3 tbsp instant coffee
1/2 tsp xanthan gum
3 tbsp water
2 cups ice
1 cup milk
6 tbsp caramel sauce
whipped cream and caramel sauce, to garnish

Steps:

  • Prepare the coffee roast, by mixing the instant coffee with 1 tbsp. of water.
  • Prepare the frappuccino base by mixing xanthan gum with 2 tbsp. of water. (It's okay to have lumps. They'll disappear once blended.)
  • Place the coffee roast, xanthan gum mixture, ice, milk, and caramel sauce into a blender. Blend on low speed for a few seconds, then on a max speed for about 10 seconds, or until the frappuccino is smooth.
  • Pour into the cups and top with whipped cream and caramel sauce. Serve immediately.

1 cup strong brewed coffee (cooled)
3/4 cup milk (or half and half)
1/4 cup caramel sauce
2 tablespoons sugar (optional)
1/4 tsp of xanthan gum (optional)
1 tsp vanilla extract
whipped cream and caramel sauce (to drizzle on top)

Steps:

  • Make 1 cup of strong brewed coffee. You can also use a Starbucks K-Cup or your preferred coffee brand.
  • Cover and chill in refrigerator for 15 minutes.
  • Put ice, cooled coffee, half & half, caramel sauce, sugar, xanthan gum and vanilla into a blender. Mix on high until smooth.
  • Pour into glasses. Top with whipped cream and a drizzle of caramel sauce. Ghiradelli and Torani caramel sauce are two of my favorites. But Hershey's Classic Caramel Sundae syrup also works really well.

3 cups water
3/4 cup ground coffee, coarsely ground (dark roast preferable, espresso even better!)
1 tablespoon Splenda sugar substitute
3/4 cup half & half light cream
3 cups ice
8 tablespoons sugar-free caramel syrup (plus more for drizzling)
fat-free whipped topping (or light or fat-free whipped cream)

Steps:

  • In a large jar or container, combine the coffee grounds and cold water. Stir, cover and let sit for at least 12 hours, preferably overnight.
  • Line a coffee dripper or fine-mesh strainer with a coffee filter and place over a pitcher. Slowly strain about half of the coffee. Replace the filter with a new one and repeat with the remaining coffee.
  • Combine coffee and all ingredients except whipped cream into electric blender.
  • Blend drink until ice is crushed and drink is smooth.
  • Serve in coffee cups and top with whipped cream and caramel syrup (if desired).
  • Add straw for ease in drinking.

1 cup water
3 tablespoons sugar
2 tablespoons caramel ice cream topping
2 cups ice cubes
1 cup fat-free milk
Whipped cream, optional

Steps:

  • Place ground coffee in the coffee filter of a drip coffeemaker. Add water; brew according to manufacturer's directions. Refrigerate until cold. In a blender, combine cold coffee, sugar, caramel topping and ice cubes; process until smooth. Add milk and pulse to combine. Pour into glasses.
