1 (8 ounce) can artichoke hearts, drained and finely chopped
1 cup seasoned bread crumbs
2 eggs
2 tablespoons olive oil
2 tablespoons grated parmesan cheese
1 tablespoon lemon juice
2 garlic cloves, minced
1/4 cup grated parmesan cheese

Steps:

  • Preheat oven to 350. In a medium bowl combine artichoke, bread crumbs, eggs, olive oil, 2 tablespoons Parmesan, lemon juice and garlic.
  • Form mixture into 24 small balls, 1 inch in diameter, and roll in remaining Parmesan cheese. Set on a lightly greased baking sheet.
  • Bake artichoke balls until eggs are set throughout and balls are heated through, about 10 minutes.

1/4 cup KRAFT Classic Ranch Dressing
1/2 tsp. garlic powder
1/4 tsp. onion powder
1/2 cup drained finely chopped canned artichoke hearts
1 cup KRAFT Mexican Style Finely Shredded Four Cheese
1 pkt. SHAKE 'N BAKE Seasoned Panko Seasoned Coating Mix

Steps:

  • Mix cream cheese, dressing and seasonings in medium bowl until blended. Stir in artichokes and cheese.
  • Refrigerate 15 min.
  • Empty coating mix into shallow dish. Shape cheese mixture into 16 balls, using about 2 Tbsp. for each. Add, in batches, to coating mix; roll to evenly coat.

I love keeping frozen vegetables handy in the refrigerator. We were invited to a friend's house and came up with these to bring. I had all of the ingredients. Enjoy! I made these, packed them up, and they vanished. I totally forgot to take a photo of the finished balls. Next time!

1 (10 ounce) package frozen spinach, thawed
1 tablespoon olive oil
1 (10 ounce) package frozen artichoke hearts, thawed
1 teaspoon kosher salt
½ teaspoon ground black pepper
1 small shallot, chopped
1 clove garlic, chopped
2 large eggs
½ cup tapioca flour
¼ cup almond meal
2 teaspoons Italian seasoning
¼ teaspoon red pepper flakes

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Wrap thawed spinach in a paper towel and squeeze out water.
  • Heat olive oil in a skillet over medium heat. Add spinach and artichoke hearts; season with kosher salt and black pepper. Cook and stir until heated through, 3 to 4 minutes. Add shallot and garlic; cook until softened, about 5 minutes more. Remove from heat and allow to cool slightly, about 5 minutes.
  • Transfer spinach mixture to a food processor; pulse until broken down into small pieces. Add eggs and pulse 3 to 4 more times. Transfer mixture to a bowl.
  • Mix tapioca flour, almond meal, Italian seasoning, and red pepper flakes into the spinach mixture until well combined. Use an ice cream scoop to portion the mixture onto the prepared baking sheet.
  • Bake in the preheated oven until golden brown, 12 to 15 minutes.

1 (8 ounce) jar marinated artichoke hearts, drained
3 garlic cloves
1 (4 ounce) container mushrooms, drained
2 teaspoons basil
1 cup breadcrumbs, plain & dry
1 cup breadcrumbs, plain & dry
1 cup romano cheese, freshly grated
1 cup parmesan cheese, freshly grated
2 dashes Tabasco sauce
2 eggs

Steps:

  • In a food processor or blender chop together artichoke hearts, garlic, and mushrooms.
  • Add remaining ingredients except the second cup of bread crumbs and mix well.
  • Remove the mixture to a bowl and chill until firm.
  • When ready to cook, form the mixture into walnut sized balls and roll them in the second cup of bread crumbs.
  • Bake in a preheated 375 degree F oven on greased baking sheets for 20 minutes or so. Serve while warm.
