Cauliflower and Roasted Corn Soup with Chanterelle Mushrooms image

The sweet core of the cauliflower can also be eaten. The last of the summer corn is in stores now; roasting the corn brings out its sweetness.

Number Of Ingredients 12

4 dried bay leaves
6 sprigs fresh thyme, plus more for garnish
2 ears fresh corn, kernels shaved from the cob
2 tablespoons unsalted butter
1 shallot, finely diced to yield about 2 teaspoons
2 cloves garlic, minced
1 medium onion, finely diced
4 ounces fresh chanterelle mushrooms, wiped clean, larger ones halved lengthwise
1 1/2 pounds cauliflower (1 to 2 heads), florets cut from stem, and stem cut into pieces
2 cans low-sodium chicken stock
1/8 teaspoon cayenne pepper
Salt

Steps:

  • Heat oven to 400 degrees. Make a bouquet garni by wrapping the bay leaves and the thyme sprigs in a piece of cheesecloth. Set aside. Place the kernels from 1 ear of corn in a baking pan, and roast until lightly browned, about 5 minutes. Remove from oven, and set aside.
  • Melt butter in a 4-quart saucepan over medium heat. Add shallots, garlic, and onion. Cook, stirring often, until translucent, about 4 minutes. Add mushrooms, and continue to cook until mushrooms begin to soften, about 4 minutes more. Using a slotted spoon, remove mushrooms from pan, and set aside.
  • Add unroasted corn kernels, cauliflower florets, cauliflower core, chicken stock, and bouquet garni to pan. Bring to boil. Reduce heat to low; simmer, covered, until cauliflower is tender and cauliflower core is cooked through, about 25 minutes.
  • Remove bouquet garni, and discard. Working in batches, puree the soup in the bowl of a food processor until smooth, returning pureed soup to a clean 4-quart saucepan. Heat soup over medium-low heat. Stir in the reserved mushrooms, roasted corn, and cayenne; salt to taste. If soup is too thick, stir in a few tablespoons of water. Heat, and serve immediately.

This is a lovely French version of cream of mushroom soup using chanterelles, which can be a bit pricey, so if you find wild ones while foraging, use them with this recipe! Serve with croutons or crostini.

8 ounces chanterelle mushrooms
4 tablespoons butter
2 cups diced shallot
salt and ground black pepper to taste
1 drizzle olive oil
4 cups chicken stock
½ cup half-and-half

Steps:

  • Rinse mushrooms and pat dry. Slice in half. Rinse off any bugs or dirt and chop.
  • Melt butter in a deep, heavy-bottomed pot over medium heat. Add shallots and cook until translucent, 3 to 5 minutes. Stir mushroom pieces into the shallots and toss in a generous pinch of salt to help draw out their juices. Add pepper. Drizzle with olive oil. Continue to cook until mushroom pieces shrink in size and brown slightly, about 5 minutes.
  • Pour chicken stock into the pot. Bring to a boil; reduce heat and simmer for 15 minutes. Remove from heat and let cool slightly, 10 to 20 minutes.
  • Ladle soup into a high-powered blender. Cover and hold lid down with a potholder; blend on high until pureed, 1 to 2 minutes. Add half-and-half and blend for 1 minute more. Return blended soup to the pot. Heat until warmed through, 5 to 10 minutes. Taste and adjust seasoning.

I got this recipe from Chef Jason Alley while taking a class on Southern Cooking on a cruise. I have made this at home several times and always LOVE it, posting it here not only to share but also so I don't lose the recipe again!

6 ears corn, kernals removed from cob
1 small sweet white onion
1/2 lb chanterelle mushroom, well cleaned
2 tablespoons unsalted butter
1/4 cup dry white wine
1 pint heavy cream
1 tablespoon minced chives

Steps:

  • Heat the butter in a saute pan over medium hest until it begins to froth.
  • Add onions and chanterelles, and cook untill the onion is translucent.
  • Deglaze the pan with the wine and reduce by half.
  • Add cream.
  • Reduce cream by half, add corn and cook 8-10 minutes.
  • Season ith salt and pepper, garnish with chives to serve.

This recipe is delicious and creamy without too much additional fat. You could easily replace the sour-cream with broth if you wanted. I find it makes a great meal on a fall night with some crusty bread and a salad:-)

4 cups vegetable broth
1 medium potato, chopped
1 large carrot, chopped
1 large cauliflower, cut into florets
1 large onion, chopped
4 garlic cloves
1 tablespoon butter
1/4 teaspoon red pepper flakes
1/4 cup sour cream
1 1/2 cups frozen corn
8 ounces mushrooms, sliced
1 tablespoon Dijon mustard
3 ounces cheddar cheese, grated
2 spring onions, finely diced
salt
pepper

Steps:

  • Place the broth, potato, carrot, cauliflower, onion and garlic cloves together in a medium soup pot. Bring to boil and cook for 15 minutes or until the potatoes and cauliflower are tender.
  • Place the vegetables along with some broth in a blender and puree until smooth. Do this in batches if need be to avoid splattering.
  • Put the pureed vegetables back in the pot and put on low heat.
  • Add the remaining ingredients except for the spring onions and cheddar and cook until the mushrooms are done.
  • When the mushrooms are tender add the green onions, salt and pepper to taste, stir, and then ladle into bowls and top with 1/2 oz of cheddar per bowl. Enjoy!
