Cappuccino-Chocolate Bites image

Flecks of espresso are dotted throughout these petite cookies, which are sandwiched together with creamy milk-chocolate ganache.

Number Of Ingredients 9

2/3 cup all-purpose flour
1 tablespoon finely ground espresso beans
1/8 teaspoon coarse salt
6 tablespoons unsalted butter, softened
1/4 cup confectioners' sugar, plus more for dusting
1/4 teaspoon pure vanilla extract
1/3 cup heavy cream
2 1/2 ounces milk chocolate, finely chopped
Unsweetened cocoa powder, for dusting

Steps:

  • Whisk flour, espresso, and salt in a bowl. Put butter and sugar in the bowl of an electric mixer fitted with the paddle, and mix on medium-high speed until pale and fluffy. Mix in vanilla. Add flour mixture; mix on medium-low until dough comes together. Shape into a disk, and wrap in plastic. Refrigerate 30 minutes.
  • Preheat oven to 350 degrees. Let dough stand at room temperature 10 minutes. Roll between sheets of parchment to 1/8 inch thick. Cut out rounds with a 1 1/8-inch cutter; space 1/2 inch apart on baking sheets lined with parchment. Reroll scraps; cut out. Freeze 10 minutes.
  • Bake until set but not browned, about 9 minutes. Let cool on sheets 5 minutes. Transfer to wire racks; cool completely.
  • Bring cream to a simmer in a saucepan. Pour over chocolate in a bowl; stir until smooth. Press plastic wrap onto surface; refrigerate at least 4 hours (up to overnight). Whisk to soft peaks before using.
  • Transfer filling to a pastry bag fitted with a 1/4-inch plain round tip. Pipe about 1 teaspoon filling on bottoms of half the cookies; sandwich with remaining cookies. Dust with cocoa and sugar.

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter, shortening and sugars until light and fluffy. Beat in egg, ice cream topping and vanilla. In another bowl, whisk flour, coffee granules, baking soda and salt; gradually beat into creamed mixture. Fold in chocolate chips., Drop dough by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake 8-10 minutes or until set. Cool on pans 2 minutes. Remove to wire racks to cool. Steps:

1 teaspoon butter, or more as needed
1 cup butter
1 (16 ounce) package brown sugar
1 (14 ounce) can sweetened condensed milk
1 cup light corn syrup
3 tablespoons instant coffee granules
1 cup chopped walnuts
1 teaspoon vanilla extract
½ teaspoon orange zest, or more to taste

Steps:

  • Line an 8-inch square baking dish with aluminum foil and grease the foil with about 1 teaspoon butter.
  • Melt 1 cup butter in a saucepan over medium-low heat. Stir brown sugar, sweetened condensed milk, corn syrup, and coffee granules into the melted butter. Clip candy thermometer to the side of the saucepan. Cook and stir brown sugar-butter mixture over medium heat until caramel reaches 248 degrees F (120 degrees C), about 20 minutes. Remove saucepan from heat.
  • Stir walnuts, vanilla extract, and orange zest into caramel; pour into prepared baking dish. Let caramel cool to room temperature.
  • Remove caramel from dish and peel aluminum foil from caramel; discard foil. Slice caramels into squares.

2 cup(s) all purpose flour
1 teaspoon(s) baking soda
1/2 teaspoon(s) salt
1/2 cup(s) crisco shortening
1 stick(s) (1/2 c) unsalted butter, softenend
1/2 cup(s) sugar
1/2 cup(s) light brown sugar packed
1 - egg
1 teaspoon(s) vanilla
1 1/2-2 tablespoon(s) instant coffee granules
4 teaspoon(s) water
CHOCOLATE DRIZZLE
2 cup(s) (1 pkg) semi sweet chocolate chips
2 tablespoon(s) shortening or butter

Steps:

  • Preheat oven to 375F. In a bowl, add all your dry ingredients and sift or mix well.
  • In your mixer bowl or bowl using hand mixer, beat your sugars and butter and shortening till light and fluffy. Turn off mixer. In a mini bowl, disolve the instant coffee with the water. Add to the cream mixture, add your vanilla, finally your egg.
  • Slowly add your dry ingredients, till soft dough forms. Turn off mixer. Add your crushed pounded caramels and stir into batter till thoroughy incorporated. **See Cooks Notes Using a small wet cookie scoop (wet - meaning that you dip the scooper in water every 2-3 scoops to ensure easier handling), scoop out dough and bake for 7-8 minutes. Remove from oven, and let the cookies rest on the cookie sheet for a few minutes till able to easily remove without breaking unto the cooling racks.
  • When all the cookies are on the cooling racks. Place chcolate chips and butter or shortening in a microwave safe bowl. Nuke in 10-15 second increments till very glossy and liquid. Add chocolate mixture into a squeeze bottle and drizzle over cookies. Or, you can use the back of a spoon if desired. Cooks notes: Please use 2 gallon size bags to crush the Werther's caramels using a meat grinder or rolling pin. If you place the candies in a food processor, they will grind up nice and fine, however, it will change the conistency of the cookie. Place candies in one bag, place another bag over, and then take out your frustrations.... Enjoy!
