CARAMELIZED BANANA WITH WHIPPED YOGURT
Steps:
- Bash the sesame seeds, pecans and almonds in a pestle and mortar and add to a frying pan over a medium-high heat and stir until toasted for 1 minute or so. Add 2 tablespoons maple syrup and stir to coat the nuts. Allow to cook for another minute.
- While the granola is toasting in the pan toss the bananas in the sugar and place onto another frying pan along with the butter. Fry for a minute on either side until caramelised and golden.
- In a medium bowl whisk the Greek yogurt with the remaining tablespoon of maple syrup and the seeds from the vanilla pod. Stir until fully incorporated.
- Spoon the yogurt into the base of a bowl, top with two banana slices per portion followed by the granola.

- Heat a nonstick saute pan over medium to low heat. Add the butter and brown sugar to melt. Place the banana halves in the pan and saute until the bananas caramelize, approximately 1 minute. Turn the bananas over and caramelize on other side. Remove the pan from the heat.
- Put the sugar, whipping cream, and vanilla extract in a metal bowl and whisk until firm peaks form.
- To serve, grate the dark chocolate on a plate. Sift the icing sugar over the prepared brownies and plate. Place the caramelized bananas on the plate and dollop the whipping cream mixture on the brownie.

- Increase heat and boil without stirring until syrup turns deep amber, occasionally brushing down sides of skillet with wet pastry brush and swirling skillet, about 7 minutes.
- Remove from heat.
- Add banana slices and stir gently to coat with caramel. Cool 5 minutes.
- Divide caramelized bananas among 4 shallow bowls.
- Top with scoop of frozen yogurt.
- Sprinkle with pecans and serve immediately.

What a wonderful and quick finish to any meal. Warm caramelized bananas spooned over melting vanilla ice cream or vanilla frozen yogurt, drizzled with hot chocolate sauce and sprinkled with toasted walnuts. Top it off with a maraschino cherry and you are all set. Note: If you don't have Kahlua you use the sub listed in the Kitchen Dictionary: 1/2 - 1 tsp chocolate extract + 1/2 - 1 tsp instant coffee dissolved in 2 tbsp water = 2 tbsp Kahlua.

- Peel and slice the bananas into 1/4 inch diagonal slices. Place cut bananas in a shallow dish and toss with lemon juice.
- Melt the butter and brown sugar in a heavy skillet and cook on medium high heat for one minute or until butter is melted. Stir in the bananas tossing to coat. When bananas are nicely glazed remove from heat.
- Place the chocolate chips and half-and-half in a microwave safe measuring cup. Microwave for 20 seconds, stir and microwave again for 10 to 20 seconds if needed. Stir until smooth. Add cinnamon Kahlua or Kahlua substitute.
- Place a scoop of vanilla ice cream in an ice cream dish, top with the warm bananas spooning any of the brown sugar glaze over each individual serving. Drizzle with chocolate sauce and sprinkle with toasted chopped walnuts. Garnish each with a maraschino cherries.

Steps:
- Peel and cut 2 bananas in half lengthways.
- Put them cutside up on a roasting tray and sprinkle the sugar over.
- "Blowtorch" or put them under a hot grill until the sugar has caramelized then leave to cool for a few minutes.
- Peel and mash the remaining bananas with a fork then mix with the lemon juice and honey.
- Whisk the creme fraiche or sour cream and yogurt together until smooth and thickened slightly.
- Fold in the crushed banana mixture and add half the crushed amaretti & chopped macadamia nuts.
- Put the caramelised bananas into 4 serving glasses (cut them in half if they're too long) and spoon the banana mixture over.
- Sprinkle with the remaining amaretti & macadamias and drizzle with a little more honey to serve.
