5 tablespoons extra-virgin olive oil
3/4 pound baby carrots or large carrots cut into 4-by-1/2-inch sticks
6 medium leeks, white and light green parts only, sliced crosswise
Salt and freshly ground white pepper
7 thyme sprigs
2 bay leaves, preferably fresh
Four 6-ounce skinless halibut fillets, about 1 inch thick

Steps:

  • Preheat the oven to 375°. In a large, deep, ovenproof skillet, heat 3 tablespoons of the olive oil. Add the carrots and cook over moderately high heat, stirring, until lightly golden, about 3 minutes. Add 1/2 cup of water, cover and cook over moderate heat until the carrots are crisp-tender, about 5 minutes. Add the leeks and another 1/2 cup of water, then cover and cook, stirring occasionally, until the leeks begin to soften, about 5 minutes. Season the carrots and leeks with salt and white pepper and add the thyme and bay leaves to the skillet. Season the fish with salt and white pepper and arrange on top of the vegetables. Drizzle the fish with the remaining 2 tablespoons of oil. Cover the fish with parchment paper and close the skillet with a heavy lid. Transfer the skillet to the oven and bake the fish for 15 minutes, or until just cooked through. Discard the herbs. Transfer the fish to plates, spoon the vegetables and juices alongside and serve right away.

Halibut
1 tsp coriander seeds
1 tsp fennel seeds
1 tsp ground turmeric
Pinch of cayenne pepper
Two 6-oz/170-g Alaskan or Pacific halibut fillets
1 Sea salt
1 Freshly ground black pepper
2 tbsp extra-virgin olive oil
Carrots
2 small bunches orange, red, or yellow baby carrots, trimmed and peeled
2 tbsp extra-virgin olive oil
1 Sea salt
1 shallot, thinly sliced
Yogurt Sauce
3/4 tsp mustard seeds
3/4 cup/180 ml whole-milk yogurt
1 tsp extra-virgin olive oil
1/2 tsp grated fresh ginger
1 Sea salt
1 Freshly ground black pepper
2 tbsp coarsely chopped fresh parsley

Steps:

  • Prepare the halibut: Toast the coriander and fennel seeds in a medium frying pan over medium heat until fragrant, about 2 minutes. Remove from the heat and crush with a mortar and pestle, or transfer to a clean spice grinder. Grind to a fine powder. Add the turmeric and cayenne. Set aside 1/4 teaspoon of the spice blend; reserve the remaining spice blend.
  • Lay out your halibut on a baking sheet/tray and season with salt and pepper. Brush or drizzle with 1 tablespoon of the olive oil and rub the remaining spice mixture over the fish on both sides. Cover and refrigerate for 1 hour.
  • Prepare the carrots: While the fish rests, bring a large pot of salted water to a boil. Meanwhile, fill another bowl with ice and water to create an ice bath. When the water boils, add the carrots and cook until crisp-tender, about 2 minutes. Transfer them to the ice bath with a slotted spoon. Pull them out after about 2 minutes and set aside.
  • Make the yogurt sauce: Toast the mustard seeds in a pan the same way you did with the coriander and fennel seeds. Crush or grind and stir together with yogurt, olive oil, and grated ginger. Season with salt and pepper. Transfer to a small bowl.
  • When the table is set, heat a large nonstick frying pan over medium-high heat. Add the remaining 1 tablespoon olive oil and heat until shimmering. Add the halibut fillets to the pan and let cook untouched until they begin to release easily from the pan, about 4 minutes. Gently flip and cook the other side until the fish is just cooked through but still slightly translucent in the center. Remove the fish to the platter.
  • Heat the 2 tablespoons olive oil in another large skillet over medium-low heat. Add the carrots and toss to coat. Season with salt. Add the shallot and cook until just beginning to soften but still purple, about 2 minutes. Pull from the heat and transfer the carrots to a plate or platter. Add the 1/4 teaspoon reserved spice blend to the residual oil in the pan. Spoon the flavored oil over the carrots and finish with parsley.
  • Serve fish and carrots on 2 pretty plates with carrots. Drizzle with yogurt sauce or serve the sauce in a small bowl alongside.

