CHARLESTON CHEWIES

4 tablespoons unsalted butter, plus additional softened butter for the baking dish
1 cup packed light brown sugar
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
1 large egg, lightly beaten
3/4 cup all-purpose flour
1 teaspoon baking powder
1/4 cup chopped pecans
Confectioners' sugar, for dusting

Steps:

  • Preheat the oven to 350 degrees F. Butter an 8-inch square baking dish.
  • Melt the butter in a small saucepan. Turn off the heat and let cool slightly, then add the brown sugar, almond and vanilla extract and stir until smooth. Stir in the egg.
  • Whisk together the flour and baking powder in a small bowl, then fold the mixture into the brown sugar mixture. Fold in the pecans. Pour the batter into the prepared baking dish and bake until set around the edges but still loose in the center, about 20 minutes. Let cool completely, then sift confectioners' sugar on top. Cut into 16 squares.

A curried meat custard that is served as a starter for a seafood meal. Served during the plantation era in the low country. I love to serve it in small ramekins for a unique surprise experience.

3 tablespoons butter
1 medium onion, finely chopped
1 tablespoon curry powder
1 1/2 cups veal or 1 1/2 cups pork
1 slice white bread, soaked in milk and squeezed dry
2 tablespoons chopped almonds
2 tablespoons fresh lemon juice
3 large eggs
1/2 teaspoon sugar
salt
1 cup half-and-half
1 dash white pepper
bay leaf

Steps:

  • Preheat oven to 300 degrees.
  • In a skillet, melt the butter over moderate heat, add the onion, and cook, stirring, till softened, 2 to 3 minutes.
  • Add the curry powder and cook, stirring 2 minutes longer.
  • Transfer the onions to a mixing bowl, add the meat, bread, almonds, lemon juice, one of the eggs, sugar, and the salt and blend thoughly.
  • Butter six 1/2 cup ramekins and divide the mix among them.
  • In another bowl, combine the remaining 2 eggs, half-and-half, and white pepper and whisk till blended well.
  • Pour into ramekins equal amounts.
  • Garnish tops with a bay leaf.
  • Bake until golden, about 25 minutes.
  • Serve hot.

I credit this recipe to a deceased friend who had a knack for creating great meals. This is my favorite way to eat halibut and great dish to serve with crusty bread and salad for a company-ready meal.

2 pounds halibut steak, 1 1/2-inch thickness
1 cup sour cream
½ cup chopped green onions
2 tablespoons butter, softened
½ teaspoon salt
¼ teaspoon ground white pepper
1 pinch dried dill weed
⅓ cup grated Parmesan cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Grease the inside of a 9x13-inch baking dish with butter.
  • Place halibut in the prepared baking dish.
  • Mix sour cream, green onions, butter, salt, white pepper, and dill in a bowl.
  • Spread sour cream mixture over halibut.
  • Bake halibut in preheated oven until fish flakes easily with a fork, 20 to 25 minutes.
  • Remove halibut from the oven and sprinkle with Parmesan cheese.
  • Place oven rack about 6 inches from broiler heat source and turn on oven's broiler.
  • Place under preheated broiler and broil until cheese is lightly browned, 2 to 3 minutes.
