Homemade Pudding image

It pays to have a go-to homemade dessert that you can whip up when you need a sweet treat. That way you can be in charge of the ingredients and quality. And chances are very good that your cupboard is already stocked with what you need to make this unsung hero. To fancy it up, add whipped cream, toasted coconut, fresh fruit or nuts. Feeling indecisive? Make two batches-one chocolate and one vanilla-and swirl them together.

1 ½ cups reduced-fat milk, divided
3 tablespoons cornstarch
1 cup half-and-half
½ cup granulated sugar
⅛ teaspoon salt
1 teaspoon vanilla extract
¼ cup bittersweet chocolate chips

Steps:

  • Whisk ¼ cup milk and cornstarch in a small bowl. Set next to the stove.
  • Combine the remaining 1¼ cups milk, half-and-half, sugar and salt in a medium saucepan. Cook over medium-high heat, whisking occasionally, until bubbles start to form around the edges, about 3 minutes. Whisk the cornstarch mixture. Then, while continuously whisking the milk mixture in the pan, slowly add the cornstarch mixture. Cook, whisking constantly, until the mixture starts to thicken, about 30 seconds. Reduce heat to maintain a low simmer and cook, stirring, until very thick, about 2 minutes. Remove from heat and stir in vanilla and chocolate chips (if using).
  • Transfer the pudding to a heatproof bowl. Place a piece of plastic wrap directly on the surface to keep a skin from forming. Refrigerate until cold, at least 4 hours and up to 3 days.

I had this at a friends for brunch. She said she got it from her aunt. It was really good and so easy to put together. You can also substitute chocolate chips for the craisins and hazelnut coffee creamer. Use your imagination. I like it because it is simple and easy and you can change it up to suit what you have in the house.

8 croissants
8 eggs
1 (15 ounce) container French vanilla flavored coffee creamer
3/4 cup craisins

Steps:

  • Preheat oven to 350 degrees. Butter a 9 x 13 casserole dish. Tear croissants into large pieces. Place in a buttered casserole dish.
  • Blend eggs and creamer together for 30 seconds in blender.
  • Pour over croissants and sprinkle craisins on top. Press down on croissants to soak up liquid. Chill for a minimum of 30 minutes. Press croissants down again before baking.

4 teaspoons instant coffee granules
1 tablespoon boiling water
1-1/2 cups cold fat-free milk
1 package (1.4 ounces) sugar-free instant chocolate pudding mix
1/2 teaspoon ground cinnamon
1 cup reduced-fat whipped topping
Additional whipped topping and chocolate wafer crumbs, optional

Steps:

1 cup coffee brewed and chilled
1/2 cup raisins
zest of 1/2 lemon
2 tsp vanilla
6 cups brioche or egg bread, stale and cubed

Steps:

  • Preheat oven to 350 F. Whip eggs and brown sugar. Add cream, milk, coffee, vanilla and lemon zest. stir well. Pour the mix over the bread cubes and allow to sit for 20 minutes. Sprinkle raisins on top. Transfer mixture to a buttered bread pan and cover it with aluminum foil. Cook for 45 minutes. Serve with a drizzle of 35% cream.

15 whole cinnamon graham crackers
2 packages (8 ounces each) cream cheese, softened
3 packages (3.9 ounces each ) instant chocolate pudding mix
2 tablespoons instant coffee granules
1 teaspoon ground cinnamon, divided
2-1/2 cups 2% milk
1 cup cold strong brewed coffee
8 cups sweetened whipped cream
3 tablespoons chocolate sprinkles

Steps:

  • Arrange half of the crackers in a greased 13x9-in. baking dish (breaking crackers to fit). In a large bowl, beat cream cheese, pudding mix, coffee granules and 1/4 teaspoon cinnamon until blended. Gradually beat in milk and coffee until smooth. Fold in 4 cups whipped cream., Spread half of the filling mixture over the crackers. Repeat layers. Top with remaining whipped cream. Refrigerate, covered, 8 hours or overnight. Just before serving, top with sprinkles and remaining cinnamon.
