CHAMOY TAJíN CARAMEL APPLES RECIPE BY TASTY



Chamoy Tajín Caramel Apples Recipe by Tasty image

Bring in fall with some homemade caramel apples. Make your caramel dip, which comes together with less than five ingredients and can be stored and reheated on the stove. Then roll your apple in tajin for a spicy fun twist!

nonstick cooking spray, for greasing
1 cup water
2 cups sugar
2 cups heavy cream, warmed
½ teaspoon kosher salt
2 tablespoons chamoy
8 small green apples, washed, dried, and stems removed, room temperature
1 cup tajin seasoning
8 popsicle sticks
instant read thermometer

Steps:

  • Grease a baking sheet with nonstick spray.
  • Add the water and sugar to a medium saucepan. Cook over high heat, without stirring (so the mixture doesn't crystallize), for about 10 minutes, until the mixture begins to turn golden brown. Note: Use a larger pan than you think you need; the caramel will bubble up when you add the cream.
  • Reduce the heat to low. Slowly pour in a little bit of the heavy cream. The mixture will bubble. When it begins to recede, carefully whisk to incorporate the cream. Continue adding the cream in increments, stirring to incorporate.
  • Once the cream is incorporated, stir in the salt. Increase the heat to medium-high and cook for 10-12 minutes more, until the caramel reaches 250°F (120°C) on an instant read thermometer. Remove the pot from the heat and let the caramel cool for about 5 minutes.
  • Carefully transfer the caramel to a heatproof liquid measuring cup or a medium bowl. Stir in the chamoy.
  • Stick a popsicle stick though the top of each apple, about ⅔ of the way through.
  • Dip an apple into the caramel until completely coated. Lift the apple from the caramel and spin the stick for 20-30 seconds to remove excess caramel. Roll in the tajín seasoning, then set on the prepared baking sheet. Repeat with the remaining apples.
  • Serve the apples immediately, or let set at room temperature for 1 hour. Leftover caramel apples will keep, loosely covered, in the refrigerator for 2-3 days.
  • Enjoy!

Micheladas came from the words 'mi chela helada' which translates into 'my cold beer'. Micheladas originated in Mexico and now there are many different recipes. Dark beer, normally XX Cerveza is the norm in Mexico, but you can use any beer you like. This is a basic recipe with optional add-ons. With or without them, Micheladas are delicious. Garnish with a tamarind candy straw and additional lime wedges.

1 lime, juiced
1 teaspoon chile-lime seasoning (such as Tajin®), or more to taste
ice
½ cup tomato juice cocktail (such as Clamato®), chilled
1 tablespoon chamoy (Mexican chili fruit condiment)
1 teaspoon hot pepper sauce (such as Tapatio®)
1 teaspoon Worcestershire sauce
1 teaspoon soy sauce
¼ teaspoon cayenne pepper
1 (12 fluid ounce) can or bottle dark beer (such as Dos Equis XX Cerveza)

Steps:

  • Rub lime juice around the rim of a glass and dip in chile-lime seasoning. Fill with ice.
  • Combine tomato juice cocktail, chamoy, hot sauce, Worcestershire, soy sauce, and cayenne. Mix well and pour over ice. Fill the glass with beer.

Chamoy is a popular Mexican condiment equal parts hot sauce and candy made from chili peppers, citric acid, sugar, and salt. It's fantastic on fresh mango with a little pinch of Tajin seasoning, but you could also use it to make mangonada popsicles, smoothies, or snow cones.

3/4 cup water
3 dried ancho chili peppers
1 cup apricot jam (10 oz jar)
1/2 cup lime juice (from 4-5 large limes)
3 tbsp sugar
3/4 tsp salt

Steps:

  • Add the water to the blender. Wipe the chili peppers to remove any dust. Pull off the stem and shake out the seeds. Place the whole pepper in the blender along with the apricot jam, lime juice, sugar, and salt.
  • Blend on high speed until extremely smooth. Store in a sealed container in the refrigerator for up to 2 months. Use chamoy with fresh mangos for a fun snack.
