Steps:
- Preheat oven to 400°F.
- Generously butter 6 cups in a popover pan or 6 six ounce custard cups.
- In a large bowl, beat eggs well with mixer.
- At low speed add milk.
- Add flour and salt and beat until smooth.
- Stir in melted butter.
- Fill cups 1/2 full with batter.
- Top with cheese and pour in remaining batter.
- Bake 50 minutes or until puffed and deep golden brown.
- Let pans cool 1 minute and then loosen with a knife.
- Serve with hot with butter and fresh fruit.

CHEESY POPOVERS

- Special Equipment: 24-cup mini muffin tin
- Preheat the oven to 425 degrees F.
- In a medium bowl, whisk together the eggs, milk and melted butter. Whisk in the flour and salt and fold in the cheeses and chives until evenly incorporated. Cover batter and refrigerate for 30 minutes.
- Put a mini muffin pan on the middle rack in the oven to warm for 10 minutes.
- Remove muffin tin from oven (careful, hot!) and pour the batter into the cups of the hot tin, filling almost to the top. Lightly sprinkle with cayenne. Bake the popovers until crisp and golden, about 18 to 20 minutes. Remove from the oven and serve immediately.
CHEESE AND HERB POPOVERS

- For the blistered tomato dip: Spray a popover pan with nonstick spray and place in the oven. Preheat the oven to 400 degrees F.
- Add the tomatoes, olive oil, sugar, salt, vinegar, pepper, thyme and rosemary to a large skillet. Toss the tomatoes to evenly coat. Cook over medium heat until the skins blister and the juices release, about 10 minutes. Let cool slightly, then remove and discard the herb sprigs and pulse in a blender 3 to 4 times to make a chunky dip (see Cook's Note). Set aside.
- For the popovers: Clean the blender and put in the eggs and milk. Blend until frothy, about 1 minute. Add the Parmesan, chicken stock and butter. Blend until incorporated and homogenous, 1 minute more. Add the flour, parsley, thyme, scallions, salt and pepper to the batter. Blend once again, just until incorporated.
- Divide the batter evenly among the 6 popover cups, filling each halfway. Bake the popovers, rotating the pan after 20 minutes, until golden brown and puffed above the edge of the pan, about 35 minutes.
- Serve warm with the blistered tomato dip.
GIANT CHEESE POPOVERS

- Place a popover pan with 12 cups in the oven and preheat to 350 degrees.
- Sift together flour and salt onto a piece of parchment paper; set aside.
- In a small saucepan, heat milk over medium heat until small bubbles form around the edges of the pan. Whisk eggs in the bowl of an electric mixer fitted with the whisk attachment. Slowly add heated milk to eggs, whisking constantly. Gradually whisk in flour mixture.
- Remove heated popover pan from oven; spray each cup with nonstick cooking spray and place on a baking sheet. Fill each cup with batter so it is level to the top; top with cheese.
- Bake 15 minutes. Rotate pan 180 degrees; continue baking until golden brown, about 35 minutes more.
- Invert pan and remove popovers. Serve immediately. Popovers may also be made 2 hours in advance. Cool on a wire rack and reheat in an oven heated to 450 degrees just before serving.

POPOVERS WITH GRUYèRE
Steps:
- Place one 12-cup muffin pan and one 6-cup muffin pan in oven. Preheat oven to 350°F. Whisk flour and salt in medium bowl to blend. Heat milk in heavy small saucepan over medium heat until very warm, about 125°F. Whisk eggs in large bowl to blend. Gradually whisk warm milk into eggs. Gradually stir flour mixture into milk mixture just to blend (batter may still be slightly lumpy).
- Remove hot muffin pans from oven. Spray pans with nonstick spray. Spoon 1/4 cup batter into each of 16 muffin cups. Top each with 1 1/2 tablespoons cheese. Bake until puffed and deep brown, about 40 minutes. Remove popovers from pan.
CHEDDAR CHEESE & RED PEPPER POPOVERS

- Lightly coat popover pan with butter or oil.
- Place empty pan in oven while it's heating.
- In medium bowl, whisk together milk, eggs butter and flour until well blended.
- Add salt, red pepper, and rosemary.
- Remove pan from oven and close oven door.
- Divide batter among the hot prepared cups and tow with cheese.
- Return pan to oven and bake for 20 minutes at 450.
- Then reduce to 350 for 15 to 18 minutes until popovers are a deep golden brown.

- Preheat the oven to 425 degrees. Take 3 tbsp of the butter and melt it in the microwave for about 30 seconds. Spoon or brush it into a regular-sized muffin tin comprised of 12 muffin slots (or a popover tin if you want 6 larger, more traditional popovers) and pop it in the heated oven as you make the batter (A word to the wise: do NOT skip this step as the batter needs to be poured into a HOT tin to cook properly)
- Using a stand mixer or hand mixer, combine the eggs, milk, salt, sugar, flour and remaining 1 tbsp of butter in a bowl (so everything except for the cheddar cheese) and stir on speed 4 (if using a stand mixer) for about 2 minutes until well blended. There will likely be a few lumps in the batter when done, but that is 100% fine
- Remove the heated muffin tin or popover tin from the oven and the butter will likely have darkened. This is good! It’ll provide some beautiful color to our popovers. Now pour the batter into each muffin or popover slot filling each only halfway (no higher for two reasons: 1. popovers rise when baked and 2. there’s only enough batter for each muffin or popover slot to be filled halfway). If using the cheddar cheese, sprinkle a little onto the top of the batter in each muffin or popover slot
- Pop it into the oven, uncovered, ON THE CENTER RACK (do NOT put it on the top rack or it will burn) for a total of 25-30 minutes, but in two temperature phases: The first 15 minutes at 425 degrees, then after the first 15 minutes are up, decrease the temperature to 350 degrees for the second 10-15 minutes. All ovens vary so keep an eye on the popovers to make sure they don’t over cook or get TOO browned. BUT WHATEVER YOU DO – NEVER, EVER OPEN THE OVEN FROM THE TIME YOU PUT THEM IN UNTIL THE TIME THEY ARE DONE COOKING. Like disturbing a soufflé while it cooks, this will RUIN and DEFLATE your popovers (I told you they’re divas). This is where a window in your oven door and oven light comes in super handy so you can easily check on them without disturbing them. If you don’t have that luxury (like me), go for 10 minutes to be safe
