EASY LEMON CAKE (ALL-IN-ONE-LEMON-SPONGE)
A delicious, moist all-in-one lemon sponge. Perfect for a teatime treat, cake sale or as a birthday or celebration cake.

Steps:
- Preheat your oven to 160ºC/140ºC fan.Line your baking tins (I use 2 x 20cm round sandwich tins) with baking parchment or reusable baking liners.
- Finely grate the zest of two lemons.
- Sift the self-raising flour (225g) and baking powder (2 tsp) into a large bowl.
- Add the remaining ingredients (4 medium eggs, 225g soft margarine or butter, 225g caster sugar, grated lemon zest and 2 tsp milk) and beat (with an electric mixer on a slow speed or by hand) until combined. Make sure that there are no small lumps of butter/margarine in your mixture. If there are, beat for a little longer until the mixture is smooth.
- Split the mixture equally between the pre-prepared tins. Use the back of a spoon to spread the mixture evenly in the tins.
- Bake for 30-35 minutes. To check if the cake is cooked insert a skewer into the centre and if it comes out clean the cake is ready.
- Leave the cake to cool in the tins for about 10 minutes. Remove them from the tins and then move them to a wire rack to cool completely - Make sure the cake has cooled completely before decorating.

- Preheat oven to 180/fan
- Cream together margarine and caster sugar
- One at a time beat the eggs and add to the mixture with a tbsp of the flour
- Fold in the remaining flour and baking powder
- Split mixture into 2 sandwich tins and bake for about 20mins
- When done the cake/s should be golden brown and spongy to touch
- Tips: grease the tin with some extra margarine then coat with some extra flour for easy removal from the tin
- Filling idea: Whipped cream, rasberry jam and a layer of strawberries tastes and looks good in a cake.
- Filling idea: Try Chocolate Butter icing (icing sugar, cocoa, and butter) from a bit of chocolate indulgence.
- For a decorative finish place a doilie over the cake and sprinkle with icing sugar. carefully remove the doilie, leaving behind a pattern of sugar.

- Preheat the oven to 375 degrees F (190 degrees C). Grease an 8 or 9 inch round cake pan.
- In a medium bowl, whip together the eggs and castor sugar until fluffy. Fold in flour. Pour into the prepared pan.
- Bake for 20 minutes in the preheated oven, or until the top of the cake springs back when lightly pressed. Cool in the pan over a wire rack.

BEST EVER CHOCOLATE SPONGE CAKE
This recipe was created after I miscalculated a recipe for brownies. The brownies were horrible but the result was a perfect chocolaty sponge cake. I make it ever since and it's perfect for a layer cake, frosting or on it's own.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Stir butter, white sugar, and brown sugar together in a bowl; add vanilla extract and mix well. Stir eggs, 1 at a time, into butter mixture until smooth.
- Sift flour, cocoa powder, and salt together in a separate bowl. Stir flour mixture, alternating with buttermilk, into butter mixture until batter is smooth, adding more buttermilk if needed to thin out batter. Pour batter into the prepared baking dish.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, 40 to 45 minutes.
