A delightful pizza, Caramelized Onion with Brie Pizza!

Number Of Ingredients 7

1/2 recipe for Homemade Pizza Dough
2 - 3 Tbls Fig Preserves, per pizza
2 - 3 oz creamy Brie Cheese, or to taste
1 medium Vidalia (sweet) Onion, sliced
1 Tbls Olive Oil
Several sprigs fresh Thyme, leaves picked
Black Pepper, to taste

Steps:

  • Prepare the Homemade Pizza Dough according to directions.
  • Preheat Oven to 425°F.
  • Roll out on a lightly floured surface until about 1/8 - 1/4 inch thick, allow to rest about a minute. Then place on pizza stone or baking sheet.
  • In a large skillet, heat the Olive Oil over medium high heat. Add the sliced Onions and saute for 5 - 8 minutes or until the onions are translucent. Set aside.
  • Spread the Fig Preserves over pizza base, leaving a border around the edge. Top with the sauteed Onions, add "pinches" of the creamy Brie cheese all over. Sprinkle on the fresh Thyme leaves and Black Pepper, to taste.
  • Bake in the 425°F pre-heated oven for 8 - 10 minutes or until cheese is melted and pizza crust is started to turn golden.
  • Garnish with additional fresh Thyme, if desired.

A rich, lavish take on pizza made with brie cheese, caramelized onions and slivered almonds. It is creamy, crunchy and quite a treat!

½ wheel of brie cheese
1 ball of pizza dough
1 tbsp of olive oil
½ cup of red onion, sliced
½ cup of white onion, sliced
1 tbsp of brown sugar
¼ cup of almonds, slivered

Steps:

  • Heat the oven to 375°F.
  • Flour a counter or other surface and spread out the pizza dough. (You can use homemade or store bought dough, either whole wheat or white. Its up to you!) Use your hands and/or a rolling pin to stretch and flatten the dough until it is as thin as you like. (But this kind of pizza is best on thin crust.) Use a docker, if you have one, to get rid of any air bubbles. Now, spread your dough on a baking tray and place it in the oven for about 10 minutes.
  • While the dough is baking, place the olive oil and onions in a pan over low heat and cook for a few minutes. Then, add the brown sugar and cook for a few more minutes or until the onions are clear and beginning to brown. Then toss in the almonds and cook for just a few minutes longer. Remove from heat.
  • Now, slice the brie into large circles and set aside.
  • Once the dough is close to being cooked, remove it from the oven. Place the brie on top of the pizza dough and then the onions and the almonds. Place the pizza back in the oven for another ten to 15 minutes or until the crust is crispy and light brown.

1 1/2 cups water, lukewarm
3 1/4 cups unbleached all-purpose flour
1 cup semolina flour
1/4 cup olive oil
1 tablespoon baking powder
2 teaspoons instant yeast
1 1/2 teaspoons salt
2 teaspoons vegetable oil
4 large yellow onions, about 2 pounds peeled and thinly sliced (about 7 cups)
14 ounces brie cheese, rind removed, cut into cubes
1/4 teaspoon black pepper, to taste
1/2 cup sliced almonds

Steps:

  • CRUST:.
  • Mix and knead dough ingredients to make a smooth, shiny and just slightly sticky doug.
  • Allow dough to rise, covered, while you make the topping.
  • TOPPING:.
  • In large skillet, heat oil.
  • add onions and cook, stirring often, until translucent and browning on edges.
  • Add vinegar, sugar and salt and cook until evenly browned and all liquid is evaporated.
  • Remove from heat and set aside to cool.
  • Place pizza stone in middle of oven and preheat to 425.
  • Divide dough in half, pat and roll into two 12" pizzas on two semolina dusted pieces of parchment paper.
  • Cover each dough with a layer of onions, then scatter the Brie.
  • Grind a sprinkling of fresh pepper over top and scatter with almonds.
  • Bake for 15 to 18 minutes, until crust is brown.
  • For thicker crust, let the pizzas rise for 30 to 60 minutes before baking.
  • Serve hot or at room temperature.

1 head garlic
1 teaspoon extra virgin olive oil
2 large onions, thinly sliced
4 ounces sliced mushrooms

1/4-1/2 teaspoon pepper
2 teaspoons sugar
red pepper flakes (can add more if you like it hotter)

Steps:

  • To roast garlic:.
  • Preheat oven to 400 degrees.
  • Cut off the bottom of the garlic and drizzle with 1 tsp EVOO.
  • Wrap in foil and roast about 45-50 minutes are until golden.

  • Preheat a large pot (preferably cast iron) on medium high heat.
  • Melt butter and 2 Tb EVOO.
  • Add sliced onions, salt, and pepper. Cook until onions become tender. Then add the sugar. Continue cooking until the onions become golden brown (about 30 or more minutes). Make sure you stir the onions often.
  • Meanwhile saute the sliced mushrooms.
  • Pizza:.
  • Preheat oven to 400 degrees.
  • Drizzle crust with a little EVOO.
  • Mash roasted garlic into a paste and spread on crust.
  • Scatter carmelized onions and mushrooms on top.
  • Sprinkle red pepper flakes (be careful not to add too much).
  • Top with sliced Brie and bake about 10-12 minutes.
