1-1/2 cups crushed nacho tortilla chips, divided
1 can (15 ounces) chili with beans
1 can (4 ounces) chopped green chilies
1 can (3.8 ounces) sliced ripe olives, drained, divided
1/2 cup sour cream
1/2 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
1 jar (4-1/2 ounces) sliced mushrooms, drained
4 green onions, thinly sliced
1 cup shredded lettuce

Steps:

Spread 1 cup tortilla chips into an ungreased 8-in. square baking dish. In a small bowl, combine the chili, green chilies and 1/2 cup olives; spoon over chips. Spread sour cream over the top. Sprinkle with cheeses, mushrooms, onions, and remaining chips and olives. , Bake, uncovered, at 375° for 10-15 minutes or until heated through and cheese is melted. Top with lettuce.

Steps:

Heat oven to 350°F.
Cook meat with Taco Seasoning Mix as directed on package.
Spray 12x8-inch baking dish with cooking spray; cover bottom of dish with 6 Tortillas. Sprinkle with 1/2 cup cheese. Cover with layers of seasoned meat, remaining tortillas and Salsa.
Bake 15 min. or until heated through. Top with remaining cheese; bake 5 min. or until melted.

1 cup baking mix (like Pioneer or Bisquick)
1 (16 ounce) can refried beans
1 (4 ounce) can green chilies
1/4 cup water
1 cup salsa
1 cup shredded cheddar cheese

Steps:

Preheat oven to 375°F.
Prepare the ground beef and taco seasoning mix according to package directions.
While meat is browning, mix baking mix, beans, green chilies and water.
Spread bean mixture in the bottom of a 2-quart casserole dish.
Top with meat, salsa, then cheese.
Bake for 25 minutes.

Steps:

Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Stir in taco seasoning.
Preheat oven to 350 degrees F (175 degrees C). Spray an 8x10-inch baking dish with cooking spray.
