¼ tsp ground allspice
¼ tsp ground cinnamon
⅛ tsp kosher salt

2 Tbsp sugar
1 Tbsp white rum
½ cup crumbled gingersnap cookies

ROASTED PINEAPPLE CARPACCIO

Roasted Pineapple Carpaccio image

This has been a signature dessert at Tru since we opened and is such a perfect light ending to a meal that stays on and on. All the parts can be done ahead of time and assembled at the last minute when you're ready to serve, which is how restaurants do it, with so much variety on the menu. I love this method for opening a fresh coconut and sure wish I'd known it when I was on Ready...Set...Cook and was dealt a fresh coconut as one of my ingredients! I ended up using my wooden clog to try to break it open!

Provided by Food Network

Categories     dessert

Time 2h35m

Yield 10 to 18 servings

Number Of Ingredients 26

1 pineapple
1 1/4 cups butter
1 3/4 cups organic light brown muscavado sugar
1 vanilla bean, split
1 cup simple syrup (equal amounts sugar and water heated until sugar dissolves. Cool)
1/4 cup coconut milk
1/2 teaspoon fresh ginger, grated
1 1/2 teaspoon cilantro leaves, chopped
2 cups sugar
1/2 cup water
2 tablespoons butter
1 cup macadamia nuts, toasted, cooled, and chopped
*1 egg white
1/4 cup sugar
12 cilantro leaves
1 pound unsalted butter, room temperature
1 cup sugar
1 teaspoon dark rum
1/2 teaspoon vanilla extract
1 1/2 cups fine coconut, toasted
3 1/2 cups all-purpose flour
1/2 teaspoon salt
1 coconut
Simple syrup, as needed
Fresh ground black pepper
1 pint lime sherbet

Steps:

  • For the Pineapple: Peel the pineapple and leave whole. In a saute pan, melt the butter and add the brown sugar and vanilla beans. Cook to caramelize the sugar; then place the pineapple in and cook on all sides until brown. Add some water to the pan and continue cooking, turning the pineapple with tongs and basting occasionally until cooked through to the core. It may take 1 hour or more. Chill, then slice thin on an electric slicer set on #12 or slice thinly by hand.
  • For the Coconut Cilantro Dressing: Whisk the ingredients together and chill.
  • For the Macadamia Nut Brittle: In a saucepan, boil the sugar and water together to make a caramel. Test the color of the caramel on a white plate--you're looking for a topaz color. Turn off the heat and stir in the butter with a wooden spoon then stir in the nuts. Pour onto a silicone baking mat and let cool. Chop and keep in an airtight container.
  • For the Crystallized Cilantro Leaves: Place egg white in a small bowl and whisk it slightly to break it up a bit. Dip the individual leaves in the egg white and wipe them off on the edge of the bowl to remove any excess. Dip into granulated sugar on both sides. Let dry.
  • For the Coconut Butter Cookies: In a mixer with a paddle attachment, whip the butter until very light and fluffy, warming the bottom of the bowl with a torch if needed. Add the sugar and continue whipping; then add the rum and vanilla and mix. Toss together the coconut, flour, and salt; then add to the butter mixture and mix until blended.
  • Butter a small sheet pan and line it with plastic all the way up the sides. Spread the dough evenly into the pan, cover it with plastic and freeze. Cut into 2-inch strips and roll in flour. Wrap and freeze or cut into 1/8-inch bars and place on parchment lined sheet pan. Bake in a preheated 250 degree F. oven until crisp but barely any color, about 10 minutes. Let cool.
  • To make the Coconut Strips: Heat a whole coconut over a gas flame to slightly char all sides. Wrap it in a tea towel and whack it on the floor to break it open. Carefully pry the meat from the shell in as whole pieces as possible. With a vegetable peeler, peel off thin strips of the fresh coconut meat to end up with curves of fresh coconut. Store in simple syrup, chilled to cover.
  • To serve the dish: Place 5 to 7 slices of pineapple on a plate in a flower pattern, with 1 in the center, surrounded by the others. Brush the surface of all the slices with the coconut cilantro dressing. Cover the plate with plastic wrap and warm it in the microwave oven for about 1 minute. Remove the plastic wrap and sprinkle with freshly ground black pepper and macadamia nut brittle.
  • Place a quenelle of lime sherbet in the middle and drape coconut shavings in an X over the sherbet. Place 2 crystallized cilantro leaves on top. Serve with a side of coconut shortbread cookies using colorful origami paper under the cookies and stacking them in a criss-cross tower, like bruscetta with the carpaccio.

CARIBBEAN CHICKEN WITH PINEAPPLE-CILANTRO RICE

Caribbean Chicken with Pineapple-Cilantro Rice image

For something a little more light and fun, but still pretty easy.

