershire sauce in a saucepan over medium heat; cook until the sauce thickens, about 10 minutes.
  • Mix the ground beef, garlic powder, onion powder, ranch dressing mix, sage, salt, and pepper together in a large bowl. Gradually sprinkle the bread crumbs into the meat while mixing so the crumbs are distributed evenly throughout; add the egg and milk and continue mixing. Shape the mixture into a loaf and transfer to a loaf pan. Pour about half the sauce over the meatloaf.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Cut the meatloaf into 6 even slices. Pour the remaining sauce over the slices to serve.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
