2 tablespoons butter
2 tablespoons plus 1-1/2 teaspoons brown sugar
1 tablespoon Dijon mustard
2 tablespoons minced fresh parsley

Steps:

  • In a large skillet, saute onions in butter until tender. Add brown sugar and mustard; cook 2 minutes longer. Sprinkle with parsley.

1 bag frozen pearl onions
1 tablespoon unsalted butter
1/2 cup heavy cream
Kosher salt and freshly ground black pepper

Steps:

  • Thaw pearl onions and then saute in butter until golden brown. Deglaze by adding a little water at a time. Finish with heavy cream and reduce until you achieve a smooth consistency. Season, to taste, with salt and pepper and serve immediately.

12 ounces pearl onions
1 cup heavy cream
2 bay leaves
1 tablespoon chopped flat-leaf parsley
1 garlic clove, smashed
1/2 teaspoon fresh grated nutmeg
Salt and pepper, to taste
1 cup goose stock or chicken broth

Steps:

  • Blanch the pearl onions by placing them into a large pot of rapidly boiling water. Cook them for about 1 minute. Remove the onions from the water with a strainer, then plunge into an ice bath to stop the cooking process. Drain them, then remove the skins.
  • Put the onions in a 3-quart saucepan and place over low-medium heat. Add the cream, bay leaves, parsley, garlic and nutmeg. Season with salt and pepper. Cover and let simmer for 10 minutes, stirring occasionally, until thickened. Then, remove the cover and add stock. Season again. Allow to cook down for 5 minutes to tighten up the cream sauce. Discard the garlic clove and bay leaves before serving.

  • Preheat oven to 450 degrees. If using fresh onions, soak them in warm water for 5 minutes to loosen skins; using a paring knife, cut off ends, and peel onions.
  • Toss onions with vinegar and oil on a foil-lined rimmed baking sheet; season with salt and pepper. Roast until onions are tender, 25 to 30 minutes, stirring 2 or 3 times and rotating baking sheet halfway through.

  • Melt the butter in a large skillet over medium heat. Add the onions and cook, stirring occasionally, until the onions begin to brown on all sides; about 10 - 12 minutes.
  • Add the brown sugar and gently stir in the mustard to make a smooth coating over the onions; add salt, pepper, and 1 tbsp parsley. Cook about 2 minutes longer.
  • Place into a serving bowl and sprinkle with remaining 1 tbsp parsley for garnish.

1 pound pearl onions
3 tablespoons butter
3 tablespoons all-purpose flour
1 pinch ground nutmeg
1 ½ cups light cream
½ teaspoon salt
ground black pepper to taste
2 tablespoons chopped fresh parsley

Steps:

  • Place onions into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 10 minutes. Drain.
  • Melt butter in a large skillet over medium heat; cook and stir flour and nutmeg in melted butter for about 5 minutes; season with salt and pepper. Add cream to flour mixture; cook and stir until bubbly and thick, about 5 minutes more. Stir onion and parsley into cream sauce until heated through, 2 to 3 minutes.

28 ¾ ounces frozen pearl onions
1 tablespoon olive oil
¼ teaspoon kosher salt
6 tablespoons unsalted butter
6 tablespoons all-purpose flour
3 cups milk
¾ cup chopped fresh parsley, or more to taste
¼ cup dry sherry
¾ teaspoon paprika
⅛ teaspoon ground cloves
salt and freshly ground black pepper to taste
3 tablespoons panko bread crumbs, or to taste

Steps:

  • Partially thaw onions for 10 minutes, then thinly slice crosswise into rounds. Set in a colander and let thaw completely. Drain and spread on a paper towel-lined tray. Pat dry with paper towels.
  • Heat oil in a large skillet over medium-high heat. Add onions and 1/4 teaspoon kosher salt; cook, stirring frequently, until liquid evaporates and onions are lightly browned and slightly crisp, about 10 minutes.
  • Melt butter in a saucepan over medium heat. Stir in flour until smooth; cook and stir until pale golden, about 30 seconds. Gradually whisk in milk. Increase heat to medium-high and cook, whisking frequently, until sauce is bubbling, thickened, and smooth, about 8 minutes. Add 3/4 cup parsley, sherry, paprika, cloves, and cooked onions; season to taste with salt and pepper. Transfer to 3 buttered 2-cup broiler-safe baking dishes or 1 buttered 2-quart baking dish.
  • Preheat the oven's broiler to high. Sprinkle panko evenly over onion mixture.
  • Broil 5 inches from heat source until panko is golden brown, 1 to 2 minutes. Watch closely to avoid burning panko. Garnish with more parsley.

1 package (14.4 ounces) frozen pearl onions, thawed and patted dry
10 garlic cloves, peeled
1/4 cup butter, melted
1/2 teaspoon minced fresh rosemary
1/4 teaspoon salt
Dash pepper
1/4 teaspoon minced fresh tarragon
Minced fresh parsley

Steps:

  • Preheat oven to 350°. In a bowl, combine onions and garlic cloves. Add butter, rosemary, salt and pepper; toss to combine. Transfer to a greased 15x10x1-in. baking pan. Bake 50-60 minutes or until onions golden brown, stirring occasionally., If desired, discard garlic before serving. Sprinkle tarragon and parsley over onions before serving.

This makes a fantastic side dish to a prime-rib beef roast or a pork roast dinner, or to any beef or pork dish! This will serve about 6 people but can easily be doubled. Use a large package of frozen pearl onions for this recipe, and also fresh pearl onions can be used, just blanch in boiling water, cool then peel.

9 cups frozen pearl onions
2 tablespoons olive oil
1 cup balsamic vinegar
1/2 cup water
1 teaspoon sugar (optional or to taste)
salt and pepper
1 -2 tablespoon butter

Steps:

  • In a large skillet heat oil over medium-high heat, then saute the onions until lightly browned (about 5-6 minutes).
  • Add in balsamic vinegar and water; simmer stirring occasionally until the onions are tender (about 12-15 minutes).
  • Transfer the onions to a bowl using a slotted spoon (reserve the liquid).
  • Simmer the reserved liquid until thick and syrupy and reduced to about 1/2 cup.
  • Season the liquid with salt and pepper and a little sugar if desired.
  • Transfer the onions back to the skillet and coat with the liquid.
  • Add in the butter, stirring and heat slightly until the butter has melted.
  • Transfer to a bowl.
  • Delicious.