2 leeks, well washed and cut into fine julienne strips
2 carrots, peeled and cut into fine julienne strips
2 halibut steaks
4 sprigs fresh dill
6 slices lemons
2 teaspoons olive oil
4 tablespoons dry white wine

Steps:

  • Preheat the oven to 400°F Cut out two large circles of baking parchment or greaseproof paper (the size of a large dinner plate). You want a few inches around the fish, so if you are using something other than halibut, work to that size. It can't be too big and if it's too small the fish won't steam properly.
  • Fold each paper in half, then in the centre of one side divide the ingredients between them. Pile up the leeks and carrots, add the fish, then the dill, lemon and seasoning. Scrunch up the sides of paper, then add the oil and wine.
  • Make a parcel by folding up the sides. Then put each parcel in a big piece of foil, scrunch it up to seal then place each on a baking sheet and bake for 20 minutes. Discard the foil and serve the parcels on large plates. Open and eat while piping hot.

4 medium potatoes (unpeeled)
1 -1 1/2 lb halibut
1 teaspoon salt
pepper
1/2 teaspoon sage
3 tablespoons butter
3 tablespoons flour
1 1/2 cups milk
1 lemon, juice and zest of
1/2 cup sour cream (I use low fat)
1/3 cup grated cheddar cheese

Steps:

  • Boil potatoes till done.
  • Peel and slice thinly.
  • Spread in the bottom of a 1 1/2 quart casserole that has been lightly treated with cooking spray.
  • Place Halibut in a saucepan with salt, pepper and sage.
  • Cover with boiling water. Simmer on medium 15 minutes.
  • Drain break in pieces and spread over potatoes.
  • Melt butter in a small saucepan.
  • Stir in flour and cook and stir a minute till flour looses its rawness.
  • Gradually whisk in milk (it must boil to thicken ).
  • When sauce has thickened add lemon juice, zest and sour cream, mix well.
  • Pour over fish and top with grated cheese.
  • Bake at 375° 10 - 15 minutes.

1/4 cup all-purpose flour
1/2 teaspoon salt
1/8 to 1/4 teaspoon white pepper
1-1/2 cups 2% milk
1 small green pepper, chopped
1 small onion, chopped
2 cups cubed cooked halibut (about 1 pound)
3 hard-boiled large eggs, chopped
1 jar (2 ounces) diced pimientos, drained
1/3 cup shredded cheddar cheese

Steps:

  • In a large saucepan, melt 4 tablespoons butter. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from heat; cover and set aside. , In a small skillet, saute green pepper and onion in remaining butter until tender. Stir into white sauce. Add the halibut, eggs and pimientos., Transfer to a greased 1-1/2-qt. baking dish. Sprinkle with cheese. Bake, uncovered, at 375° for 15-20 minutes or until bubbly.

1 tablespoon coriander seeds, plus more very coarsely chopped for serving
4 leeks, white and pale-green parts only, halved lengthwise, cut crosswise into 2" pieces
8 sprigs cilantro, cut into 2" pieces, plus leaves for serving
1 cup olive oil
1 lemon, thinly sliced, seeds removed
Kosher salt
1 3-pound skinless halibut fillet, halved lengthwise

Steps:

  • Preheat oven to 375°F. Coarsely grind 1 tablespoon coriander seeds in a spice mill or with a mortar and pestle. (Alternatively, you can coarsely chop with a knife.)
  • Toss leeks, cilantro sprigs, oil, half of lemon slices, and 2 teaspoons ground coriander in a large roasting pan; season with salt. Roast, tossing occasionally, until leeks are tender and starting to brown, 15-20 minutes. Remove roasting pan from oven and carefully pour infused oil into a large heatproof measuring cup.
  • Reduce oven temperature to 275°F. Season halibut with salt and arrange over leeks in roasting pan. Top with remaining lemon slices and ground coriander and pour infused oil over fish. Roast until halibut is just cooked through and starting to flake, 30-35 minutes.
  • Cut halibut into large pieces and serve with leeks and lemon topped with chopped coriander seeds and cilantro leaves.
  • Do ahead: Halibut can be roasted 1 hour ahead. Let cool and cover.
