CHEDDAR AND CRANBERRY CHUTNEY CROSTINI



Cheddar and Cranberry Chutney Crostini image

Number Of Ingredients 12

3/4 cup apple cider
1 pear (peeled and chopped)
1/4 cup dried cranberries
2 tablespoons crystallized ginger (chopped)
2 sprigs thyme
2 tablespoons cider vinegar
salt
pepper
1/4 cup walnuts (chopped)
2 tablespoons chopped parsley
16 slices toasted cocktail bread or crostini
16 slices cheddar cheese (cut to fit crostini)

Steps:

  • Preheat the oven to 350.
  • Simmer the apple cider, pear, dried cranberries, crystallized ginger, thyme springs, and cider vinegar in small pot for 15 minutes.
  • Season with salt and pepper and let cool.
  • Stir in walnuts and parsley.
  • Line a baking sheet with parchment paper. Place the crostini on the baking sheet and top with a slice cheddar.
  • Bake until the cheese has melted. Top with chutney. Garnish with additional parsley.

1 cup dried cranberries
1 cup chicken stock
4 teaspoons honey
20 to 24 fresh rosemary leaves
Kosher salt and freshly cracked black pepper
20 store-bought crostini
8 ounces goat cheese, at room temperature

Steps:

  • In a medium saucepan over medium-high heat, add the cranberries, stock, honey, rosemary, a pinch of salt and a few grinds of pepper and bring to a boil. Simmer for 1 minute, then remove from the heat and let cool in the pan.
  • Smear the crostini with the goat cheese, then top with the cooked cranberries.

1 baguette cut into 1/2-inch diagonal slices (or 8 slices country-style bread cut into 3-by-3-inch slices 1/2-inch thick)
Dijon mustard
1/4 pound good-quality cheddar cheese
Cayenne pepper

Steps:

  • Preheat oven to 400 degrees. Bake the slices of bread until lightly browned (about 10 minutes). The slices may be toasted under a broiler or over a grill instead.
  • Preheat broiler. Spread the slices with mustard, topped with slices of cheddar cheese and sprinkle with cayenne. Brown under the broiler and arrange on a serving platter.
