CARAMELIZED BANANA AND PEANUT BUTTER SANDWICHES

You can never go wrong with a peanut butter sandwich, but lunchtime will be a whole lot more delicious with Caramelized Banana and Peanut Butter Sandwiches instead!

2 medium bananas
2 Tbsp unsalted butter, (melted)
2 Tbsp brown sugar
4 slices bread ((I like brioche or challah))
4 Tbsp peanut butter
1 tsp honey

Steps:

  • Cut bananas in half and slice them lengthwise.
  • In a small bowl, mix together melted butter and brown sugar. Slather the mixture all over the bananas and place the bananas on a grill pan (or regular pan if you don't have one) over medium heat.
  • Cook until the bananas are golden brown, 1-2 minutes and then flip to caramelize the other side, about 1 additional minute. Remove bananas to a plate.
  • Place bread slices on the grill for 2 minute per side to give them a nice toasty-ness.
  • Slather the peanut butter on all of the bread slices and layer the banana over the top of two slices. Drizzle the honey on top of the banana, sandwich together with the remaining bread slices, and cut in half.

1 Tbsp softened butter or vegan buttery spread (such as Earth Balance), divided use
1 medium banana, peeled and sliced
1 tsp brown sugar
1 tsp honey
1/2 tsp ground cinnamon, divided use
2 slices whole wheat sandwich bread
powdered sugar for serving, optional

Steps:

  • Melt 1 tsp butter in a small skillet set over medium-low heat. Add in the banana slices and sprinkle with brown sugar. Cook until caramelized, about 2-3 minutes per side, stirring occasionally. When done, stir in 1/4 tsp cinnamon. Transfer to a small bowl. Wipe out skillet (or replace with a clean one) and reduce stove heat to medium-low. Meanwhile, combine remaining 2 tsp butter, honey, and remaining 1/4 tsp cinnamon in a small bowl. Spread one side of each bread slice with the cinnamon honey butter. Lay one slice of bread, buttered side down, in the skillet over medium-low heat. Top with caramelized banana slices and remaining bread slice, buttered side up. Cook sandwich until golden brown and crisp, turning halfway through, about 2-3 minutes total. Slice sandwich diagonally in half and top with powdered sugar, if using.

Easy Caramelized Bananas image

These are great for breakfast over pancakes, waffles, french toast, crepes, oatmeal, etc. Or serve with low fat ice cream and toasted macadamia nuts for dessert. You can use regular tub margarine or butter in place of the cooking spray. However, this will double the cooking time, and make for a crunchier stickier outside to your banana.

2 -3 bananas
4 -6 tablespoons granulated sugar (or more)
cooking spray (regular or butter flavor)

Steps:

  • Slice bananas into thick coins or lengthwise strips, depending on your preference.
  • Pour sugar onto a plate. Roll bananas in sugar, until completely coated.
  • Spray a medium size nonstick pan, and heat over medium high heat. Add bananas and sugar.
  • Cook bananas until light to golden brown underneath, about 4-5 minutes (you can lift with a spatula or fork to peek). Be careful not to overcook or burn them (if you smell them browning, or see color in the pan, flip them right away). Keep in mind these times will vary, depending on your stove.
  • Gently flip bananas over to brown other side, turning heat down to medium. The second side will brown in about one minute.
  • Transfer to a plate that has been coated with cooking spray (otherwise they may stick - they are ooey gooey and sticky!) and serve. Alternately, slide them right onto your ice cream or breakfast food.
  • Soak pan in hot water to facilitate cleaning.