Provided by KyleeJo06

Categories     World Cuisine Recipes     Latin American     Caribbean

Time 50m

Yield 4

Number Of Ingredients 16

1 tablespoon light brown sugar
1 teaspoon ground black pepper
1 teaspoon dried thyme
1 teaspoon ground cumin
1 teaspoon garlic salt
1 teaspoon paprika
½ teaspoon chili powder
½ teaspoon ground nutmeg
4 skinless, boneless chicken breast halves
1 cup uncooked white rice
1 ½ cups water
1 (8 ounce) can sliced pineapple in juice, drained - divided
2 tablespoons chopped fresh cilantro
1 teaspoon olive oil
1 pinch garlic salt
1 pinch ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix together the light brown sugar, 1 teaspoon of black pepper, thyme, cumin, 1 teaspoon of garlic salt, paprika, chili powder, and nutmeg in a bowl until thoroughly combined. Rub both sides of chicken breasts with the spice mixture, and place into a 9x9-inch baking dish. Sprinkle any remaining seasoning mix on top of chicken, if desired.
  • Bake in the preheated oven until the chicken is lightly browned, no longer pink inside, and the juices run clear, about 30 minutes. An instant-read meat thermometer inserted into the thickest part of a chicken breast should read at least 160 degrees F (70 degrees C).
  • While chicken is baking, bring the rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes.
  • Chop half the pineapple slices. Mix the chopped pineapple, cilantro, and olive oil into the cooked rice, and season to taste with a pinch or two of garlic salt and black pepper. Fluff the rice up with a fork, and transfer to a serving platter. Serve with the baked chicken, topped with remaining pineapple slices.

ROAST WHOLE PINEAPPLE WITH BLACK PEPPER & RUM

Roast whole pineapple with black pepper & rum image

Roasting a pineapple whole gives you the best of both worlds - the outside is hot and sticky, but the middle is juicy and sweet, making the perfect summer treat

Provided by Tom Kerridge

Categories     Dessert, Treat

Time 50m

Number Of Ingredients 6

100g light muscovado sugar
1 tsp chilli flakes , plus extra to serve
1 pineapple , peeled, top leaves left on
50g butter , cut into small pieces
160g can coconut cream
2 tbsp white rum

Steps:

  • Heat oven to 180C/160C fan/gas 4. Mix the sugar, chilli and 1 tsp cracked pepper in a large roasting tin. Roll the pineapple in the sugar, leave it laying in the excess and dot the top with the pieces of butter. Don't worry if they fall into the tin - they will all be used when basting.
  • Roast the pineapple for 30 mins, basting every 10 mins with the buttery juices, until sticky and golden. Remove the dish from the oven and leave to cool slightly.
  • While the pineapple is cooling, make the rum cream by whipping the coconut cream to soft peaks, then fold in the rum. Just before serving, baste the pineapple again, then bring to the table whole in the roasting tin, sprinkled with some extra chilli flakes. Carve into wedges or slices, and serve with any extra sauce from the tin and a large dollop of the cream.

COCONUT CUSTARD TART WITH ROASTED PINEAPPLE

Coconut custard tart with roasted pineapple image

This custard tart has a tropical twist with sunny Caribbean flavours. Bake it for your next dinner party and we guarantee your guests will go back for a second helping!

Provided by Cassie Best

Categories     Afternoon tea, Dessert, Treat

Time 2h10m

Yield Serves 10

Number Of Ingredients 14

300g plain flour , plus a little for dusting
150g cold butter , cut into small pieces
75g caster sugar
2 egg yolks , plus 1 beaten egg
400ml double cream
2 x 160ml cans coconut cream
3 eggs , plus 2 yolks
75g caster sugar
fresh nutmeg , finely grated
1 small pineapple
4 tbsp light brown soft sugar
2 tbsp rum (or use lime juice if serving to children)
fresh nutmeg , finely grated
small handful toasted coconut shavings , optional

Steps:

  • Rub the flour and butter together with your fingertips until the mixture looks like breadcrumbs. Add the sugar, egg yolks and 1-2 tbsp cold water, then mix until the dough starts to form clumps. Tip onto your work surface and knead a few times to bring any crumbs into the dough. Shape into a puck, wrap in cling film and chill for at least 30 mins.
  • Heat oven to 180C/160C fan/gas 4 and put a baking sheet on the middle shelf to warm up. Roll out the dough on a flour-dusted surface to line the base and sides of a 23cm round fluted tart tin. Drape it over a rolling pin and lift into the tin, keeping an overhang of about 1cm. Press into the corners, leaving no gaps. Save the pastry scraps.
  • Line the tart case with parchment and tip in baking beans or rice. Bake for 20-25 mins on the sheet, then remove the beans and parchment. Check for holes and patch them with the scraps. Put back in the oven for 5-10 mins to give it a nutty brown colour. Brush with the beaten egg and return to the oven for 2 more mins. While still warm, use a serrated knife to trim the pastry to the height of the tin. Leave to cool. Reduce oven to 140C/120C fan/gas 1.
  • Put the cream and coconut cream in a pan and heat until steaming. Meanwhile, whisk the whole eggs, yolks and sugar until pale. Pour the hot cream over the eggs, whisking until the sugar has dissolved. Pour through a sieve into a jug.
  • Put the tart case on the baking sheet in the oven, with the shelf pulled out. Pour in the custard, using up as much as you can. Sprinkle nutmeg over the top generously and bake for 50-55 mins until the custard is set with a little wobble when gently shaken. Leave to cool. Chill for at least two hours, or up to two days.
  • When ready to cook the pineapple, heat oven to 240C/220C fan/gas 8. Peel it using a knife to carve away the skin, then cut into four wedges and remove the core. Slice lengthways into long slivers. Arrange over a baking tray lined with parchment. Mix the sugar, rum (or lime juice) and a grating of nutmeg, then paint this over the pineapple. Bake for 10 mins, or until caramelised. Serve warm with the cold tart. We served ours on top with coconut shavings.
