Carb Free Cloud Bread image

These are a delicious home-made bread replacement that is practically carb free and very high in protein. They are just like heaven so I call them clouds.

Number Of Ingredients 4

3 eggs, separated
3 tablespoons whole milk cottage cheese or 3 tablespoons cream cheese
1/4 teaspoon cream of tartar
1 (1 g) packet artificial sweetener

Steps:

  • Preheat oven to 300 degrees.
  • Separate the eggs very carefully, there must be no yolk in the white.
  • In one bowl, mix together the egg yolks, the 3 T. of Cottage Cheese OR Cream Cheese and the one packet of Sweetener until smooth.
  • In the other bowl add 1/4 teaspoon of Cream of Tartar to the whites and beat the whites on high speed until they are fluffy and form nice peaks.
  • Very carefully fold the egg yolk mixture into the egg whites until mixed, but try and not break down the fluffiness of the egg whites too much.
  • Spray two cookie sheets with Pam or other fat-free cooking spray.
  • With a large spoon, "scoop" the mixture into 10 even rounds on the sheets (about the size of the top-half of the McDonalds hamburger bun; roughly 3/4 inch thick and 4 to 5 inches across).
  • Bake on the middle rack. Here is when you have to watch them, because the cooking time is not the same on any two batches. It is somewhere around 1/2 hour, but it could be less or more. You just need to watch them until them become nice and golden brown (again, the color of a McDonalds bun).
  • Remove from the pans and cool on a rack or cutting board.
  • While warm they are crumbly and similar to cooked meringue - but don't let this fool you! Once completely cool, seal them in a ziplock storage baggie or a tupperware over night. They will totally change their consistency, to something much more like bread - a softer texture that is nice and chewy. If you do not like softer chewy bread, then eat them as they are, nice and crisp.
  • Since the sides that were facing the pan are perfectly flat, you use these to spread things on, or make sandwiches, or even as a burger bun! The choice is up to you, and you will be quite amazed at how much like a bun these really are!

Steps:

  • Preheat the oven to 300 degrees F (149 degrees C). Line a baking sheet with parchment paper and grease lightly.
  • In a large bowl, use an electric mixer to beat the egg whites and cream of tartar until stiff peaks form.
  • In a second large bowl, use the mixer to beat the mascarpone, egg yolks, and sea salt until smooth.
  • Carefully and gradually fold the egg whites into the mascarpone mixture with a spatula. Use a folding motion to incorporate, without breaking down the air bubbles in the egg whites.
  • Scoop the mixture into six circular discs onto the parchment paper. Bake 25-35 minutes, until golden.

3 eggs (separated)
3 tbsp cream cheese (softened)
1/4 tsp cream of tartar
1/4 tsp salt

Steps:

  • Preheat oven to 300°F. Line two baking sheets with parchment paper.
  • In a large bowl, whisk together the egg yolks, cheese and salt until smooth.
  • In a bowl of a stand mixer, add the cream of tartar with the egg whites and beat on high speed until the egg whites form stiff peaks. You should be able to turn the bowl upside down without the egg whites falling out.
  • Very carefully fold the egg yolk mixture into the egg whites until mixed and no egg white streaks remain. Be careful to use a gentle folding motion and don't try using the mixer because you do not want to remove the air whipped in by the egg whites, otherwise the breads will collapse
  • With a large spoon, divide mixture into 12 even circles on the prepared baking sheets (6 per sheet). Bake on the middle rack about 25 minutes or until surface turns a golden brown. Place breads onto wire rack to cool.
  • Once they are completely cool, seal them in a ziplock bag or a Tupperware container overnight on the counter. The breads will change texture overnight and become very soft and bread-like.

No carb, gluten-free, and full of fluffy texture, this cloud bread is going to blow your taste buds. Also, the perfect substitute for bread.

3 eggs, whites and yolks separated
3 tablespoons room temperature, full-fat, cream cheese
2-3 drops liquid stevia, optional
1/4 teaspoon cream of tartar

Steps:

  • Preheat the oven to 300F and line two baking sheets with parchment paper or a silicone mat.
  • In one bowl, combine the egg yolks with the softened cream cheese and stevia until you have a smooth batter.
  • In a large bowl or the bowl of your stand mixer, place egg whites and cream of tartar. Whisk the egg whites on medium speed, moving up to high speed until they are fluffy and stiff peaks have formed.
  • With a rubber spatula, gently fold the egg yolk mixture into the egg whites until combined.
  • Scoop the mixture onto the baking sheets with a spoon and shape them into 3/4-inch thick, 4-inch rounds.
  • Bake approximately for 30 minutes, until they are golden. *NOTE that cooking times will vary as this is a very delicate recipe and all ovens vary slightly. Check for doneness without opening the oven door around minute 22.
  • Once done, remove from the oven and allow them to cool down completely.
  • Transfer them to a zip bag for storage and refrigerate (see notes).

  • In the bowl of egg whites, add cream of tartar and salt. Using a hand mixer, mix together at high speed until stiff peaks form.
  • Pouring slowly, use a spatula or spoon to add yolk mixture to egg whites and carefully fold in until there are no white streaks.
  • Spoon mixture onto prepared baking sheet about ½ to ¾ inches tall and about 5 inches apart.
  • Bake in the oven on middle rack for 30 minutes, until tops are lightly golden brown.
  • Allow to cool (they will likely be too crumbly directly out of the oven) and enjoy.
