2 teaspoons loose-leaf or 2 bags chamomile tea
1/2 cup sugar
1/3 cup lime juice (from 3 limes)
Lime wedges, for serving

Steps:

  • Brew tea in 2 cups boiling water 4 minutes; strain or remove bag. Let cool completely. Combine sugar and 1/2 cup water in a small saucepan. Bring to a boil, stirring until sugar is dissolved. Let cool completely, then combine with lime juice and tea in a pitcher. Refrigerate until ready to serve, up to 2 days. Serve over ice, garnished with lime wedges.

2 tablespoons Chamomile Simple Syrup, plus more to taste
Ice
8 ounces seltzer water
Thin lime slices or a fresh organic edible chamomile flower, for garnish

Steps:

  • Combine the lime juice and chamomile simple syrup in a large (16- to 18-ounce) tumbler and stir to combine. Taste and add more lime juice or syrup, if you'd like.
  • Fill with ice, top off with the seltzer and gently mix to combine. Garnish with lime slices, or an organic edible flower, if you are feeling extra fancy.

4 chamomile tea bags
1 orange, zest of, removed in strips with a vegetable peeler
1 lime, zest of, removed in strips with a vegetable peeler
1/4 cup fresh gingerroot, sliced peeled
3/4 cup sugar

Steps:

  • In a 4-quart saucepan bring all ingredients to a boil and simmer, covered, 15 minutes.
  • Remove pan from heat and cool mixture. Steep mixture, covered and chilled, at least 8 hours and up to 24.
  • Pour mixture through a fine sieve into a pitcher.
  • This tea keeps, covered and chilled, 1 week.
  • Serve in ice-filled tall glasses.

Steps:

  • Pour boiling water into a mug and add chai tea bags. Allow tea to steep for at least 5 minutes. Remove tea bags.
  • Combine lime juice and lime zest in a pitcher; add enough ice to fill pitcher halfway. Slowly pour chai tea over ice; stir. Add enough water to fill pitcher; stir in sugar.
