QUICHE SUPREME
This quiche recipe is the best! It is easy to make and tastes SO delicious! Freezes well after it is baked. Use ham, bacon or sausage, or any combination thereof!

Steps:
- Preheat oven to 350 degrees F (175 degrees C) and pre-bake crusts for 10 minutes. Set aside to cool on racks.
- In a large skillet, saute green pepper, onion and mushrooms until onions are soft and translucent. Remove from heat and set aside.
- In a large bowl, mix eggs and cream together. Stir in the shredded Jack and Swiss cheese, chopped ham and sauteed vegetables. Stir in vinegar and season with tarragon, garlic powder, nutmeg, parsley, salt and pepper. Divide filling into the 2 baked pie crusts.
- Bake in the preheated oven for 55 to 60 minutes, or until filling is set and crusts are golden brown.

CELERY ROOT PUREE

- Place the celery root in a large pot and cover it with the milk by a few inches. (You may not need to use all the milk.) Add a few pinches of salt along with some freshly grated nutmeg. Bring to a gentle boil and simmer until the celery root is fork tender, 20 to 30 minutes. Drain, reserving about 1/4 cup milk, then return the celery root to the pot.
- Place the pot over medium heat and let the celery root dry out for a minute or 2. Add the reserved milk and mash or puree using a potato masher or blender until very smooth. Check for seasoning, adding more salt if necessary.

- Preheat oven to 375° F. Grease a shallow 1 1/2 -quart casserole. In a medium saucepan over medium heat bring water to a boil. Add celery cover and simmer for 7 to 10 minutes or until crisp-tender. Drain.Add drained water chestnuts and mushrooms. Stir in almonds set aside.In a large saucepan melt butter or margarine. Stir in flour. Cook and stir over medium heat for 1 to 2 minutes. Add broth or bouillon and half-and-half. Stirring over medium heat, bring to a boil and boil until thickened. Add salt and pepper to taste. Stir in celery mixture. Pour into casserole.In a small bowl combine bread crumbs and cheese. Sprinkle over top of celery mixture. Bake for 20 minutes or until hot and bubbly.

CELERY SUPREME

- Add celery pieces to 1 cup boiling salted water simmer for 10 minutes and drain. Combine drained celery with remaining ingredients except cheese. Turn into baking dish sprinkle with grated cheese. Bake in a preheated 350° F oven for 25 to 30 minutes or until bubbly and cheese is melted.Note: Be careful to cook celery until just barely tender-it should be slightly crisp in the finished dish.

- Preheat oven to 325°. In several Dutch ovens, saute celery and onions in butter. , Meanwhile, in several large bowls, combine bread, salt, sage, baking powder and pepper; toss to coat. Stir in celery mixture. Beat eggs and milk; add to bread mixture. , Divide half the chicken among four 13x9-in. greased baking dishes. Cover with half the bread mixture. Repeat layers. Pour broth into each dish. , Cover and bake 70 minutes or until hot and bubbly; uncover and bake 10-15 minutes longer. , For gravy, in a stockpot, combine soup and water. Bring to a boil. Reduce heat; simmer, uncovered, 10 minutes. Serve with chicken.

This recipe was found in an old cookbook passed down to me as an apartment warming gift years ago. I love it because it's the least amount of ingredients a huge amount of flavor. I always serve with my Barbecue Franks and a side of green beans. Enjoy!

- Place cut potatoes into greased 1-1/2 quart casserole dish.
- Add salt and pepper, margarine (I slice and lay evenly around dish), soup and water (I mix the condensed soup and water and then pour on top).
