Steps:
- In 4-quart nonstick Dutch oven, heat oil over medium heat. Add onions, garlic and chili powder; cook 2 to 3 minutes, stirring constantly, until onions are tender. Stir in tomatoes, water, rice, oregano, thyme, cumin and pepper sauce. Heat to boiling. Reduce heat; cover and simmer 20 minutes, stirring occasionally.
- Rinse okra under cold running water to separate; drain. Stir okra, fish and bell pepper into tomato mixture. Heat to boiling. Reduce heat; cover and simmer 5 to 10 minutes, stirring occasionally, until fish flakes easily with fork and okra is tender.

CATFISH AND BLACK BEAN STEW

Steps:
- Heat 2 teaspoons oil in large skillet over low heat. Add onion; cover and cook, stirring occasionally, for 7 minutes or until tender.
- Add green pepper, garlic, and 1 teaspoon oil; cover and cook, stirring occasionally, 5 minutes.
- Stir in beans, tomato, clam broth and oregano; cover and cook 5 minutes over moderate heat.
- Meanwhile, rub catfish with allspice, cloves and ground red pepper.
- Heat remaining tablespoon oil in second large skillet over high heat.
- Add fish; sauté on one side until fish has colored, about 3 minutes.
- Turn fish over and place, colored side up, on top of beans in first skillet.
- Cover and cook over moderate heat for 5 to 7 minutes or until fish is cooked through.

CATFISH AND OYSTER STEW
I like catfish and oysters so I tried them together. Great flavor! Goes well with saltines. Does not freeze well.

Steps:
- Mix flour, salt, and white pepper on a plate.
- Roll catfish cubes in flour mixture to coat and shake off excess.
- Heat butter in a large pot over medium-high heat until melted and bubbling.
- Stir in catfish; cook about 20 seconds per side.
- Stir red onion, sherry wine, oysters with liquid, and Worcestershire sauce into the catfish and butter; heat just to boiling, 5 to 7 minutes.
- Pour the cream into a small bowl. Ladle about 1/4 of the hot liquid from the pot into the cream; stir to heat the cream evenly. Pour the cream mixture back into the pot; stir. Continue cooking until heated through, being careful not to bring the mixture to a boil, another 5 to 7 minutes.
- Ladle into bowls; top with fresh parsley and black pepper to serve.

FRIED WHOLE CATFISH WITH SPICY BLACK BEAN SAUCE

- In a saucepan add oil, black bean, chili flakes, ginger and garlic and lightly sauté. Add in sugar, oyster sauce, clam juice and cornstarch roux to lightly thicken and keep warm.
- Take the whole catfish and clean inside and outside and with a chef knife make 3 slice along the side of the catfish about 2" apart and season with salt the inside and outside and cover the catfish with cornstarch and pat off extras cornstarch.
- In a wok halfway fill with oil over a high heat to 350° and place the catfish head first and lower catfish into the hot oil and deep fry to a golden brown and with a wok spatula of hot oil pour over the catfish. Place the cooked catfish onto a large serving platter and pour the spicy black bean sauce over the catfish.

CAROLINA CATFISH STEW
My take on a low-country staple. Got this from a family Thanksgiving meal in Dillon, SC years ago and have craved it ever since. I finally put it to reality. Hope you enjoy and share it with others.

Steps:
- Cut catfish fillets into 2-inch cubes. Put in a resealable plastic bag with 2 tablespoons olive oil and Cajun seasoning. Seal bag and shake until fish is thoroughly coated; place in the refrigerator while you prepare the stew.
- Preheat a large stockpot over high heat. Add butter and remaining 2 tablespoons oil. Add bacon, onion, bell pepper, and garlic; saute until onions are soft, 5 to 7 minutes.
- Reduce heat to medium. Add tomato juice, tomato sauce, and tomato puree, then stir in sugar, Italian seasoning, and cayenne. Add potatoes and corn and bring to a boil. Reduce heat and simmer, stirring frequently, until potatoes are tender, 20 to 30 minutes.
- Drop in catfish and simmer until fish is tender and cooked through, 20 to 30 minutes; make sure you don't break up the fish.
- To serve, season with hot sauce and Worcestershire.

SIZZLING CATFISH WITH BLACK BEAN-SOY SAUCE

- Preheat oven to 350°F. Using knife, make 6 diagonal slits on 1 side of each fish, spacing evenly and cutting to the bone. Insert 1 ginger slice into each slit. Turn fish over. Make 6 diagonal slits on second side of each fish; insert remaining sliced ginger. Sprinkle catfish with enough rice flour to coat on all sides.
- Heat 1 1/2 cups peanut oil in heavy large skillet over medium-high heat until thermometer registers 375°F. Gently slide 1 catfish into skillet and fry until golden and almost cooked through, about 5 minutes per side. Transfer to rimmed baking sheet. Repeat frying with second catfish.
- Bake catfish in oven until cooked through and opaque in center, about 10 minutes. Transfer to platter. Pour Black Bean-Soy Sauce over. Garnish platter with tomato, green onions and lime wedges. Serve immediately.
