JAMAICAN CURRY CHICKEN RECIPE

Jamaican curry chicken, try this simple, easy to make recipe.

Number Of Ingredients 16

2½ lbs Chicken
2 tbsp Curry powder
2 tbsp All-purpose or Chicken seasoning
1 ½ tsp Salt (Or salt to your liking)
5 Pimento berries (allspice)
3 Cloves garlic (Crushed )
1 Medium onion (Chopped)
3 Sprig of fresh thyme
2 Medium carrots (Chopped)
1 Small potato (Diced)
1 ½ tsp Freshly grated ginger
1 Small scotch bonnet pepper (seeds removed and findly chopped)
3 tbsp Cooking oil
Boiling water
1 lime/lemon (To wash the chicken)
1 tsp Vinegar (To wash the chicken)

Steps:

  • Remove the skin (if there is any) from the chicken and cut it into small pieces. Wash the chicken in water with the juice from the lime/lemon and the vinegar. Drain away all the excess water from the chicken. Dry with kitchen towel if necessary.
  • In a kitchen bowl, add the chicken, onion, garlic, scotch bonnet pepper, pimento berries, ginger, salt, all-purpose seasoning, the curry powder and mix everything together and leave to marinate for 30 minutes or more.
  • In a pot add the cooking oil and put to hot on medium heat.
  • Add the seasoned chicken to the oil and stir well. Let the chicken cook until lightly brown on all sides. Don't let the pot burn, add a tip of water if necessary.
  • Stir in the carrot, potato and thyme. Add water enough to cover the chicken in the pot. Cover and leave to cook for 25-30 minutes, until the chicken is cooked and the water is reduced to a curry gravy.

3 tablespoons ground turmeric
2 tablespoons whole coriander seeds (or use 2-1/2 tablespoons ground)
2 tablespoons whole yellow mustard seeds (or use 2-1/2 tablespoons ground)
1 teaspoon whole fenugreek seeds (or use ½ teaspoon ground fenugreek)
1 tablespoon whole allspice berries (or use 1 tablespoon ground allspice)
2 teaspoons whole cumin seeds (or use 2-1/2 teaspoons ground cumin)
2 teaspoons ground ginger
1 teaspoon black peppercorns (or use 1-1/2 teaspoons ground black pepper)
¼ teaspoon Scotch Bonnet powder (optional, for heat, or use cayenne or other spicy chili powder - or add more to taste!)
1 tablespoon whole anise seeds (or use 1 tablespoon ground anise (optional))
1 dried clove (or use ¼ teaspoon ground)
¼ teaspoon ground nutmeg
1/2 teaspoon Salt (or to taste)

Steps:

  • Toast the Seeds/Grains. If you are using seeds/grains, lightly toast them in a hot dry pan on medium-low heat for 2-3 minutes, stirring a bit, until they become nicely fragrant. Do not let them burn or you will get a bitter flavor.
  • Grind in a spice grinder or with a mortar and pestle along with the other ingredients. Mix well.
  • For Ground Ingredients Only. Simply mix all of the spices together until well incorporated.
  • Store in an airtight container in a cool, dark place for 3 months. Will last longer, but will begin to lose potency.

1 tablespoon coriander seed
1 tablespoon poppy seed
1 tablespoon mustard seeds (brown are preferred)
1 tablespoon whole cloves
1 tablespoon peppercorn
2 tablespoons ground turmeric
1 tablespoon ground ginger (Jamaican if available)

Steps:

  • Add the cumin, coriander, poppy and mustard seeds to a nonstick pan, toast them over medium heat until the mustard seeds start to jump about.
  • Add the cloves and pepper and mix.
  • Remove from heat and grind the mixture either with a mortar or a food processor/blender.
  • When finely ground, mix well with the tumeric and ginger.
  • Put the mixture through a fine sieve and store in a covered glass jar.

Diced Chicken or chicken alternative (quorn)
3 potatoes chopped into cubes
Baby carrots
1 onion (chopped)
3 garlic cloves (minced)
1tsp ginger
1 scotch bonnet
4tbsp Caribbean curry powder
1 Cup Stock
400ml coconut milk
1tsp salt
1tsp pepper
1 tbsp Oil
2 sprigs Of thyme
Chopped baby corn
Chopped long green beans

Steps:

  • Heat the canola oil over medium heat in a saucepan.
  • Add onions, garlic and ginger; cook, stirring for about 5 minutes. Add the curry powder, stir and continue to cook until the curry turns a dark golden colour (about 1 minute).

  • Add the chicken, salt and black pepper. Stir and continue to cook for about 10 minutes.

  • Serve with rice and beans.

You can also use powdered versions of any of the ingredients, but for better flavor use whole seed. For authentic Jamaican flavor, you will usually add Scotch Bonnet or Habanero peppers to your recipes. However, if you want to add heat directly to the powder, add 2-4 tablespoons cayenne powder to the mix, depending on your taste.

Steps:

  • Combine the coriander seeds, cumin seeds, mustard seeds, anise seeds, fenugreek seeds, and allspice berries in a skillet. Toast over medium heat until the color of the spices slightly darkens, and the spices are very fragrant, about 10 minutes. Remove the spices from the skillet, and allow to cool to room temperature. Grind the spices with the turmeric in a spice grinder. Store in an airtight container at room temperature.
