A long time favorite that I have been making forever. This page was torn out of the cookbook so I have no idea where it came from. All I know is that it is easy and good !!

Steps:
- Mix all together except bread.
- Spread mixture on each slice of bread.
- set broiler at 550.
- broil at least 4-5 inches from heat for about 1-2 minutes.

- Preheat oven to 400 degrees.
- In a bowl mix together all of the ingredients until smooth and well blended (you can use a food processor).
- Spread into a small oven safe dish.
- Bake for 15-20 minutes, until bubbly and started to turn golden brown.
- Serve with crackers or crostini

KETO STUFFED MINI PEPPERS
Steps:
- Preheat your oven to 200C/390F. Line a cookie sheet with parchment paper and set aside.
- Cut the peppers in half lengthways and remove the seeds and membrane, then place into a bowl.
- Add the oil and ½ teaspoon of salt to the pepper, toss until all the peppers are oiled, then place cut side up on the prepared cookie sheet. Set aside.
- Place a nonstick saucepan over medium heat, add the cream cheese, garlic, 1/4 teaspoon of salt and pepper, and heat until melted.
- Add both the cheese and melt completely until you have a "dough-like" consistency.
- Stir through the cilantro and remove from the heat.
- Fill each pepper half with just under 1 tablespoon of the cheese mixture.
- Roast for 10-15 minutes until the cheese is bubbly and brown.
- Allow to cool for a few minutes before serving.
- Enjoy warm!

- In a food processor, combine the roasted squash, garlic, chickpeas, tahini, lemon juice, cumin, coriander, cayenne, and sea salt.
- With the blade running, drizzle in the olive oil. Add water, as need, to blend to a smooth consistency. Taste and adjust seasonings. (Note: this is a bit spicy before you add the olive oil - the olive oil tones down the spice.)
- Scoop the hummus into a serving bowl and top with pomegranate arils, feta, parsley, microgreens, and a drizzle of olive oil. Serve with toasted pita, crackers, and/or chopped veggies.
