CARAMELIZED SALMON

Carmelizing isn't just for onions! This is a wonderfully delicious way of making salmon extra-special. Prep time includes marination.

1/4 cup basil, finely chopped
2 tablespoons finely grated fresh ginger
4 (7 ounce) salmon fillets, skinless and boneless
1/4 cup soy sauce
1/4 cup orange liqueur (Triple Sec)
2 tablespoons fresh grated orange rind
1 shallot, minced
3 tablespoons olive oil
1 teaspoon black pepper
1/4 cup sugar
1/4 cup brown sugar
1 tablespoon butter
1/4 cup marsala
orange slice

Steps:

  • Combine basil and ginger.
  • Coat the salmon fillets with basil/ginger mixture on both sides and refrigerate for at least 4 hours or overnight.
  • When ready to cook for serving, combine the soy sauce, orange liqueur, orange rind, and shallot in a bowl; set aside.
  • Heat olive oil in a skillet over medium-high heat.
  • Combine the black pepper and sugars in a shallow dish.
  • Press one side of the salmon fillets into the mixture, then sauté the fillet, sugar-side-down, to caramelize the sugars, for about 2 to 3 minutes.
  • Then quickly pour the soy mixture into the pan before the sugar burns, stirring to dissolve any caramelized bits floating around the pan.
  • Turn the fillets over and lower the heat to medium; cover the pan and cook for 5 to 8 minutes longer, until fillets are cooked through (they will be dark pink in the middle).
  • Remove fillets from skillet and place on serving platter; melt the butter in the pan then add the Marsala, stirring the bottom with a wooden spatula, and simmer for 3 minutes to deglaze the pan, then pour over the fillets.
  • Decorate with orange slices, serve, and enjoy!

Number Of Ingredients 4

Olive oil spray (from a spray bottle, not a store-bought, prefilled one that contains propellant; I used a Misto)
2 (4-ounce) skinless salmon fillets, preferably wild-caught
Sea salt and pepper, to taste
2/3 cup Easier-Than-Caramelized Onions (see page 225), reheated if necessary

Steps:

  • Preheat a grill to high.
  • Lightly mist both sides of each salmon fillet with spray. Season with salt and pepper. Lightly mist a large sheet of aluminum foil and place it directly on the grill rack, spray side up. Set the fillets side by side on the foil so they do not touch. Grill them until the salmon is cooked through, 2 to 4 minutes per side.
  • Transfer each fillet to a plate and top each with half the onions. Serve immediately.

  • Arrange the top oven rack close to the top of the oven near the broiler and turn on the broiler. Spread the olive oil (1 tablespoon) on the center of a rimmed baking sheet (across enough surface area for the size of the salmon).
  • Place the salmon skin side up on a rimmed baking sheet on top of the oil. and season the skin side with 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper. Flip over so the skin side is down. Season the top with the remaining 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper.
  • Brush the top of the salmon with about a third, or 2 tablespoons, of the bbq sauce (don't bother getting a measuring spoon dirty- just approximate this, and lay it on thick). Broil on the top oven rack for about 3 minutes, and brush the top with more bbq sauce. Broil for 3 more minutes, brush with bbq sauce, and again after 3-4 more minutes (for a total of 10 minutes). Continue broiling if necessary for a few more minutes until salmon is fully cooked (you can check it by seeing if it flakes apart easily with a fork or the internal temperature is 145 degrees F).
