CAULIFLOWER AND HAM CRUSTLESS QUICHE

- Preheat oven to 350 degrees F.
- Bring a large pot of salted water to a boil. Add cauliflower florets and cook until very crisp tender, about 1 minute. Drain in colander and rinse with cold water. Shake off excess liquid.
- Heat the oil in a large skillet, over medium-high heat. Add the ham and the onions and cook until lightly brown, about 6 minutes. Add cauliflower and parsley and set aside to cool slightly.
- Brush a 9-inch glass or ceramic pie pan with the soft butter and evenly sprinkle the bottom of the pan with the grated parmesan Place pan on a baking sheet. Whisk the half-and-half, eggs, egg yolks and flour in large glass measuring cup. Season with salt and pepper, to taste. Spread half the cauliflower mixture evenly in the pan, top with about half the cheese; repeat with remaining filling and cheese. Pour the custard over the fillings.
- Bake until the quiche is just set in the center, about 40 to 50 minutes. Cool on a rack before serving.
CAULIFLOWER AND SPINACH CRUSTLESS QUICHE
Welcome to the hearty and nutritious crustless veggie quiche! Starring: eggs, cauliflower, and spinach. In other words, a delicious vegetarian egg pie, which from the vegetarian point of view has it all. If you don't believe us, just give it a try. It won't take much.

Steps:
- Heat the olive oil in a saucepan over low heat. Add the onion and bell pepper. Cook and stir until tender.
- Add the cauliflower florets and stir them in. Season with salt and pepper. Stir in.
- Add the spinach, cover with the lid and cook for 8 minutes. Stir in and remove from heat.
- Add the eggs, egg whites, and skim milk to a bowl. Beat them until smooth using a hand mixer.
- Transfer the cooked veggies to an ovenproof bowl. Pour the beaten egg mixture on top. Bake for 20 minutes at 360⁰F/180⁰C.

CRUSTLESS SPINACH QUICHE

- Position a rack in the upper third of the oven, place a baking sheet on the rack and preheat to 450 degrees F. Lightly grease a 9-inch round or 8-inch square baking dish with olive oil.
- Pulse the gouda in a food processor until finely chopped. Add the spinach, whole eggs and egg whites, ricotta, flour and nutmeg and process until well combined, about 30 seconds. Add the scallions and pulse to mix.
- Pour the mixture into the prepared dish and sprinkle with the parmesan and paprika. Place the quiche on the preheated baking sheet and bake until the center is just set, 25 to 30 minutes.
- Drizzle the endive and walnuts lightly with olive oil and toss. Serve the quiche hot or at room temperature with the endive.

CRUSTLESS QUICHE WITH CAULIFLOWER AND HERBS
This quiche recipe is easy to make and very impressive! The fresh herbs add so much flavor to the recipe. Make sure to go light on the lavender... a little goes a long way. The star ingredient is the champagne cheddar cheese. There's a slightly nutty and fruity flavor that complements all the other flavors wonderfully.

- 1. Preheat Oven to 425 F.
- 2. Saute the cauliflower sliced in olive oil until tender; then set aside.
- 3. Saute the onions and celery until caramelized.
- 4. Stir in all the herbs and saute a minute or two more until they're wilted. Be sure to go light on the lavender, but don't leave it out. Too much lavender can ruin it, but just enough adds a lovely aromatic note.
- 5. Spread the onion-celery-herb mixture evenly in a quiche pan, then top with cooked cauliflower slices. Sprinkle with salt to taste.
- 6. Whip the eggs and coconut milk until smooth.
- 7. Pour egg mixture over the vegetables.
- 8. Top evenly with grated champagne cheddar. (I found this cheese at the grocery store. I'm sure there are several brands, but I used Deitz & Watson.)
- 9. Bake 25 to 30 minutes until golden on top.
- 10. Garnish with tomato slices and chives.
- 11. Sprinkle with sea salt flakes and serve immediately. (The sea salt flakes were a gift from my daughter that she got while in Paris a few years ago.)
CRUSTLESS SPINACH QUICHE

- In a large skillet, saute onion and mushrooms in oil until tender. Add spinach and ham; cook and stir until the excess moisture is evaporated. Cool slightly. Beat eggs; add cheese and mix well. This is a great quiche recipe - high in protein, which we need every day, especially as vegetarians. It is quick and relatively easy to make. All good cooks can adapt this recipe to their own requirements and availability of certain ingredients - but it tastes the best using the ones I have suggested here. If the ingredients are organic, they will be that much better.

- Preheat oven to 350 degrees F (175 degrees C).
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower; cover and steam until tender, 5 to 7 minutes. Cool to room temperature.
- Blend cauliflower, mushrooms, and green onions in a blender under chopped, yet still chunky.
- Separate egg yolks and egg whites into 2 separate bowls. Beat egg whites in a bowl using an electric mixer until medium peaks form.
- Combine half-and-half, butter, and flour together in a saucepan over low heat; cook and stir until white sauce is thickened, about 5 minutes. Cool slightly.
- Stir white sauce, Parmesan cheese, cauliflower mixture, egg yolks, turmeric, salt, pepper, and curry powder together in a bowl; gently fold in egg whites using a spatula or wide knife. Pour egg mixture into a glass baking dish. Sprinkle paprika over egg mixture.
- Bake in the preheated oven until golden brown and set in the middle, 30 to 35 minutes.

- Preheat oven to 400 degrees F (200 degrees C). Line a cookie sheet with foil.
- In a large bowl, whisk together mayonnaise and milk until smooth. Whisk in eggs. Layer spinach, cheese, and onion in pie shell, making several layers of each. Pour in egg mixture. Place quiche on prepared cookie sheet. Cover quiche with foil.
