CAULIFLOWER WITH DIJON SAUCE
Cauliflower, mayo, Dijon mustard, Cheddar cheese: simple and easy. The amounts may be adjusted depending on the size of your cauliflower. The cauliflower may even be left whole, just remove the core before cooking.

Steps:
- Place cauliflower florets in a large glass bowl or casserole dish, and cover with plastic wrap. Poke a few holes in the plastic with a knife. Cook in the microwave for 5 to 7 minutes, or until tender.
- In a cup or small bowl, stir together the mayonnaise, and Dijon mustard. Spread over the top of the cauliflower. Sprinkle shredded cheese over the top. Return to the microwave, and cook just until cheese has melted, about 2 minutes.

SUNNY'S EASY GRILLED CAULIFLOWER IN POP POP SAUCE
Pop Pop sauce is inspired by Bang Bang Shrimp sauce from Bonefish Grill. It's a little sweet, a little spicy, and plenty tasty.

- For the cauliflower: Preheat the oven or a grill for cooking over indirect heat to 400 degrees F.
- Lightly brush the oil on the cauliflower. (If roasting, cut into florets and place on a baking sheet lined with parchment paper or nonstick aluminum foil.) Sprinkle with salt, a few grinds of pepper and paprika, if using.
- Place the cauliflower stem-side down over the indirect heat and grill until golden and tender when pierced with a fork or the tip of a knife, about 40 minutes. (If roasting, roast until the cauliflower is golden in parts, 20 to 25 minutes.)
- Meanwhile, make the sauce: In a medium bowl, add the mayonnaise, chile sauce, honey and sriracha and whisk until smooth. Taste and season with salt and a few grinds of pepper.
- Cut the cauliflower unto large florets and add to a large bowl. Drizzle the sauce over the cauliflower and toss to coat evenly. Transfer to a platter. Sprinkle with the scallions, spritz with lemon wedges, and serve hot, warm or chilled.
PRUDHOMME'S CAJUN CAULIFLOWER IN GARLIC SAUCE

- Steps: Bring 1 quart of water to a boil in a large pot.
- Blanch the cauliflower just until tender-crisp, about 3 minutes.
- Drain well and set aside.
- Place the butter in a large skillet over high heat.
- As soon as the butter begins to sizzle, add the garlic.
- Cook, stirring almost constantly, until the garlic is thoroughly coated with butter, about 30 seconds.
- Add the cauliflower and cook, stirring occasionally, just until the cauliflower is slightly browned, about 4 minutes.
- Remove from the heat, stir in the pepper sauce, cilantro and Cajun spice blend, and mix gently but thoroughly.
- Serve immediately.

CAULIFLOWER WITH PARSLEY-BUTTER SAUCE

- Break the cauliflower into large florets. Put them in a kettle and add cold water to cover and salt to taste. Add the milk and simmer for 12 to 15 minutes or until tender. Do not overcook. Drain well.
- Melt the butter in a skillet. Add the lemon juice and the florets. Add the parsley and pepper to taste. Cook, tossing, 1 minute. Serve at once.

- Combine scallions, garlic, parsley, anchovies, lemon juice, balsamic vinegar and olive oil in a food processor or blender and process until finely minced (do not make a smooth puree). Stir in the capers and transfer to a serving bowl.
- Steam cauliflower until crisp-tender, about five minutes. Season with salt and pepper and transfer to a serving dish. Serve the cauliflower warm or at room temperature with the green sauce on the side

- Preheat the oven to 425 degrees F (220 degrees C). Grease an 8x10-inch oval casserole dish.
- Bring a large pot of salted water to a boil. Add cauliflower florets and boil for 3 minutes. Drain.
- Cut the florets into slices and arrange in the baking dish. Scatter red bell pepper pieces on top.
- Melt butter in a large saucepan. Add flour and whisk to create a paste. Pour in half-and-half, stirring to incorporate. Add 3/4 cup Gruyère cheese and truffle salt. Pour cheese sauce over the cauliflower. Sprinkle remaining cheese and panko on top.
- Bake in the preheated oven until top is lightly browned, about 25 minutes.

- Wash cauliflower; remove leaves and cut out base and cut into large floweretts. Cook, covered in a small amount of boiling water, about 10 minutes or until tender; drain.
- Place cauliflower on a serving plate and keep warm.
- Melt butter in a saucepan over low heat; add flour, stirring until smooth. Gradually add milk; cook over medium heat, stirring constantly until thickened.
- Add pimento, onion, cheeses and salt, stir until the cheeses melt. Pour cheese mixture over the cauliflower and serve.
