1 Cup Peeled, 1-2 potatoes, Shredded White Potato
2 Cups Shredded Zucchini, 1-2 zucchini
1 Cup Shredded Cheddar Cheese
2 Large Eggs - lightly beaten
Small Pinch Salt/Pepper
3 Tablespoons Flour
3 Tablespoons Panko Bread Crumbs
1 teaspoon Garlic Powder
1/2 Cup Flour
1/2 Cup Panko Bread Crumbs
Pinch Salt/Pepper
3/4 Cup Thrive® Algae Oil for frying

Steps:

  • Use a large stand up grater to shred the zucchini and potatoes. Transfer to a cutting board lined with paper towels, place more paper towels on top and press down firmly to absorb any moisture. Transfer to large bowl then add shredded cheese and eggs. Stir gently until evenly coated with egg.
  • Mix salt, pepper, flour, panko and garlic powder. Gradually add dry ingredients to zucchini mixture while stirring.
  • Mix breading ingredients in a shallow dish.
  • Form zucchini mixture into tater tot shapes. (This recipe will make approximately 20 tots depending on size) Roll each tot in breading mixture until lightly coated. Transfer to cutting board or platter.
  • In large cast iron skillet, heat oil over medium for 5 minutes. Drop a small piece of zucchini in oil, once it gets a good sizzle the oil is ready.
  • Fry tots in two batches so the pan does not get over crowded. Fry and rotate tots in oil until all sides are golden brown. Transfer fried tots to a plate lined with paper towels.
  • Serve topped with fresh parsley and lemon zest.
  • To make the Cajun Dip; mix sour cream, Cajun spice, lemon zest, hot sauce and worcestershire sauce to desired flavor and consistency.

  • Preheat oven to 425°F. Line a large baking sheet with parchment paper and lightly coat with cooking spray.
  • Place grated zucchini and salt in a medium bowl for 20 minutes. Using thick paper towels or cheese cloth, squeeze as much of the liquid from the zucchini as possible.
  • Combine drained zucchini and remaining ingredients in a medium bowl. Shape into "tots" and place onto greased parchment paper.

Steps:

  • Preheat oven to 400°F and line a baking sheet with parchment paper.
  • Place the grated zucchini into a kitchen towel and squeeze all excess liquid out. Discard the liquid. It should come out to 1 cup packed after the liquid is squeezed out.
  • Transfer the dried zucchini into a medium bowl. Add the egg, cheese, panko breadcrumbs, Italian seasoning and onion powder. Season with salt and pepper, and then combine until mixture sticks together.
  • Spoon about 1 tablespoon of the mixture and form into small ovals, like the shape of tater tots. Makes about 16.
  • Place the tater tots on the greased baking sheet and bake for 25-30 minutes, turning halfway through, until they're golden.
  • Serve warm with ketchup or other dipping sauce.

  • Preheat oven to 400°F (200˚C.)
  • Grate the zucchini into a bowl and salt generously.
  • Allow zucchini to sit for 20 minutes as the salt draws out moisture.
  • Pour zucchini onto a clean dish towel and wring it out over the sink or into a separate bowl.

These tots are a healthy twist on classic tater tots. Classic tots are deep fried and made with potatoes, but these guys are baked and feature zucchini. Zucchini packs a nutritional punch! It's high in fiber and several vitamins and minerals including Vitamin C, Vitamin K, B vitamins, potassium and manganese. One medium zucchini supplies more than half of your daily Vitamin C needs! To make the tots, I mix shredded zucchini with some minced shallot and dried spices and bind it all together with an egg, breadcrumbs and yummy cheese. I like to use Italian spices and a mixture of mozzarella and Parmesan cheese and serve the tots with marinara sauce for dipping. But what I love about this recipe is that it's a blank slate and you can use whatever types of seasoning and cheese you like. They would also be delicious with cheddar or Monterey Jack cheese, dipped in a healthy Ranch style sauce. Just be sure to wring out as much water from the zucchini as you can. Zucchini has a high water content so this step is important to prevent the tots from getting soggy. After forming the mixture into tater tot shapes, simply spray them with olive oil and pop them in the oven. After about 20 minutes, they'll be puffed up and ready to be devoured!
