This cheesy potato casserole is the perfect way to feed a family of picky eaters. With all of the components of beloved loaded potato skins (like bacon, sour cream, and cheese), it's practically impossible for anyone to dislike this casserole. Steps:
- Place potatoes on a baking sheet and poke holes in two sides with a fork.
- Coat potatoes with olive oil, and sprinkle with salt and pepper.
- Bake for at 425°F (220°C) for 45 minutes.
- Remove potatoes from oven, and let cool. Chop into 1-inch (2 ½ cm) pieces.
- Lay half of the potatoes on the bottom of a greased 9x13 inch (23x33 cm) baking dish.
- Sprinkle on half of the bacon, spread half of the sour cream, and sprinkle on half of the cheese.
- Repeat for a second layer.
- Bake for 20 minutes at reduced temp of 350°F (180°C), or until cheese is golden brown and the edges start crisping up.
- Sprinkle with chives.
- Enjoy!

Steps:
- Cook potatoes, then add butter, salt, pepper and milk.
- Mash potatoes until smooth.
- Fold whipped cream and cheddar cheese together.
- Butter a 9x12 casserole dish.
- Line bottom of dish with the mashed potatoes.
- Spread cheese/cream mixture over the potato layer.
- Bake at 350 degrees for about 25 minutes, until golden brown.
- Let set 10 minutes after removing from oven and then serve.
- Note: Swiss cheese can be used instead of cheddar and it's still great.

- In a large saucepan, melt 4 tablespoons butter. Stir in the flour and salt until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. - Preheat oven to 400°F. In a dry large skillet over medium-high heat, cook onion and mushrooms with 1 teaspoon salt, stirring occasionally, until mushrooms release their moisture, 6 to 8 minutes. Add 1 tablespoon oil and beef. Cook, stirring and breaking up meat, until no longer pink but not cooked through, about 3 minutes.
- In a bowl, whisk together cornstarch, Worcestershire, and 2/3 cup water. Stir into skillet with frozen vegetables. Cook until vegetables are just thawed, about 1 minute. Season to taste; transfer to a shallow 2-quart baking dish. Top with cheese.

- Heat oven to 350°F. Spray 3-quart glass baking dish with cooking spray.
- In 2-quart saucepan, melt butter over medium heat. Cook and stir garlic in butter 1 minute. Stir in flour with whisk until smooth. Gradually add half-and-half and cream. Heat to boiling. GRANDMA'S CHEESY POTATOES
My grandmother makes this every year with a brisket for Christmas dinner. This is hands down my favorite potato recipe ever. I leave the skins on the potatoes, but this is optional. - Preheat the oven to 350 degrees F (175 degrees C). Grease a deep 9x13-inch baking dish with cooking spray.
- Place yellow and red potatoes into a large pot and cover with salted water; bring to a boil. Cook until soft, about 10 minutes. Drain.
- Combine mozzarella cheese, Cheddar cheese, sour cream, and mayonnaise in a large bowl; mix well. Slowly add potatoes and toss; use a wooden spoon or flat spatula to avoid mashing the potatoes.

- Use a big pot.
- Saute chopped onions in margarine til soft but not browned.
- In small bowl, combine flour, salt and pepper.
- Stir flour mixture into onion mixture then add milk and half and half and stir and cook over medium heat until mixture begins to thicken (about 3 minutes).
- Turn off heat.
- Add 1 1/2 cups shredded cheddar to the sauce and stir til melted and smooth.
- Add sliced potatoes and stir well to combine.
- Pour mixture into a 9 by 13 casserole dish that you have sprayed with Pam.
- Cover with foil and bake at 350 for 35 minutes.
- Remove from oven, take foil off and sprinkle reserved 1/2 cup cheese over top (or more as desired).
- Return to oven to bake another 30 minutes or so or until potatoes are soft, cheese is melted and edges begin to lightly brown.
- Let stand a few minutes before serving to allow sauce to thicken.
