CARAMELIZED ONION, MUSHROOM AND SPINACH SANDWICH

2 tbsp unsalted butter
2 tbsp olive oil
2 large onions (thinly sliced)
Salt and pepper (to taste)
8 oz (3 cups) sliced button mushrooms
4 cups baby spinach
¼ cup crumbled feta cheese
8 slices of your favorite bread

Steps:

  • In a large frying pan, heat 1 tablespoon butter and 1 tablespoon oil over medium heat. Add onions and stir to coat with the butter and oil mixture. Spread the onions out evenly over the pan and let onions cook slowly, stirring occasionally, for 10 minutes. Turn heat up to medium high and begin to brown the onions, stirring constantly about 7 more minutes. Season with salt and pepper. Transfer caramelized onions onto a plate and set aside.
  • In another pan, heat the remaining butter and oil over medium-high heat. Add the mushrooms and sauté for 5 to 7 minutes or until liquid has evaporated and mushrooms are tender and lightly browned. Add spinach and stir until lightly wilted. Season with salt and pepper to taste.

1 Medium onion
3-4 Garlic cloves, grated
2 Cups sliced mushrooms
2 Cups Spinach
2 Teaspoons oil
½ Teaspoon oregano
Salt and pepper to taste
Shredded Cheese (Use vegan if required)
Whole grain bread (Use Gluten free if required)

Steps:

  • Step 1 Chop onion, mushroom, spinach and grate garlic.
  • Step 2 Heat oil in large frying pan and add onion, garlic, and sauté for 5 minutes.
  • Step 3 Add sliced mushroom and cook until soft about 5-7 minutes.
  • Step 4 Now add chopped spinach and all the seasoning, salt, pepper and oregano. Cook the mixture for 2 minutes.
  • Step 5 Mushroom does release water while cooking. To dry out the water on cook the mixture on medium-high flame for couple of minutes.
  • Step 6 Spread the mixture on one slice of bread, then add cheese. Close it with second bread.
  • Step 7 Toast this sandwich over the stove on a non-stick skillet. You can use sandwich maker or panini maker as well.
  • Step 8 You can spread mayo on bread as well.

  • Heat 1 tablespoon olive oil on high heat in a large skillet, when oil is heated, add sliced onions and cook on high heat for about 10 minutes, constantly stirring with spatula. The onions should start to brown, but without burning (a couple of onions may be burnt here and there, but overall they should not be charred).
  • After you have started cooking onions, heat 1 tablespoon olive oil in another pan, and add sliced mushrooms (I used shiitake with stems removed, you can use any small sized mushrooms) and minced garlic. Add just a pinch of salt. Reduce heat to medium-low and cook mushrooms and garilc covered for about 20 minutes, occasionally stirring.
  • Add heavy cream, milk, Parmesan cheese and 1/4 teaspoon salt to the mushroom-onions-spinach mixture on medium-low heat and mix. Stir to coat on low heat for about 5-10 minutes until Parmesan cheese melts and starts to coat the vegetables.
