KETO CHAFFLE BENEDICT RECIPE



Keto Chaffle Benedict Recipe image

This Keto Chaffle Benedict Recipe has decadent hollandaise sauce, nutritious liverwurst and comforting chaffles, topped with gooey poached eggs.

Number Of Ingredients 9

1 cup shredded cheese (mozzarella is best)
4 eggs (divided)
2 tablespoons lemon juice
2 egg yolks
10 tablespoons salted butter
1 teaspoon salt
¼ cup apple cider vinegar
4-6 slices Jones Braunschweiger Liverwurst slices
chopped parsley (optional)

Steps:

  • Preheat the waffle maker.
  • Pulse 2 eggs and shredded cheese in the blender until well combined.
  • Pour the batter in the blender.
  • Cook the waffle for 3-4 minutes until golden brown and they easily lift out of the machine.
  • Repeat until all the batter is used up and set the cooked waffles aside.
  • Put the lemon, egg yolks in the blender and mix until combined.
  • Melt the butter in a saucepan over low heat until fully liquid.
  • With the blender running on a low setting, very, very slowly add the butter to the egg yolk mixture in a thin stream until all used up.
  • After a minute or two an emulsion starts to form.
  • Make sure to keep the thin stream very steady and slow to avoid breaking the hollandaise.
  • When all the butter is added, the hollandaise should be medium thickness and ready to serve.
  • Set the sauce aside and move to poaching the eggs.
  • Fill a small saucepan ¾ of the way with water, add the salt and vinegar.
  • Place it over medium heat and bring to a rolling boil.
  • Use a whisk to get the water going in a swirling motion.
  • Drop the eggs into the water and let them cook for 3-4 minutes.
  • Use a slotted spoon to remove them and place on a paper towel to remove excess moisture.
  • Use a frying pan to heat up the braunschweiger for 1-2 minutes over medium heat to get it browned on both sides.
  • Assemble the dish placing the waffles on a plate, topped with braunshweiger, poached eggs, hollandaise sauce and fresh herbs, if using.
  • Serve and enjoy.

1/4 cup pork panko (crushed pork rinds)
1/4 cup parmesan cheese (grated)
1 tsp GrillMates Roasted Garlic & Herb seasoning
1 egg (beaten)

Steps:

  • Combine all the ingredients in a small bowl and mix until fully combined.
  • Using a small baking sheet, layer it with parchment paper or a silicone mat.
  • Pat the mixture into a small circle with wet hands or use a silicone spatula to shape the pizza crust.
  • Oven baking time: Bake at 350 degrees in oven for 10 minutes on each side.
  • Mini Dash Waffle maker: Divide the batter into 2 and cook each portion for a minimum of 4 minutes until it forms a crust (longer if you are using a large waffle iron)
  • Air fryer baking time: Bake at 300 degrees for 8 minutes on each side.
  • Remove the carnivore pizza crust and put keto friendly sauce of choice on with any toppings you choose. She used cooked Italian sausage and black olives
  • Top with 1/3 c mozzarella cheese.
  • Put back in the oven, air fryer or microwave just long enough to melt the cheese until it's golden brown. The oven or air fryer might take 3 to 4 minutes and the microwave may only take 1 minute.

Bacony Carnivore Womelettes image

Great topped with cinnamon butter and a drizzle of sugar-free pancake syrup. Also holds up really well for sandwiches.

Yield 2 womelettes

Number Of Ingredients 4

1 slice bacon, raw
1 egg, large
splash maple extract, if desired
hefty pinch of any spices or flavorings you'd like, as desired

Steps:

  • Put the bacon in a blender or food processor and turn it on.
  • Once the bacon is mostly ground up, put the egg and any seasonings down the chute and continue to run the machine until liquified and well-incorporated. This is your womelette slurry.
  • Heat your mini-waffle maker, as per its instructions.
  • Pour half the slurry in the waffle maker and put the lid on.
  • Cook until golden or to your desired level of doneness, about 3-5 minutes max.
  • Remove from the waffle maker and repeat steps 4 and 5 with the remaining slurry.
  • Enjoy warm however you like.
