5 pounds Yukon Gold potatoes, peeled and cut into 1-inch pieces (about 10 cups)
1 cup butter, cubed
1 cup sour cream
2 teaspoons salt
3/4 teaspoon pepper
1/2 cup heavy whipping cream
1-1/2 cups shredded cheddar cheese
1-1/2 cups shredded Monterey Jack cheese
1/4 cup grated Parmesan cheese
2 tablespoons minced fresh chives
TOPPINGS:
1 cup shredded cheddar cheese
1 can (6 ounces) french-fried onions

Steps:

  • Place potatoes in a 6-qt. stockpot; add water to cover. Bring to a boil. Reduce heat to medium; cook, uncovered, until tender, 10-15 minutes. Drain; transfer to a large bowl. , Add butter, sour cream, salt and pepper; beat until blended. Beat in whipping cream. Stir in cheeses and chives. Transfer to a 13x9-in. baking dish. Refrigerate, covered, overnight., To serve, preheat oven to 350°. Remove potatoes from refrigerator while oven heats., Bake, covered, 45 minutes, stirring after 30 minutes. Sprinkle with toppings; bake, uncovered, until heated through, about 15 minutes.

6 large yukon gold potatoes, peeled and cubed
1/2 cup(s) milk
1/2 cup(s) chicken broth
4 tablespoon(s) butter, softened
1 teaspoon(s) salt
2 tablespoon(s) olive oil
1 - vidalia onion, thinly sliced
4 clove(s) garlic, finely chopped
1 package(s) (11 oz.) baby spinach
1-1/2 cup(s) shredded cheddar cheese

Steps:

  • Place the potatoes in a large pot, cover with water and bring to a boil. Reduce the heat and simmer about 20 minutes, until tender. Drain and return to pot.
  • Add the milk, broth, butter and 3/4 tsp. salt. Mash with a potato masher until fairly smooth.
  • Heat the oil in a large skillet over medium heat. Add the onion and cook, stirring occasionally until very tender, about 8 minutes. Add garlic and remaining 1/4 tsp. salt, stirring until fragrant, about 1 minute.
  • Add the spinach in batches and cook until spinach is wilted and any liquid is absorbed, about 5 minutes.
  • Spread half the potato mixture into a sprayed 2-qt. baking dish. Top with half of the spinach mixture and half of the cheese. Top with the remaining potato mixture, the remaining spinach mixure and the remaining cheese.
  • Bake, uncovered, in a preheated 400º oven until the filling is heated through and the topping is browned and bubbly, about 25 minutes. Let stand 5-10 minutes before serving.

1 (10 ounce) package frozen chopped spinach
6 potatoes, peeled and chopped
½ cup butter
1 cup sour cream
1 tablespoon chopped onion

1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium casserole dish.
  • Cook spinach according to package directions. Place potatoes in a pot with enough water to cover, and bring to a boil. Cook 15 minutes, or until tender but firm. Drain, cool slightly, and mash.

4 large Idaho potatoes, peeled and diced
2 boxes chopped spinach, defrosted
4 tablespoons butter
4 cloves garlic, finely chopped
1/2 cup cream
Salt and pepper
1/4 teaspoon freshly grated nutmeg

Steps:

  • Place potatoes in a pot and cover with water. Salt water and boil potatoes until tender 12 to 15 minutes.
  • Squeeze the water from spinach in a clean dish towel.
  • Drain potatoes and melt butter in the hot pot, then add the garlic and cook 2 to 3 minutes. Stir in cream, add the spinach, separating the greens as you do. Season greens with salt, pepper and nutmeg. Add potatoes to the pot and mash to desired consistency.

8 potatoes (peeled and quartered)
2 tbsp olive oil
16 oz fresh baby spinach
2 cloves garlic (minced)
1/2 cup butter
3/4 cup sour cream
1 tsp salt
1/2 tsp pepper
1 cup shredded cheddar cheese

Steps:

  • Place peeled potatoes in a stock pot, cover with water, and bring to a boil. Continue boiling for 15 - 20 minutes or until potatoes are easily pierced with a fork. Drain and transfer potatoes to the bowl of a stand mixer.
  • While potatoes are boiling, heat olive oil in a deep skillet over medium heat. Add in spinach and garlic and saute until wilted, about 5 minutes. Remove from heat.
  • Mash potatoes in stand mixer on medium speed. Add in butter, sour cream, salt, and pepper.
  • Add in spinach mixture and cheddar cheese. Mix until well incorporated. Add additional salt and pepper to taste.

Coarse salt
3/4 cup whole milk
2 tablespoons butter
1/2 cup shredded white cheddar, plus more for garnish (optional)

Steps:

  • Place potatoes in a medium saucepan. Cover with cold water by 1 inch; add 1 teaspoon salt. Bring to a boil; reduce to a simmer, and cook until potatoes are tender, 15 to 18 minutes.
  • Drain and return potatoes to pan. Stir potatoes over medium heat until dry (a film of starch will form on bottom of pan), about 1 minute. Remove from heat.
  • In a small saucepan, bring milk and butter to a simmer over medium heat; pour half of milk mixture over potatoes. Mash potatoes until just smooth, gradually adding enough of remaining milk mixture to reach desired consistency. Mix in cheddar; season with salt. Garnish with more cheese, if desired.

3 pounds medium russet potatoes, peeled and quartered
3/4 pound Vermont aged white Cheddar, grated
1/2 teaspoon baking powder
1 teaspoon kosher salt
Black pepper, to taste
Small pinch cayenne
Pinch of grated nutmeg
6 tablespoons unsalted butter, melted
3/4 cup heavy cream, heated
2 eggs, lightly beaten

Steps:

  • Boil potatoes in well-salted water until tender, about 15 minutes. Drain well in a colander and place in the bowl of a stand mixer with a wire whisk attachment. Beat at medium speed for 2 to 3 minutes to allow steam to escape.
  • Turn off mixer and add cheese, baking powder, salt, pepper, cayenne and nutmeg. Beat again for a minute or so.
  • Add butter and cream, mixing slowly, then increase speed to medium and drizzle in beaten eggs. Stop and scrape down bowl with rubber spatula to make sure ingredients are incorporated evenly. Beat at medium-high speed until mixture is smooth, 2 to 3 minutes.
  • Serve immediately in a heated bowl. Alternatively, transfer potatoes to a 2-quart baking dish, cover with foil and let stand at room temperature. Reheat for 30 to 40 minutes at 350 degrees, until piping hot. (If you want the top browned, remove foil halfway through baking. Otherwise give the potatoes a stir before serving.)
